Bacon Parmesan Garlic Chicken and Red Potatoes

Recipe

2 lbs red potatoes, cut into chunks


1/2 cup butter
1 cup sour cream
1-2 tsp onion powder
1-2 tsp garlic powder
1/4 cup fresh minced garlic
2-3 lbs boneless chicken breast, cut in bite sized pieces
1 cup Parmesan cheese (green can is fine!)
2.5 oz bacon bits (I used real bacon pieces here)
1-2 tsp salt/pepper

 Put the chunks of potatoes into the slow cooker.


 Place butter on top of potatoes.
 Add sour cream.
 Sprinkle spices on top.
 Add in half of the fresh minced garlic.
 Place about 3/4 of the chicken in the slow cooker.
 Put the rest of the fresh garlic on top of the chicken.
 Sprinkle Parmesan cheese over all.
 Pour bacon bits over the top.
 Add the remaining chicken.
 Stir slightly to combine ingredients, but be gentle!
Just give a good coating to all the ingredients.
 Cook on high for 3-4 hours
Grilled Cheese in the Oven Recipe - Large Family Style!

+ Preheat the oven to 450


+ Prepare baking pans full of cheese sandwiches (add mayo, a slice of
ham, any way you like to doctor up your grilled cheese :)
+ Add butter to both sides of your bread
+ Place pans of grilled cheese sandwiches in the oven for 6-8 minutes
+ Take pans out and flip sandwiches. Place back in oven for 2-3
minutes.

Tuna Cakes Recipe

o Tuna – 66 oz can
o Eggs – 11
o Oatmeal – 2 cups
o Green Peppers – 1 whole
o Milled Flax – 1/4 cup
o Spices – as needed

Instructions

1. Combined tuna, eggs, oatmeal, green peppers (plus any additional


veggies you’d like to sneak in), milled flax, salt/pepper, and
other spices per personal preference into large bowl.
2. Mix until well combined.
3. Make into patties and cook on stove over medium heat. Flip
patties as needed.
Chicken, Broccoli and Rice Casserole Recipe

o Precook 4 cups of brown rice anyway you can. Cook it in the slow
cooker, rice maker, boil it on the stove, the point is however you
can get it done! 4 cups of raw rice ends up being about 8 cups of
cooked rice. I just love things that double in volume!
o Precook up to 4 lbs of boneless skinless chicken breast. You can
also use chicken thighs, or chicken peeled right from the bone.
o Precook 4 cups of homemade cream of chicken soup. Of course
total GRACE if all you can do is pop open two cans of the store
bought stuff. We’re all doing the best we can! I have full
directions on making Homemade Cream of Chicken Soup in this
post.
o Mix together 8 cups of cooked brown rice, 4 cups cream of
chicken soup, 24 oz steamed broccoli (I used the steam broccoli
packs from Aldi), 5 cups shredded mild cheddar cheese, and up
to 4 lbs precooked boneless/skinless chicken breast in a large
bowl. You can also add-in 1 to 2 cups of sour cream if you’d like.
I didn’t do that in today’s video, only because I was out.
o Once everything is mixed together just fill your casserole
dishes with the yummy mixture. Sprinkle a handful of shredded
cheese on top of each casserole.

o Place your casseroles in your preheated oven at 350 degrees for


about 30 minutes.
o Once your Chicken, Broccoli, Rice, Casserole is complete let it
stand on your stove or counter to cool slightly before serving.
The cheese will be hot, but it will be wonderful!
o Serve your Chicken, Broccoli, Rice, Casserole by itself, or add-in
salad or other veggie side items (corn on the cob goes well with
this!)
Stir Fry Fried Rice Ingredients

o 7 Cups Uncooked Brown Rice (you could use any rice you
prefer) – this will yield approximately 14 cups of cooked rice.
o 4 lbs Boneless/Skinless Chicken Breasts (Any meat will do:
Chicken, Pork, Beef, etc)
o 12 Eggs
o Frozen Vegetables (this go round I had a bag of frozen corn,
frozen peas, and California Medley)
o Fresh Veggies (I used carrots, green onion, yellow onion,
red/orange/yellow peppers, and an avocado)
o Soy Sauce
o Sesame Oil
o Garlic Powder/Onion Powder

First I get the 4 lbs of boneless/skinless chicken breast cooking


in my large cast iron pan. I add in a whole yellow onion, garlic and
onion powder, and shake in some sesame oil (approx 3 table spoons).

Once the chicken is fully cooked I add in several colored peppers and
sliced carrots. I put the lid on the chicken with these veggies for
several minutes until the veggies are soft.

This is a great time to prepare the 7 cups of uncooked brown rice.


This go round I had 4 boxes of instant brown rice from Aldi. This
was very quick and turned out lovely! Here are 4 ways to cook brown
rice if you’re interested.

The only thing you need to do with the rice is prepare it. You don’t
need to season it or do anything fancy. Get it cooked and set it aside
in a large container. I use this large rubbermaid container.

Once the chicken and included veggies are complete I pour them into
my large counter with the now 14 cups of cooked brown rice.
I then reuse my same large pan that the chicken was cooked in. I add
in 1 cup of chicken broth, along with 1 cup of soy sauce. Next I pour in
all of my frozen veggies and remaining colored peppers, mushrooms,
green onions, and avocado. I put the lid on for about 3 minutes.

Meanwhile, I start frying a dozen eggs in another pan. I scramble the


eggs with my spatula as they cook. I add in a few of the veggies cooking
in the soy sauce in with my eggs.

After the Soy Sauce veggies and scrambled eggs are complete things
get really easy. I dump all the veggies into the large Rubbermaid
container to finally meet up with the chicken and brown rice. I mix it
all together for a minute or two. Then we serve it in bowls and chow

down like China town.

Egg Roll in a Bowl Recipe

So yes, my version of Egg Roll in a Bowl may be different than


the Trim Healthy Mama book, although I don’t feel I’m off too far.
In my version I use a whole cabbage, tons of additional veggies, and
almost 5 .lbs of hamburger meat.

Like many large family style meals at our house, we ate Egg Roll in a
Bowl for dinner two nights in a row, plus I add the leftovers for a few
of my lunches. You can also serve it to your family with brown
rice or Quinoa.

Here’s how I make Egg Roll in a Bowl for my family of nine

o one large cabbage


o carrots
o green onions
o mushrooms
o green peppers (colored peppers are wonderful too)
o celery
o ground beef (4-5 lbs) – you could also use chicken or pork
o sesame seed oil
o soy sauce (it’s all I had on hand. THM recommends Liquid Aminos,
which I need to order!)

First I cook up my 5 lbs of ground beef with onions and green


peppers. Then I pour the cooked ground beef mixture into a drainer
to let the grease drain off into a large metal bowl, while I move onto
my next step. If I would have taken the time to do once a month
meat cooking another day I could have saved this step!

Next I add in 1/4 of a cup of sesame seed oil into a pan with my entire
chopped cabbage. I put a lid on my cabbage for about 3-5 minutes, and
gently toss it around with a large spoon every minute or so. (see, you
really can’t go wrong with this)

Next I combine my 5 .lbs of drained ground beef and my entire


steamed cabbage into a large Rubbermaid Container. Using my
Large Rubbermaid Container is a life saver for a recipe this size. I
use it several times a week!

Next I get all of my additional chopped veggies (cauliflower, carrots,


mushrooms, celery, etc) dumped into my large pan with one cup of
Soy Sauce. Remember, to be closer to THM, use Liquid Aminos.

These veggies need to cook for up to 10-minutes with a lid on most


of that time.

After these veggies are tender I pour this panful in with the cooked
ground beef and sesame oil cabbage waiting in my large Rubbermaid
container. Finally I mix these cooked Egg Roll in a
Bowl ingredients well and serve bowlfuls for dinner!
Blueberry muffins receipe

6 cups of flour
3 cups of sugar
2 teaspoons salt
3 tablespoons baking powder
4 eggs
1-1/3 c. butter, melted
1-1/2 c. milk
4 cups (1 quart) fresh blueberries
400 degrees for 20-25 minutes

humusul
Ingrediente:

200 de grame de naut la conserva

2 linguri de suc de lamaie

2 catei de usturoi

1 lingurita de chimion macinat

sare

100 ml de tahini (pasta de susan)

2 linguri de ulei de masline

1 lingurita de paprika
Preparare:

Scurge lichidul din conserva intr-o cana – vei avea nevoie de cateva
linguri ca sa diluezi humusul.

Pune in blender nautul, sucul de lamaie, usturoiul, chimionul, un


praf de sare, tahini si doua-trei linguri de lichid de la nautul din
conserva (poti pune si apa). Pulseaza unu-doua minute pana obtii o
pasta fina si cremoasa.

Cel mai important este sa gusti humusul pe masura ce il prepari. Nu


o sa-l nimeresti din prima! Mai adauga lamaie si sare daca e nevoie.
Si chiar usturoi. Daca ti se pare ca humsul este prea dens, mai poti
picura si putina apa. Totul este sa nu-ti fie frica sa experimentezi.
Cand ai ajuns la un humus cat mai aproape de gustul tau, opreste
blenderul si pune humusul intr-un bol. Stropeste-l cu ulei de
masline si presara deasupra paprika.

Serveste humusul cu lipie integrala, cu crackersi sau chiar si cu


legume ca telina verde, ardei gras, castravete.
Clatite americane

Ingrediente (pentru 12 clatite):

– 250 ml de lapte

– 125 grame de faina

– 1 ou

– 3 linguri de zahar granulat

– 3/4 lingurita de sare

– 2 linguri de unt sau margarina

– 4 lingurite de praf de copt

Preparare:

Combina toate ingredientele intr-un bol mare. Intai pune laptele si


amesteca-l cu zaharul, adauga oul, praful de sare si untul. Combina
faina cu praful de copt separat, iar apoi incorporeaz-o treptat in
compozitia initiala. Este recomandat sa te folosesti de un mixer ca
sa-ti inlesnesti munca. Amesteca bine pana cand nu se mai vad
cocoloasele. Pentru un plus de parfum, poti adauga la aceasta
compozitie si un pliculet de zahar vanilat.

Incalzeste o tigaie in care adaugi un varf de cutit de unt. Lasa untul


sa se topeasca, iar apoi, cu un polonic mic, ia din compozitia de
clatite si toarna in mijlocul tigaii. Lasa clatita sa se coaca, iar cand
vezi ca apar bule in compozitie, intoarce-o si pe partea cealalta cu
ajutorul unei palete.

Serveste-le cu dulceata preferata, cu fructe ori, daca nu te dai in vant


dupa gemuri, opteaza pentru miere sau ciocolata.
