The present work was carried out at Tnima Brewery, with the objective of analyzing the technical
and operational parameters related with the bad operation of the plate heat exchanger, cooler of
wort, located on the line of production.
In that sense, several experiments were carried out in a period of six months, for which the
calculation methodology was applied for the thermal and hydrodynamic evaluation of the
equipment.
With the obtained results it was proven that the flow of wort and the value of the outlet temperature
of water of the pre section-cooling are the fundamental variables to predict the inlay of the heat
exchanger studied. The use of water with total hardness with values of (40-100) ppm, facilitates
the inlay of calcium and magnesium salts. The cleaning of the equiment was not carried out
regularly. The wort inlet temperature to the cooling section is bigger than that of design, causing
high values of outlet temperatures for the alcohol riched water glycol, factor that causes an increase
of the electricity consumption in the compressors of ammonia.
The bad operation of the equipment brought an increment in the production cost of $ 21 654.30
by electric power concept, as well as it influences negatively in the capacity of the Plant. Besides,
the equipment should not be kept working under current conditions.
