A. History:
i. Chocolate refers to anything made from the beans, Cocoa refers to chocolate in
the powdered form
ii. Chocolate is 2,000 years old or even older
iii. It was used in rituals for the Mayans and Aztecs
iv. Sweetened chocolate didnt appear until the Europeans discovered the
Americas
v. 1868 Cadbury marketed boxes of chocolate candies in England.
vi. 20th Chocolate manufacturing is more than 4- billion-dollar industry
B. DARK Chocolate:
I. It is considered dark chocolate if it contains 70% cocoa.
II. Compared to other foods, cocoa has more antioxidants per serving a serving size is
ONE OUNCE---flavoiniods, procyanidins, epicatechins(plant antioxidant)

Health Benefits

1. Helps reduce your appetite!


The media states that Eating chocolate 20 minutes before and 5 minutes
after lunch and dinner can cut your appetite up to 50%
What we know: From a randomized study published in 2011 Nutrition and
Diabetes, eating more dark chocolate promoted satiety and lowered the
desire to eat something sweet. It is unclear if eating dark chocolate before
and after dinner does the trick.
2. Prevents Alzheimers
The media says that it can prevent Alzheimers
The flavanols in dark chocolate help increase blood flow in the brain. In a
201 article from the Journal of Nature Neuroscience it was stated that dark
chocolate can help treat one aspect of aging-related cognitive impairment it
is not protective against Alzheimers.
3. Reduces inflammation
Due to an inflammatory response by the body, platelet activity is ramped
up. Flavanols in dark chocolate can help decrease the platelet activity.

-A 2008 article from Journal of nutrition stated consumers of up to 1 serving (20


g) of dark chocolate every 3 d had serum CRP concentrations that were
significantly lower than nonconsumers. Our findings suggest that regular
consumption of small doses of dark chocolate may reduce inflammation.

4. Reduces cholesterol
Monounsaturated fatty acids can help reduce total cholesterol and LDL.

-An article from 2010 Journal of cardiovascular pharmacology stated patients


with essential hypertension showed 11% of decrease in LDL cholesterol after 15
days receiving 100 g/day dark chocolate (88 mg of flavonols)

5. Reduces blood pressure


In a study from Harvard they concluded dark chocolate can improve
blood pressure. Flavanols have been shown to support the production of
nitric oxide (NO) in the endolethium (the inner cell lining of blood
vessels) that helps to relax the blood vessels and improve blood flow,
thereby lowering blood pressure
C. TWO TRUTHS and A LIE:
Dark chocolate Reduces appetite, Dark Chocolate increases satiety and dark chocolate
has little antioxidants
Dark chocolate prevents Alzheimers. Dark chocolate can l low blood pressure. And Dark
chocolate can help reduce inflammation
Dark chocolate has monounsaturated fatty acids. Dark chocolate can increase LDL and
Dark chocolate can promote satiety.

D. DARK Vs Milk Vs WHITE


i. Dark chocolate has 70% cocoa
ii. White chocolate has no cocoa therefore there are no antioxidants
iii. Milk chocolate has 5-7% of cocoa
iv. Dark chocolate is more bitter
v. Milk is sweeter because of more sugar (Godiva Milk chocolate has 38 grams of
sugar per one bar, Dark chocolate has 25g per serving)
vi. What/How to use for recipes?
1. Blocks- Used for large format backing. Big baking projects, possibly own
bakery.
2. Bars- Cookies, Cakes, hot chocolate
3. Wafers- ganaches, glazes, puddings, and frosting (anything that requires
melted chocolate)
4. Chips-Cookies, breads
5. Cocoa Powder- Cookies and breads. Should be unsweetened. You dont
want added sugar because most recipes already contain a lot of sugar

* Bittersweet chocolate contains 70% cacao.


*Semisweet- 60% Commonly found in baking chips
Be aware: WHAT DO YOU TO PREVENT OVER CONSUMPTION? Any creative ideas?

a. Dark chocolate does have a lot of calories
b. If you want a piece, try going for small individual wrapped pieces
to discourage over eating
ii. Health
a. Chocolate has caffeine. If you are sensitive to caffeine just be
aware of consumption
b. If you get kidney stones a lot. Chocolate contains oxalates that
can increase urinary oxalate excretion. (For example one 42g
Hersey Bar has 57.7 mg/ 100g of oxalate. A typical low oxalate
diet is 40-50mg a day).
c. Dark chocolate contains tryamine that is thought to trigger
Migraine Headaches
