Lesson 1: How to work with the Window


person
This lesson explains how to work with the Window person when not using SOS and line
monitors.
After you complete this lesson, you’ll be able to:
 Demonstrate how to work with the Window person.

How do I Work with the Window Person when not


using SOS and Line Monitors?
When checks are rung, the Window Person follows these steps:
Step Action
1. Groups items together by station

2. Calls out orders to make by sequence

After the order has been called using order sequencing, follow these guidelines to eliminate
the need to remake items that have died in the window:

Step Action
1. Echoes

2. If unclear, ask for “all day”


Hint: An “all day” is when the Window person repeats all items needed
from a particular station.

Lesson 2: How to work the line

This lesson explains how to work the line without using SOS and line monitors.
After you complete this lesson, you’ll be able to:
 Demonstrate how to work the line without using SOS and Line Monitors.

How do I Work the Line without using SOS and


Line Monitors?
Working as a line cook without using SOS and Line monitors requires:
 Excellent memory.
 Ability to work on several orders at once.
 Ability to follow special instructions.
When several items are ordered, the line cook follows these steps:

Step Action
1. Pulls marker for each item ordered.
Hint: A marker is a unique ingredient from each item that identifies that item.
Example: A piece of bleu cheese may be a marker for a Cobb Salad.

2. Places markers on the counter in the sequence in which they are to be made.

3. Removes each marker as item is made.

To prepare an Appetizer, noted as **B-4**,

Step Action
1. Make first.

2. Place in window with yellow chit.

Prepare the remaining items from the white chit.

Step Action
1. Place in window as completed.

2. Final item placed in window with white chit.
