ISKA ELVINA. Production of snack dishes at Pizza Hut Delivery Mustika


Jaya Bekasi. Supervised by ANNISA RIZKIRIANI.

The general purpose of this final report was to examine the production of
snack dishes at Pizza Hut Delivery Mustika Jaya. This observations were made on
20 February 2017 until 23 April 2017 at Pizza Hut Delivery Mustika Jaya, it was
located in Ruko Villa Asri Blok A No.21, Jl. Raya Mustika Jaya, Mustika Jaya,
Bekasi, West Java.
The production of snack started from preparation stage, processing stage,
and serving the dish. Preparation consisted of preparation for fried dishes,
preparation for baked cooking and sauce preparation. Preparation for fried dishes
include the portion of ingredients and made certain snack dishes such as Pepchiz
dishes. Preparation for baked dishes such as thawing process, and preparation of
differentiated sauces into sauce preparations with processing and without
processing. Food processing was a process of processing raw food into food was
ready to be consumed by costumers. Food processing techiques consist of deep fat
frying and baking. Portioning of snack dishes was adjusted with the portion that
been determined at Pizza Hut Delivery Mustika Jaya. The snack that were
processed, were put into food packaging. The packaging were made from
cardboard with coated by bread paper and alluminium foil.

CHAPTER I
PRELIMINARY

1.1 Background

Progress in various fields nowadays causes people want something to be


faster, precise, and with the best quality. One of food company that provides a fast
service system is Pizza Hut Delivery (PHD). Pizza Hut Delivery is a food
company that prioritizes the timeliness of the services provided, thus requiring
quick time during food production. Dishes that served by Pizza Hut delivery such
as pizza, pasta, rice vaganza, snacks, drinks and dessert. Snack dish is consumers
favorite menu and the one of the most ordered memu by the consumers.
One of the snack dishes functions is to postpone someones hunger. The
snack dishes consist of two types, sweet snacks and salty snacks. Sweet snack
usually use flour as the base ingredient, while salted snack is usually using meat
as the base ingredient. Snack dishes in Pizza Hut Delivery consists of snacks with
ingredients chicken, beef, flour, and chocolate. The good production management
is required to produce a fast snack, according to Pizza Hut Delivery standards and
fulfill customer desires. The production stages of snack dishes, the first is
preparation, the second is processing and the third is bulking and packaging.

1.2 Purpose

The general purpose of this work field is to review Snack Snack Production at
Pizza Hut Delivery Mustika Jaya, while the specific purpose of this work field
aims to:
1. Learn the general state of Pizza Hut Delivery Mustika Jaya
2. Learn the preparation of snack dishes
3. Learn the processing of snack dishes
4. Learn the bulking / packaginf of snack dishes
CHAPTER II

2.1 General Circumtances Pizza Hut Delivery Mustika Jaya


Pizza Hut in Indonesia was formed in 1984, the first outlet set up at Pizza
Hut Djakarta Theater Building in Thamrin area, is open to the public by serving
pizza for the first time to consumers. The shareholder of Pizza Hut Indonesia is
PT Sarimelati Kencana supported by PT Sriboga Raturaya. In 2007 PT. Sarimelati
Kencana form a branch restaurant with the term Pizza Hut Delivery with delivery
service and take away service. One of Pizza Hut Delivery outlets is Pizza Hut
Delivery Mustika Jaya.
Pizza Hut Delivery Mustika Jaya was build in 2012 with the outlet code
P078. The location of the outlet placement is adjusted to potential areas such as
villa and offices with criteria that have been determined by the company. Pizza
Hut Delivery Mustika Jaya consists of two floors. On the first floor there is a
waiting room consisting of tables and chairs for visitors and place taking order,
kitchen space consists of stretching table, make up table, cutting table, pasta table,
fry master, oven, hand wash equipped with hand soap, hand towel, hand sanitizer,
hand gloves, and wastavel. Second floor rooms have kitchen preparation, dry and
wet material storage, lockers and toilets.

2.2 Organizational Structure and Shift Work at Pizza Hut Delivery


Mustika Jaya
The organizational structure is the composition of people or members in a
society (Karyoto 2015). We need to make the member structute to differentiate the
tasks and the responsibilities not only for work and also for the organization. The
organization work is divided into two types, managerial and non-managerial
work. Managerial work is done by organizational leaders or managers. Non-
managerial work are referred to operational jobs because the workers are dealing
directly with the activities. The organizational structure at Pizza Hut Delivery
Mustika Jaya is headed by OM (Outlet Manager). OM's main task is to be
responsible for the operation of outlets and it will be assisted by Shift Leaders.
Officers or jobs as nonmanajerial in Pizza Hut Delivery Mustika Jaya include
FOH (Front of House), BOH (Back of House) and Delivery man.
FOH officers have duty as cashiers that take care of all payments in the sale
of both food and beverage, FOH is also responsible for administration. BOH
officers are tasked to produce food that ordered by the consumers while
maintaining the hygiene and sanitation of the product. Hygiene and sanitation
need to be considered in order to obtain a quality product, free from disease risk
(Bartono and Ruffino 2009). Delivery mans task to deliver food to the consumer
with delivery system and pay attention to the timeliness that has been promised.
Shift work at Pizza Hut Delivery Mustika Jaya is divided into 3 shifts,
morning, middle, afternoon. Work shift is used to facilitate the division of labor
and supervision. Working system in Pizza Hut Delivery Mustika Jaya which is six
working days and one day off. Shift division of work can be seen in Table 2.

Shift division of work is made by OM once a month. Each shift has PIC
(Personal in Charge) or shift leader. Work shifts are distinguished by permanent
and non-permanent officers. The permanent officer or crew has seven hours of
work and an hour of rest, while the non-permanent officers such as apprentices
have four hours of work without a break. The division of tasks is intended to
facilitate operational activities. These operational activities include production and
food service.

2.3 Physical Facilities


The physical facilities and the area in Pizza Hut Delivery Mustika Jaya
include FOH (Front of House) area and BOH (Back of House) area or kitchen
area. The FOH area includes a consumer waiting area consisting of tables and
chairs, a chiller retarder for salads and beverages that ready to sell, as well as a
cashier area or food and beverage reservation area. BOH areas include stretching
table, make up table, cutting table, master fryer, pasta table, walk in chiller, and
preparation area.

2.4 Production of Snack dishes at pizza hut Delivery Mustika Jaya

2.4.1 Type of Dishes


Snack dishes in the PHD are divided into several types, the type of snack
dishes in PHD adjusted to the processing techniques. Snack with deep fat frying
include BBQ Chicken Skewers, Chicken Sticks, Cheesy Melt Potato, Pepchiz, and
Surimi Wrap. Snack with baking process are Beef Sausage, Zuppa Soup Creamy
Mushroom, Tuna Melt, Garlic Holic and SilverQueen Soft Cookies. BBQ
Chicken Skewers dish is chicken meatball covered with BBQ sauce. Chicken
Sticks are chicken with roasted corn, with Hot Mix sauce or tomato sauce. Cheesy
Melt Potato dish is a potato dish wrapped with Honey BBQ sauce and Cheddar
Cheese sauce. Pepchiz dish is a bakery with the smell of roasted corn, papperoni,
and cheese covered with panir flour. The Surimi Wrap dish is a tofu skin
containing fish, shrimp and chicken accompanied by Hot Mix sauce and tomato
sauce.
Dishes with baked process such like Beef Sausage using the Honey BBQ
sauce. Zuppa Soup Creamy Mushroom dish consists of cream soup accompanied
by mushrooms and covered with puff pastry. Tuna Melt and Garlic Holic dishes
are flatbread dishes, topping for Tuna Melt dishes of tuna mayo mix and corn,
while topping for Garlic Holic dish is Garlic Butter Dip sauce and chicken
luncheon strips. SilverQueen Soft Cookies is a chocolate-based dish accompanied
by cashews.
2.4.2 Snack Preparations
Preparation of snack dishes is a preparation made before processing a snack
dish. Snack contained in PHD one of them consists of frozen snack that is food
that requires freezing temperature with temperature -12 oC - (-23) oC. Preparation
of ingredients for snack dishes is done by one BOH officer in the preparation area
at different times. Preparation is divided into three parts including preparation for
fried snack dishes, preparation for baked snack and sauce preparation.

2.4.2.1 Preparation for Deep Frying Snack


Preparations for fried snack dishes prepare the ingredients, and make certain
snack dough preparations for Pepchiz dishes. Preparations begin at 08.00 am,
while preparation for Pepchiz dish starts at 14.00 pm. Doing prepration is by
taking each material from the freezer box for BBQ Chicken Skewers, Surimi
Wrap, Chicken Sticks, and Cheesy Melt Potato dishes. Preparations for BBQ
Chicken Skewers, and Surimi Wrap do not require special treatment, preparation
is done by taking ½ kg of chicken skewers and 1 kg of surimi and put into
containers. Preparation of Chicken Stick is to take 1 pack of 1 kg whole chicken
stick and put it ti plastic, 1 pcs of whole chicken stick cut into 12 pcs, while for
Cheesy Melt Potato with potato wedges as base ingredient, that is by taking 1
pack 5 kg potato wedges, then weighed into plastic, make it become 1 pcs of 150
g. Materials that have been put into containers will be stored in an upright freezer.
The tool used is HD plastic (High-density Polyethylene) and scales.
Preparing for Pepchiz with base ingradient pepperoni cheese roll is prepare
some materials, that are regular sized pizza dough, string cheese, corn seasoning,
pepperoni and bread flour. 1 pcs of pizza dough separated into 16 pcs, while 1
sting cheese separated become 8 pcs and put into container and pour the corn
seasoning. Pepperoni and string cheese that already mixed with corn seasoning
put on the dough that already separate into smaller peaces, and then close it like
make “pastel”, then apply the bread flour and put in bruschetta tray that has been
lined with bread paper. Bruschetta tray is a container that is coated with special
bread paper to put the prepared snack preparations, then stored into the freezer
box. The other required tools are mixing bowl, cutting board and red and green
blades, and dough sceaper.

2.4.2.2 Preparing for grilled Dish


The baked dish such as Beef Saousage, Zuppa soup Creamy Mushroom,
Tuna Melt, garlic Holic and SilverQween Soft Cookies. Preparing the materials
for Beef Sausage Bites, Zuppa Soup Creamy Mushroom, Tuna Melt, dan Garlic
Holic Start at 08.00 WIB. Preparing for Silverqueen Soft Cookies start at 16.00
WIB. Beef Sausage Bites prepare is take the BBQ sausage bites from frezer box
and do “thawing” at walkin chiller, and the material ready to use after 2 days.
Same with Zupa Soup preparing procces, the puff dough must do “thawing” first
about 1 hour.
Preparing for Tuna Melt dan Garlic Holic do not have the specific process,
iti is only take the regular dough from walk in chiller and then save it to makeup
table and prepare the topping such as corn kernel whole, chicken luncheon tha cut
into 25 mm long and 8 mm wide, and put into insert with mozzarella cheese dan
parsley.
The specific preparing procces is for SilverQueen Soft Cookies, make the
dough first by use 4 peaces SilverQween, ine peaces cut into 4 part about 0,5 x 0,5
x 0,5 cm, put into the mixing bowl. Brown sugar, white sugar and salt mix
together with melt butter, pour the vanilla flavor, baking soda and flour, stir well.
The cool it down in walk in chiller about 2 hours. The other required tools the we
need are mixing bowl, ballon wisk, cutting board and knife.

2.4.2.3 Preparing the Sauce


Prepare the sause start from 14.00 WIB. Sauce preparing devided into
preparing with cooking pracess and without cooking process. Preparing with
chooking process is Mushroom Cream Soup and Cheddar Cheese sauce. The
processing techniques for this sauce is simmering techniques. Simmering is
cooking methods for liquid ingredients with low heat. Preparing the Mushroom
Cream Soup spend the time abour 15 minutes while preparing for Cheddar
Cheese sauce need about 30 minutes, and then each sauce put into small box and
put into container.
Preparing the Mushroom Cream Soup is prepare the cream soup powder,
white pepper, tepung, milk, dan chopped onion. Stir-fry the chopped onion nas
then add the musgroom, pour the water and wait until half cooked, and then pour
the other ingredients like cream soup powder, wheat flour and white pepper, stir it
until thick use the low heat. The requirement that needed mixing bowl, ballon
wisk, satu wajan, stove, satu cutting board knife.
Cheddar Cheese sauce preparing process is to prepare thr ingredients, that
are wheat flour, cheddar cheese powder, crème elle, salt, grated cheese, sugar, and
beef buolion, and milk. Boil milk until boiled, while waiting grater the cheese and
put into the bowl. In the other bowl, mix the dry seasoning, sugar, salt and beefe
boilon. Pour at the boiled milk together with grated cheese and stir it well with
low heat. The tool that needed mixing bowl, ballon wisk, pan stove and grater.
Preparing the cause without cook processing are Hot mix sauce, Honey BBQ
sauce, Tuna Mayo sauce, and Garlic Butter Dip sauce. The needed requirements
are mixing bowl, ballon wisk, blender, cutting board and knife. Hot Mix sauce
preparing is mixing the ingredients, that are tomato gallon, chilli bottle, blended
garlic and sesame oil. Honey BBQ sauce preparing is mix the BBQ sauce, tomatto
gallon, tabasco, and honey. Tuna Mayo saucepreparing is mixing the tuna in oil,
onion, and mayonnaise, while Garlic Butter Dip sauce preparing is mixing the
mayonnaise, milk, butter powder, garlic granulated, parsley chopped, and simple
syrup. All the saouce that already prepared, save it in the ciller.
Officer BOH on the morning at 08.00 WIB will take the sauce contained
in the container from walk in chiller then filled into insert sauce. The sauce
contained in the insert consists of Honey BBQ sauce, Cheddar Cheese sauce,
Honey Mustard sauce and Hot Mix sauce. The sauce include Honey BBQ sauce,
Hot Mix sauce, and Tomato sauce. The sauce serving by taking a sauce from walk
in chiller, a serving for each sauce is 50 g and placed into a sauce cup, a tool used
to seal the sauce cup is a cup sealer. Each of the dipped sauces is placed into
containers, especially for Hot Mix sauce placed inside the container and stored in
the chiller retarder. The tool used to cover the sauce that is pored into the cup.
All prepared materias that already packed into the cup marked with MRD
mark or Made, rady, and discard according to Shelf Life Guideline that has been
established by PHD. MRD is the tools to make us know the expire date of produc.
Usually the sauce storage in walk in chiller is abour 2 days, while the ingredients
in the freezer can save until 1 week. Expire time for snack like Pepchiz and
SilverQueen Soft Cookies is about 3 days and for the sauce that already save into
the cup is about 1 day. Giving the MRD labels is to remind us when the expire
date of the materials. In MRD labels we should write the name of the item, date of
processing, date and time to used and expired date. If the material already expired,
the materials must be thrown away, but it must be recorded first into Form Make
Table Product Wastage Record. Filling the form is done after the outlet is close at
23.00 WIB.

2.4.3 Processing the Snack Dishes


Processing the snack dishes is done if there are orders by the consumer that
sign by ringing the Kitchen Display System (KDS) system bell at makeup table
area. Processing is done by BOH officier at kitchen area. The base techniques in
food processing in Pizza Hut Delivery for processing snack dishes are fat frying
and baking.

2.4.3.1 Processing by Fat Frying Methods


Deep fat frying is the cooking techniques tha use much oil (Murdiati dan
Amaliah 2013). The tools that used to process the snack with fat frying cooking
methods fry master with stainless claws dan frying basket. There are some button
to set the timing and alarm to remind if the dishes are cooked. We must pay
attention to the volume and the quality of the oil so that the dishes can cooked
well.
The process serving BBQ Chicken Skewers, after the chicken fried put the
chicken into the mixing bowl and pour the BBQ sauce about 10 g and aply the
sauce to the chicken. Same with Cheesy Melt Potato after it fried, put into the
mixing bowl, pour the BBQ sause about 20g and Cheddar cheese sauce 80 g, mix
the dish with the sauce and each dishes put into the snack packaging.
2.4.3.2 Processing with Baking Methods
Baking is cooking methods without use oil and water (Murdiati dan
Amaliah 2013). The tools that used is oven. Oven at Pizza Hut Delivery Mustika
Jaya has the temperature controller. The temperature that used to bake the snack
dishes is about 285 oC with processing time about 3 minutes.
The processing expecially SilverQueen Soft Cookies did at night at 21.00
WIB. First thing that we do when processing the SilverQueen Soft Cookies is take
the dough that already prepared from walk in chiller, and then the dough make
into small peaces about 40 g with the scoop and make into round shape and put in
the wide pan. Then pipeline the dough about 1 cm thin bake into the oven with
temperature 170oC about 5 minutes, chill the SilverQueen Soft Cookies, dan put
into stainless tray.
Processing the Beef Sausage Bites is take the sausage bites abut 6 pieces
and put into rack tangular and then put to the oven. Zuppa Soup Creamy
Mushroom processing methods is start from 1 ladle mushroom cream soup or 150
g mushroom cream soup put into some kind of alumunim bowl, the put the pastru
dough on it, then bake at the oven.

Processing of flatbread dishes such as Tuna Melt and Garlic Holic starting from
stretching dough, dough used is a regular dough that has been divided into two,
then formed into a rectangle, then perforated by using perforator, then dough
transferred to a special power pan flatbread and given topping, topping for Tuna
Melt is 50 g tuna mayo, 18 g whole corn carnel, and 20 g mozzarella cheese.
Topping for Garlic Holic is 40 g of garlic butter dip, 15 g chicken luncheon and
15 g mozzarella cheese, then baked in oven by pushing, ¾ part of the flat pan
power is already inside the oven, after being resealed using multi gripper and
spatula, and placed on the cutting board pizza, then cut into 5 parts using a
flatbread roller then each given 1 g pasrley.

2.4.4 Packaging the Snack Dishes


Packaging and serving is he last step in preparing and processing. Packaging
and serving is adjusted with the type of snack dishes. Serving the snack with
package use the package with cardboard material that coated by paper. The
purpose of packaging using cardboard for food is not easily damaged physically.
The main properties of cardboard are thickness, stiffness, and ability to be folded
(Hendrasty HK 2013).
The use of cartons in food packaging has an advantage, because the carton
includes a flexible packing material (readily shaped), recyclable, discardable,
easily labeled or product information, cheap, easy to obtain, protects the product
from damage, avoids impact, and facilitate process and distribution. The
advantages of paper packaging is light, relative, cheap and space saving. The
downside of paper packaging is easily torn, can not pack for wet food. The paper
used in Pizza Hiut Delivery for snack dishes is bread paper. The bottom layer
inside the cardboard packaging is adapted to the type of dish served, in order to
avoid cross-contamination. Paper-themed dishes like BBQ Chicken Skewers,
Chicken Sticks, Beef Sausage Bites, Cheesy Melt Potato, Pepchiz, Surimi Wrap,
SilverQueen Soft Cookies, Melt and Garlic Horlic Tuna.
Chicken Skewers BBQ dish in one serving of six, while a Chicken Sticks
dish in one serving is twelve pieces. Cheesy Melt Potato dish in a serving of 150
g. Pepchiz dish in one serving is six, and Surimi Wrap dish in one serving is ten
pieces.
Beef Sausage Bites dish in one serving of six pieces. The Tuna Melt and
Garlic Holic flatbread dishes are each divided into five pieces using a flatbread
roller. The Silverquuen Soft Cookies in one serving consists of four, and Zuppa
Soup Creamy Mushroom consists of one serving. Zuppa Soup Creamy Mushroom
dish is packed with aluminum foil packaging and closed again using carton
packaging. The packaging with aluminum foil container is useful to maintain the
durability of packaged products.
CHAPTER III
Conclusion

Based on the results of field work practices regarding the production of snack
dishes at Pizza Hut Delivery Mustika Jaya can be summarized as follows:
1. Pizza Hut Delivery (PHD) was formed in 2007 which is part of Pizza Hut
and under PT Sarimelati Kencana and supported by PT Sriboga Raturaya,
one of Pizza Hut Delivery outlets, Pizza Hut Delivery Mustika Jaya. Pizza
Hut Delivery Mustika Jaya has adequate facilities for the production of
snack dishes.

2. Preparation of a snack at Pizza Hut Delivery Mustika Jaya is divided into


three kinds of preparations, preparations for fried snack dishes,
preparations for baked snacks and sauce preparations. Preparation for
snack fried dishes such as memorsikan food such as chikcen stick and
potato wedges for Cheesy Melt Potato dish, and make a particular snack
that is for the dish Pepchiz. Preparations for baked snack dishes include
thawing such as BBQ sausage bites and puff pastry and making dough for
SilverQueen Soft Cookies. Preparation of sauce is differentiated into
preparation of sauce with processing and without processing. Preparation
of sauce with the processing of Mushroom Cream Soup and Cheddar
Cheese sauce, processing technique used is simmering technique. Prepare
the sauce without processing by mixing all the ingredients. The
preparation of sauce without processing of Hot Mix sauce, Honey BBQ
sauce, Tuna Mayo sauce and Garlic Butter Dip sauce.

3. Processing techniques used for snack dishes such as deep fat frying and
baking. The tool used with deep fat frying processing is fry master while
baking using oven. The deep fat frying snack dishes are BBQ Chicken
Skewer, Chicken Sticks, Cheesy Melt Potato, Pepchiz and Surimi Wrap,
while the baked snack dishes are Beef Sausage, Zuppa Soup Creamy
Mushroom, Tuna Melt, Garlic Holic and SilverQueen Soft Cookies .
4. Delivery of snack dishes is adjusted to the standard portion set by Pizza
Hut Delivery. The presentation of snack dishes in the form of packaging
made of cardboard coated with bread paper and alluminium foil. Serving
snack dishes lined with baking paper BBQ Chicken Skewers, Chicken
Sticks, Beef Sausage Bites, Cheesy Melt Potato, Pepchiz, Surimi Wrap,
SilverQueen Soft Cookies, Melt and Garlic Horlic Tuna. While serving the
dish that is filled with alluminium foil is Zuppa Soup Creamy Mushroom.
