Coconut Chicken Curry

Step 1
Sprinkle little salt on the chicken and place them on a plate.
Step 2
Heat little oil in a nonstick pan over medium flame. Fry the chicken pieces, in batches, till
browned evenly (about 5 minutes). Remove and transfer to a plate.
Step 3
Add onion, garlic and ginger to the pan. Stir-fry for 2 minutes. Add the cumin powder, red chilli
powder, curry powder and little salt. Cook for 20 to 30 seconds.
Step 4
Add the tomatoes and the coconut milk. Mix well and gently bring to a boil.
Step 5
Add the chicken pieces to the pan. Reduce flame and simmer for 30 to 40 minutes. Add the peas
and coriander leaves.
Step 6
Cook for another 5 minutes or until the peas becomes tender.
Step 7
Switch o the flame and transfer to a serving bowl. Serve hot with rice or pulao.

Mutton Biryani with
Coconut Milk

INGREDIENTS 6 Servings
- 500 gm chopped,washed & dried mutton - 500 gm soaked,washed & dried basmati rice

Step 1
To prepare this interesting variation of Mutton Biryani, wash and soak the rice for 5 to 10 minutes.
Step 2
On the other hand, wash and clean the mutton and transfer to a pressure cooker, and pour 1/3
cup of water in it.
Step 3
Add red chilli powder, salt and 1 teaspoon of ginger and garlic paste (leave the remaining for the
sauteing).
Step 4
Pressure cook until 1 or 2 whistles and switch o the flame. Reserve the water for later use.
Step 5
Heat ghee and oil in a large pan over medium flame, and add cloves, bay leaf, cinnamon and
cardamoms to it.
Step 6
Stir-fry the ground spices for 30 seconds, an then add the onions along with green chillies.
Step 7
Saute the ingredients for 2 minutes or until onions turn golden.
Step 8
Add the remaining ginger and garlic paste and stir well for a minute.
Step 9
Now, add the cooked mutton pieces and stir well.
Step 10
Add the tomatoes, mint leaves, coriander leaves, salt, red chilli powder and lemon juice in the
mutton, and mix them all well.

Reduce the flame to low and stir well. Cook until it has a gravy consistency.

INGREDIENTS 3 Servings
Step 1
Soak basmati rice in coconut milk for 20 minutes and keep aside.
Step 2
Take a pan and add ghee in it. Heat it over moderate flame. Add cloves, cardamom and bay leaf.
Stir them. Then add onion and chilli pieces and cook well till flavor comes out.
Step 3
Put the soaked rice in it and pour good quantities of coconut milk to cook it well. Once this is
done, transfer the pulao to a serving bowl. Serve hot with raita of your choice.
