Abstract
Anaerobic digestion leads to the overall gasification of organic wastewaters and solid wastes and produces methane and carbon dioxide. Anaerobic
digestion contributes to both reduction of organic matter and recovery of energy from organic compounds. In this chapter, the basic principles of
anaerobic digestion are introduced, and processes designed for the digestion of liquid and solid organic wastes are reviewed. Some applications for
solid food wastes treatment, investigated by the authors, are presented. Fertilization of the residue after the digestion is briefly explained.
