COURSE DESCRIPTION:
Food Services I is the first of two courses in which students learn food preparation techniques with an
emphasis on quantity foods, catering, and basic skills needed to be part of a professional food service team.
Safety and sanitation standards expected of workers in the food service industry are covered, with an
emphasis on the Hazard Analysis Critical Control Point (HACCP) system. The ServSafe Food Handlers
test will be given and a certificate can be earned if the test is passed with a 75% or higher. ELA, Science,
Math, Economics, and Communication Skills are reinforced in this course. Students will participate in labs,
simulations, and projects.
***A lab fee of $30 is required.***

CLASS MATERIALS:
 ***$30.00 LAB FEE*** - provides cooking materials. Due September 7th.

 3 ring binder with loose leaf paper OR a spiral notebook - for taking notes

 Journal, notebook/composition OR pronged folder with loose leaf paper - for daily warm-
ups/bellwork *MUST BE SEPARATE FROM NOTES*

 Something to keep handouts/study guides/etc. in

 Writing utensils – pencils/lead pens AND ink pens – any color

 A working email address will be used to create an electronic account to turn projects in

 Kleenex – not mandatory- ***1 box =5 bonus points added to test of choice***

GRADES AND ASSIGNMENTS:


 GRADES - A minimum of 6 grades per marking period will be given. A unit assessment will be given
at the end of each unit. A cumulative examination/assignment will be given at the end of the marking
period. Other grades may consist of bell work, daily independent practice, quizzes, early finisher
assignments, class projects, writing assignments, cooking labs, and alternate assignments
 Major Grades = 60%
 Minor Grades = 40%

o BELL WORK - Every student is expected to complete bell work as they enter the class
 Keep SEPARATE from notes
 NUMBER each entry
 Answer using at least THREE complete sentences – unless otherwise noted
 If not in class, write reason why “absent, ISS, late due to…”
 Checked TWICE per 9 weeks
 ALL or NOTHING grade= “A” or “F”

o ALTERNATE ASSIGNMENT - If a student is revoked from a food lab privilege, an


alternated assignment will be assigned. The highest grade earned on the assignment will be a C
since the skill is not being learned. *This includes, but is not limited to ISS and PASS days!

o EARLY FINISHER ASSIGNMENTS – Every student is expected to complete a set of 10


early finisher assignments per marking period (9-weeks). These assignments will be readily
available for students to complete anytime they finish an assignment or test and there is still
class time left. Students have the option to turn each assignment in after completion or hold on
to the set until due. *KEEP IN MIND – it is the student’s responsibility to keep track of his/her
assignments.
o MAKE-UP ASSIGNMENTS/TESTS – Make-up work is the student’s responsibility. All
MAKE-UP assignments/tests must be complete before the end of the designated marking
period. The student must make arrangements for their make-up assignments/tests.
 The class website is readily available and should be used by students to access missed

o HOMEWORK: Students should complete any unfinished independent practice assignment,


review notes daily for tests, and complete projects when necessary.

GRADING SCALE USED:


 Louisiana High School Grading Scale:
100 – 93% = A
92 – 85% = B
84 – 75% = C
74 – 67% = D
66% or below = F

EXPECTATIONS, RULES, AND PROCEDURES:


 THIBODAUX HIGH SCHOOL’S RULES:
o Be in classroom when tardy bell rings.
o Be prepared for class with all appropriate materials.
o Respect self and others, including property.
o Follow teacher directions at all times.
o Comply with dress code policies at all times.
 MRS. ARNOLD’S CLASSROOM RULES:
o Follow ALL school/district rules.
o Follow ALL classroom/group rules posted.
o DO NOT disrupt the educational process!!!
 MRS. ARNOLD’S LAB RULES:
o Each student will be given a Safety, Rules, & Procedures Contract.
o Guidelines, rules, & procedures will be presented in class & students must sign a contract
stating he/she is aware of safe/unsafe practices, rules, & procedures prior to participating in
cooking labs.
o Rules & procedures must be followed at all times.
 PROCEDURES:
o Entering /Exiting - Enter the class quietly, be on time, sit, & begin bell work. Leaving class
without permission is not allowed. REMAIN SEATED while waiting for the dismissal bell.
No student is to pick up until directed to do so.
o Office/Guidance Visits: must be done on the student’s own time unless it is an emergency.
o SLEEPING or putting your head down is not allowed in class or labs.
o Pencil Sharpening: should be done within the first 5 minutes of class.
o Handling Trash: The student should ball up their trash and leave it at the corner of their desk
until the end of class when they can throw it away on their way out.
o During Class: The student is expected to pay attention, remain seated quietly, act professional,
and participate regularly.
o Answering/Asking Questions: The student is expected to raise their hand to speak. One
student speaks at a time while others listen. The only disruption that is allowed is if it is an
emergency. BE RESPECTFUL!
o Turning in work: designated areas in classroom – will be discussed
o Group Activities:
 10-20 seconds will be allowed to get into or out of groups
 Specific tasks will be assigned for each person
 Voice level should be appropriate for the activity
 Groups should work together and be respectful to one another
o Restroom: Restroom privileges will be granted if the student shows that he/she is focused on
classwork. Habitual instances will be denied. Emergencies will be taken into consideration. If there
is a medical issue, the student should provide a doctor’s note to the nurse and make a copy for the
teacher.
o Dress Code: must be followed at all times. See LPSB handbook.
o Cell Phones: See THS Student Handbook for general policy. Teacher policy for the classroom:
RED ZONE = no cell phone usage, GREEN ZONE= cell phone use allowed.
-ALWAYS assume MY CLASSROOM is a RED zone UNLESS I tell you otherwise.
-No plugging in cell phones to charge!!! ***THIS IS A DISTRICT POLICY***
o Drills: Students are to remain calm, quiet, and follow verbal directions given. ALL DRILLS are
considered RED ZONES.
 Fire Drill-remain calm, leave belongings, exit through doors (parent pick-up), meet and
gather with class by the tree in the teacher’s parking lot (Talbot St.), stay quiet and answer
to roll call
 Tornado Drill-remain calm, keep working, follow teacher’s directions
 Shelter-in-Place (typically airborne)-remain calm, keep working, NO ONE LEAVES,
follow teacher’s directions
 Instructional Lockdown (no imminent danger)- remain calm, continue working, NO
ONE LEAVES, follow teacher’s directions
 Emergency Lockdown (imminent danger)-Avoid, Deny, Defend situations; follow
teacher’s directions

o Computer Lab / Laptop cart - Students must:


 Sign in EVERY TIME
 Only use the computers for the designated assignment
 Log off after use
 NEVER have FOOD OR DRINK in the lab/next to computers
 Report any damages to the teacher
o Testing: The student should listen to oral directions, complete all parts, turn the test into the
designated location, and begin early finisher assignment. Students with accommodations will be
accommodated accordingly.

Students are expected to follow ALL school and classroom rules AT ALL TIMES.
