The Pendulum Court : Tomato Florentine


Soup

2 Tbsp. Margarine 3/4 tsp. Black Pepper


1/4 C. Celery 1 Tbsp. Salt
8 oz. Chopped Onion 4 C. Water
1 lb. Ground Beef 2 Tbsp. Honey
2 lb. + 2 1/2 oz. Tomato Juice 2 Tbsp. Red Vinegar
8 oz. Frozen, Chopped Spinach 7 oz. Canned Diced Tomatoes
1 Tbsp. + 1 1/2 tsp. Diced Ground Basil 1 oz. Green Canned Diced Chilies
1 1/2 tsp. Garlic Chopped in Water 4 oz. Orzo Pasta
In a medium saucepan, melt margarine. Add chopped celery and onions. Cook and stir over medium heat until tender.
Set aside. In a large pot, brown ground beef and drain fat. After fat has drained, add tomato juice, spinach, basil, garlic,
pepper, salt, water, honey, vinegar, tomatoes, and chilies into the large stock pot. Cook until spinach is no longer
frozen. Add orzo pasta to soup. Cook the soup (boiling is okay-stir occasionally). Let simmer for at least 20 minutes.
When pasta is cooked, the soup is ready to enjoy!
