Abstract: In the present work, the optimal extraction conditions of anthocyanins present in the corms of purple corn
were doubled by using a solvent extraction design. The factors studied were pH, solvent concentration, time and
temperature. The results have been made by ANVA analysis of up to four factors indicating the most favorable benefits
for the extraction were EtOH at 40% and 60%. The EtOH at 40% presents the highest values of anthocyanin extraction at
60 and 90 minutes in general. In this way, the statistical analysis is presented regarding the results obtained.
