Fun, Food and Fellowship describes our first meeting of the year at the 2nd Vice President –
lovely Abingdon Winery. What a joy it was to reconnect with one another in Dana Rasnick

looking forward to our meeting in October at one of our favorite places –

 If you missed our September meeting you missed some great food
and fellowship. Below is the recipe for Stamps’ delicious
Watermelon/ Tomato Salad. So lite and refreshing! Thanks to
everyone for sharing their delicious dishes!!!

Watermelon Salad
8 cups of seedless watermelon, cut into 1- inch cubes

3 lb. heirloom tomatoes, cored and cut into 1 inch wedges

1 tsp.kosher salt

4 cups of arugula ( 4 oz.)

2 satsumas(4oz.each peeled and cut into segments

5 Tbsp. extra-virgin olive oil,divided

2 Tbsp. chopped fresh mint

1 ½ Tbsp. red wine vinegar

½ tsp. black pepper

2 0z. goat cheese, crumbled (about ½ cup)

½ cup chopped pecans, toasted

1. Combine watermelon and tomatoes in a large bowl. Sprinkle with

salt, ant toss gently to combine, let stand 10 minutes.

2. Combine arugula, satsumas, and 1 tablespoon of the oil in a

medium bowl, tossing to coat. Add to watermelon mixture, and toss
gently to coat. Which together mint, vinegar, paper and remaining 4
tablespoons oil in a small bowl. Drizzle over watermelon mixture.
Sprinkle with goat cheese and toasted pecans, and serve.
