Kerala Theme

Decoration
1) Entrance gate to b decorated with banana tree.
2) Restaurant door to be decorated with banana tree TORAN.
3) Two big lamps to be fixed at building entrance.
4) Attractive, antique idols of God Vishnu, Pdmanabh Swami, Shri Krishna.
5) Traditional Kerala Rangoli in the main lobby.
6) Inside restaurant artificial tree of coconut & banana to be placed.
7) Boats and other articles to be made of banana or coconut tree.
8) Possibly put pictures of Kerala Festivals and games played during that.

Costume
1) White lungi and White/ Cream Shirt or Short Kurta for male.
2) Kerala style saree for females with jewellery(except the service personnel).
3) Tikka for everybody(traditional style).
4) Service staff to possess folded napkin on shoulder(only males).

Welcoming of Guest
1) Kerala band from main gate.
2) To welcome guest by garland made of banana leafs, or sea shells.
3) Tilak of sandle wood.
4) To freshen up providing guest with Cold Towel.
5) Providing welcome drink- traditional coconut water or any authentic mocktail to be
served in coconut shell.
6) As for thanksgiving a small memorable gift pack which includes- Kerala spices,
Herbal Facepack, Herbal Oil, Coconut Oil, Sandle Soap, Small Boat, Set of 3
elephants, Banana Chips, Original Vanilla Extract.

Welcoming in Restaurant
1) 1 Male and 1 Female server to welcome and escort guest to their seats.
2) 2 person to wash hands of guest and provide with napkins as well.
3) Before service presentation or audio visual preparation to explain about Sadhya
Bhojan which includes Dish Explanation, their specific place in the leaf, eating style.
4) Service person to explain in brief about the food item being served.
5) Water service of filter water, herbal water as well as bottled water.

Sadhya Bhojan Menu


1) Rice- Kerala Red Rice(Chamba rice)
Plain Steam Rice.
2) Parippu- A thick Curry, lentil dish eaten with rice Papadum and ghee.
3) Sambhar- A thick gravy made of lentils, tamrind, vegetables like drumsticks,
tomatoes, flavoured with asafoetida.
4) Rasam- A watery dish made of tamrind, tomatoes, and spices.
5) Avail- Thick mixture of various vegetable and coconut, seasoned with coconut oil and
curry leaves.
6) Kaalan- Made of yoghurt, coconut and any one vegetable like nendran(banana).
7) Olan- A light dish prepared of white gourd or black peas, coconut milk & ginger
seasoned with coconut oil.
8) Koottukari- Vegetable like banana or yam cooked with chickpeas, coconut black
pepper.
9) Erissery- A thick curry made from pumpkin, black eyed peas & coconut.
10) Khichadi- Sour curry made with yoghurt and usually cucumber or sliced white gourd.
11) Pineapple Pachadi, Carrot Pachadi.
12) Injipuli- A sweet pickle from ginger, tamrind, green chillies, and jiggery also called
puli-inj.
13) Thoran- Sauteed vegetables such as peas green beans, jackfruit, carrot, or cabbage,
snake gourd with grated coconut.
14) Achar- Spicy raw mango pickle, beetroot pickle.
15) Pappadam- made with lentil flour.
16) Sharkara Uppers- Jaggery Chips.
17) Kaaya Varuthathu- Banana Chips.
18) Banana
19) Paal Payasam, Gothumai Payasam, Ada pradhaman Paysam.
20) Sambharam- Buttermilk with green chilli, ginger and curry leaves.
21) Ghee.

Service Standard

Non-Veg Dishes to be added extra

1) Nadan kozhi curry- Kerala chicken curry in coconut milk.


2) Kerala meen curry- Fish Curry.
3) Meen Pollichathau- Fish cooked in banana leaf.
