Serves: 1 serving

Ingredients
1 large 9 inch tortilla (flour or whole wheat)
2 eggs
2 tablespoons beans (pinto/black beans)
2 tablespoons cheddar cheese, grated
2 tablespoons scallions, chopped
salt and pepper
Garnish
salsa
sour cream

Instructions
1. In a large microwavable mug press in a fresh tortilla. It will naturally fold into the shape of
the mug and find its way.
2. Crack in your eggs and whisk up with a fork, taking care not to tear the tortilla.
3. Now add in your favorite burrito mixins like cheese, beans and scallions. Season with salt and
pepper and mix all together. Whatever ingredients you have to hand will work great.
4. Microwave for 1 minute 20 seconds. Check, and if the eggs are still liquid, cook for another 15
-20 seconds. Keep an eye during cooking so the eggs dont over heat. You dont want an egg-
plosition in your microwave. The cook time is based on my 1200W microwave so yours might
vary.
5. Once done, let it sit for 3 minutes to cool and serve with some sour cream and salsa on top. I
like to eat a little out of the middles and then lift it out of the mug and roll it like a burrito.

Ingredients
5 tablespoons rice (quick cooking)
cup (5oz/150g) cold water
2 broccoli florets (finely chopped)
teaspoon cornstarch (corn flour)
3 tablespoons milk
4 tablespoons grated cheddar
Salt to taste

Instructions
1. In a very large, microwavable bowl add in your rice, broccoli and cold water. Place a plate
over the top of the bowl. Its best to use a quick cooking as it cooks faster.
2. Microwave for 3 - 4 minutes. Keep a close eye on it as it cooks as the water can overflow if
the bowl is too small.
3. When the rice is fully cooked, remove from the microwave and mix in cornstarch, milk, grated
cheese, milk and a pinch of salt.
4. Place back in the microwave to heat the ingredients together, around 1 minute 30 seconds.
The cornstarch needs to get hot for it to activate. It helps to create a thick sauce for your rice
bowl
5. Enjoy your Homemade Rice warm, straight from the microwave.

Serves: 4 servings

Ingredients
2 medium sized potatoes (Russet, or any type you like)
2-3 tablespoons olive oil
2 teaspoons salt
ice water

Instructions
1. Rinse potatoes, scrubbing any dirt off skin. Peel if desired, but I like chips with the skins on.
2. Thinly slice your potatoes using a serrated knife or a mandolin set to its thinnest setting. The
thinner, the better, so you want to slice thinly enough that you are almost shaving the
potato; so thin they are transparent. Slices should be between - 1/16 inch thick.
3. Immediately place slices in ice water. This helps to remove the starch and create crispy chips
with those delicious air pockets.
4. Dry both sides well on a kitchen towel or paper towel. The dryer they are the better they will
crisp.
5. Line a plate with a new paper towel and a piece of parchment paper. Lay the potato slices out
so they aren't touching. Brush with a little olive oil, then sprinkle with salt.
6. Microwave on high for 1.30 minutes on one side, and then roughly 1.00 minute on the other
side or until golden brown. Timing may vary based on your microwave. You will know when
they are done as they will crisp and turn a toasted brown color.
7. If not eating straight away, then store in an airtight container or plastic bag. Transfer chips to
a bowl, then repeat with the remaining slices. And enjoy!

5 tablespoons (2 oz/ 75g) butter
cup (3oz/90g) dark brown sugar
2 tablespoons (1 oz/45g ) maple syrup (or golden syrup but not honey)
1 teaspoon vanilla extract
1 teaspoons salt
teaspoon baking soda

Instructions
1. Put the popcorn kernels in a medium brown paper bag. Roll the top of it closed nice and tight.
This will keep in the steam while cooking
2. Place the bag upright in the microwave and cook for roughly 1 minute 35-50 seconds or until
the kernels stop popping at the rate of at least 1 per second. Keep an eye on it (my
microwave is 1200 watts so your cooking time may vary depending on your microwave)
3. To make the caramel: In a medium microwave-proof bowl add the butter, brown sugar and
maple syrup.
4. Microwave until it begins to bubble up (approximately 1 minute 30/ 2 minutes)
5. Remove from the microwave and stir in the baking soda, vanilla extract and salt and stir until
the mixture is foamy and the soda is well-dissolved.
6. Pour the syrup over the popped corn in the bag. With a spatula get down to the very bottom
of the bag and make sure the caramel is really well distributed throughout the corn.
7. Microwave for 1 minutes. Remove the bag and with a towel holding the bag run your spatula
all around and to the bottom of the bag mixing up the caramel corn really well. Mixing it
really well will prevent your popcorn from burning.
8. Repeat the microwave process for another 30 seconds or so and stir well again. Continue for
short intervals until you have reached a lovely golden brown caramel color.
9. Pour out into a large tray or surface and cool, stirring occasionally to break into individual
kernels
10. store in an airtight container for 4 days.

Recipe type: Mug Cake, no bake, single serving
Serves: 1

Ingredients
4 ounces (115g) low fat cream cheese,at room temperature
1 cup (8oz/ 225g) sour cream
teaspoon vanilla
4 tablespoons sugar
2 egg white, slightly beaten (egg whites in a carton work fine)
1 teaspoon lemon juice
1 tablespoon flour (prevents liquid from forming)
1 tablespoon jam of choice.
graham cracker crumbs

Instructions
1. In a bowl, beat the cream cheese until light and fluffy with an electric beater or hand whisk.
Mix in the sour cream, vanilla, sugar, egg, lemon juice. Swirl in jam at this time.
2. CAUTION: Microwave until you see it start to bubble in the center, and then stop cooking.
This will take seconds, maybe 20 or more. Take it out and check it. Microwave for short
intervals until you see the edge of the cheesecake firm but make sure the center is jiggly. If it
is allowed to bubble and cook further, the mixture will "break" and you'll need to start over.
Make a note of the successful cooking time for your microwave.
3. Take out of the microwave and let cool to room temperature and then refrigerate until fully
chilled, about 2 hours. If any liquid has formed, carefully pour out. Sprinkle with graham
cracker mixture and top with any topping of your choice. Enjoy!
