When news emerged, late last year, that
Michael’s Mina’s firebird diner was to
close its doors, there was much dismay.
However, we have to admit it might
have been a good move – the US celeb
chef’s new concept, Mina Brasserie,
seems much more in tune with difC’s
upmarket clientele. The menu, inspired
by Mina’s San franciscan heritage, is
lighter and more elegant – think tuna
tartare with pine nuts, garlic and mint,
a market salad with pomegranate,
almonds, pickled pumpkin and
manchego, and a delicious smoked
beef short rib with smashed potatoes
and squash pureé. The space itself
is also newly light, bright, chic and
airy, with an art deco feel – though,

a medium high heat. Add a good slug of oil and heat until it starts to smoke
a little, then add the cauliflower steaks. Sear until golden brown, around two
to three minutes, then flip and repeat on the other side – you are aiming to
retain a nice crunch but lose the raw texture. 5) Set the steaks to the side
for a moment, then use the same pan to heat the lemon, tomato and spring
onion halves. Serve the steaks with the vegetable sides and the chimichurri.
