cheesecake
This cheesecake is more like
a set custard. It is incredibly
jiggly and wobbly when first
cooked then it firms up a little
as it cools and dries, settling
to a more traditional baked
cheesecake consistency.
Ingredients Method
TM5 1. Preheat oven to 200C.
7 eggs
1000 grams cream cheese, 2. Place eggs into mixing bowl and mix for 20 sec/speed
chopped in cubes 4.
350 grams white sugar
500 grams cream 3. Add cream cheese and mix for 30 sec/speed 5. Scrape
30 grams flour down and mix for a further 30 sec/speed 5.5 or until
smooth.
TM31
6 eggs 4. Add sugar and mix for 1 min/speed 5.
900 grams cream cheese,
chopped in cubes 5. Add cream and mix for 30 sec/speed 5. Scrape down
300 grams white sugar and mix for a further 30 sec/speed 5 or until smooth.
400 grams cream
30 grams flour 6. Add flour and mix for 2 min/speed 5.
Tips
Check the cake is ready using the jiggle test: you want
a little bit of wobble in the centre and not too much
around the edge.
It is normal for the cake to darken on top as it
caramelizes but if you are concerned its getting too
dark, place a sheet of baking paper over the cake about
halfway through baking time.
