Honeycomb Cake

Ingredients:

1. 8 Eggs
2. 1 Can (13.5 fl oz) Coconut Milk
3. 14 oz Tapioca Starch
4. 1 1/2 cup Sugar
5. 2 Packets (11g ea) Baking Powder
6. 1/2 Tsp Vanilla Powder (additional is optional for smell)
7. 1 Tbsp Rice Powder
8. Vegetable Oil
9. Bundt Pan - Nordic ware preferred

Directions:

1. Preheat 360 degrees


2. Mix coconut milk and sugar together. Place in microwave for 45 secs.
3. Beat eggs by hand - do not blend.
4. Mix tapioca starch, baking powder, rice powder and vanilla powder together in a bowl.
5. Mix together coconut mixture and powders until all dissolved thoroughly and no clumps
are present.
6. Add eggs into bowl.
7. Oil bundt pan and place in oven for 10 mins.
8. Pour mixture into pan.
9. Bake in oven for 50 mins.
10. Turn oven off after 50 mins and leave in oven for 5 mins before taking pan out.
11. Let cool for at least 15 mins before cutting in 1/2 inch pieces.
