October issue
October sees the advent of autumn and with the nights
appearing to draw in, the best of us would be forgiven for
wanting to curl up and lament the loss of summer. Welcome to
this month’s What’s On and in an issue that covers all aspects
of entertainment we’re sure you’ll change your mind when you
get stuck into our bumper October edition, so read on to discover
what’s hot and what’s not from Bristol’s premier guide to living

This month the team is thrilled to launch our beautiful ‘2011 Face
of What’s On’ calendar with proceeds going to the Frenchay
After-Burn’s Unit. The idea of the calendar evolved after our
hugely successful competition to find the face of What’s On
earlier in the year, so if you’re looking for a stocking filler with an

In Celebration of Chicken
With the nights now drawing in and the barbeque packed away for at least another seven
months we thought you might be in need of some comfort food. This month the What’s On taste
testers have devised two chicken recipes that effortlessly combine richness with affordability.
With more of us having to watch the pennies, we urge you to try both of these recipes and
transform an every day chicken into a real crowd pleaser.
CREAMY CIDER CHICKEN (Serves 4)
2 tablespoons of Olive oil
8 chicken portions (I prefer boneless thighs)
Salt & freshly ground pepper
1 medium onion
1 eating apple cored and cut into wedges
1 tablespoon of plain flour
225ml (8fl oz) of dry cider
150ml (1/4 pt) of chicken stock
A few sprigs of fresh thyme
1 bay leaf
2-3 tablespoons of double cream
(1) In a casserole dish heat one tablespoon of the oil. Season the chicken with salt and pepper and cook through until browned on
all sides. Remove from the pan with a slotted spoon and set aside on a plate.
(2) Drain off the excess fat from the pan, then add the remaining oil and fry the onion until softened. Add the apple and cook for

a further 1-2 minutes. Stir in the flour and cook for a minute. Add the cider and bring to the boil for 1-2 minutes. Add the stock,
thyme, bay leaf and chicken.
(3) Bring to the boil, then reduce the heat, cover and simmer for 20-25 minutes or until the chicken is cooked through. Stir in the
double cream and season with freshly ground black pepper. Serve on a bed of mashed potato or buttered noodles.

ONE POT CHICKEN AND BACON STEW (Serves 8)


3 tbsp of Olive Oil
16 Chicken pieces on the bone (a mixture of thighs and legs)
140g/5oz of smoked lardoons
4 medium carrots, thickly sliced
2 onions roughly chopped
2 tbsp plain flour
1 tbsp tomato puree
75ml/21/2 fl oz of cider vinegar
1-litre/13/4 pints of chicken stock
2 bay leaves
4 tbsp of double cream or crème fraiche
600gr/1lb 5oz of new potatoes
12 large white mushrooms quartered
Selection of chopped herbs such as parsley, thyme, tarragon or chives.
(1) Heat oven to 200C/180C fan/gas 6. Heat the oil in a large flameproof casserole with a lid. Fry the chicken pieces in batches
