Abstract

The usage of milk products is evidenced back in time, about thousand


years ago till when herds were put in work largely for subsistence
agriculture, which means producing farm products to satisfy one's own
necessity of food, clothes and housing, without putting that produced
commodity into trade.

Dairy farming, although, has grown into a business industry since


after civilization and industrialization. Dairies were opened, with bringing
in the introduction by each country its controlling jurisdiction for making
certain rules in the area of cattle farming. The supremacies established
directives regarding animal's breed which would be suitable for cattle
farming.

These days, common human intake milk sources consist of cow,


goat, horse, buffalo (water bred), reindeer, camel, sheep, and yak.
Prevalent sources of non- dairy milk, normally plant origins are, soy, rice,
almonds, coconut, cashew, hemp, and pea. These milk free replacements
of milk products can now generate yogurts, cheeses, and even ice -
creams, for people on a vegetarian diet, or who are vegetarian by choice.

Nowadays, majority of dairy agriculturalists, processors, and distributors


employ machines for self-operating formerly physical tasks. With the
assistance of automation, agriculturalists along with work rationalization
produce huge amounts of finer quality commodities.

This study aims to determine the uses of milk and dairy products in hotels
as a source of energy, minerals, vitamins and macro nutrients.
Introduction

These days usual human consumption sources include cow, goat, buffalo
(water bred), reindeer, sheep, horse, yak, and camel. Usual sources of
milk- free, usually plant sources include soy, rice, almonds, coconut,
cashew, hemp, and pea.

These non - dairy replacements of milk items can now make


yogurt, cheese, and even ice- creams, for people on a vegan diet, or who
are alternatively vegan. The putting in use of milk products is footprinted
back in time, about thousand years before till when herds were
enormously put in use for subsistence agriculture, which means,
producing to meet one's own requirement of food, clothes, and shield,
without using it for trade.

Dairy farming, although, has grown into a trading industry after


civilization and industrialization came into being. Dairies were opened,
with bringing in the introduction by each country its controlling
jurisdiction for making certain rules in the area of cattle farming. The
supremacies established directives regarding animal's breed which would
be suitable for cattle farming. Nowadays, majority of dairy
agriculturalists, processors, and distributors employ machines for self-
operating formerly physical tasks.

With the assistance of automation, agriculturalists along with work


rationalization produce huge amounts of finer quality commodities.

These machines also assist the daily producers to punctually keep a check
on the health of their producing animals. These instruments even lessen
the production time, making it trouble - free and much more inexpensive
to arrive the buyers from the farm.

Dairy products or milk products are a kind of food obtained by the


milk of mammals, like goats, sheep’s, buffaloes or cows. Eggs are not
considered as dairy products. Dairy products consist food items which are
made by milk, like cheese, yogurt and butter.
The place where dairy products are made by milk is called dairy.
Dairy products are used all over the world because of its tremendous
benefits.

Milk and it’s by products are very healthy and rich in nutrients as
milk is a good source of vitamin D, calcium and other nutrients. They
offer potassium, phosphorus, magnesium and Vitamin A. The milk,
yogurt and cheese contain a significant amount of calcium which is good
for human body. Yet, majority of the people don’t get proper amount of
calcium in their daily diets. Consuming three servings of dairy products
daily adds to bone mass, and thereby following to improvised bone
health.

People should consume 2-3 cups of milk or milk products daily to meet
their daily calcium requirements. One must assure that he is eating
healthy and getting proper milk and milk products daily to lead a healthy
life. It is always recommended to commence your day with milk, cereal
and yogurt. Lunch should always include cheese and yogurt and evening
desserts must have some milk.

Calcium offered by milk is absorbed and utilised by human body,


therefore dairy foods and milk are considered very reliable and economic
source of calcium. Proteins and Vitamin D rich diet helps in bone health.
Because of the high protein, calcium and Vitamin D, dairy products are
considered very useful in maintaining strong bones.
Yogurt is a cultured dairy product which contain probiotics that offer a
huge variety of health benefits. A diet rich in probiotics improvises
health, enhances good bacteria of gut and lower down the risk of various
diseases.

Uses of Dairy products in hotels:

Dairy products are being largely used in hotels now as people are
becoming more health conscious. And it orders to grow and survive in
this competitive world, hotels need to come up with new services to stand
them apart.

Therefore, including dairy products in their menu was a good idea.


This brought standard as well as health benefits for customers and it was
a great deal to attract people.

1. Milk with cereals is offered in breakfast.


2. Curd and butter are offered with parathas. Some restaurants are
only famous for their dairy products like Amrich Sukhdev.
3. Yogurt and flavoured milk are served as evening snacks for the
people who prefer them.
4. Desserts are being made by dairy products and are offered after
every meal.
Offering dairy products is a good idea indeed, but what is best is its
quality. While serving dairy products, hotels, restaurants or cafes must
ensure the quality of milk and its products.

Therefore, it is important for them to have good suppliers who


would only serve quality products.

Case studies

Dairy Enterprise Model

This section of the study compares and contrast four enterprises of dairy
products in India. The enterprises chosen for this analysis are listed
below.

1. A private dairy working in Andhra Pradesh


2. A weak functioning cooperative: Orissa state Co-operative
3. A strong functioning cooperative: Gujarat cooperative milk
marketing
4. An amateur alternative model (new generation cooperative)

These cooperatives are popular in some areas of India, because this


mechanism has a different perception in different places. In some places
this model is successful. Like Gujarat, the model is managed by
professionals but lead by elected managers.

In other places, cooperatives are managed and organised by civil servants


and this led to tremendous interference by government in its day to day
mechanism. This therefore results in lack of democracy and thereby there
is no responsibility and sense of opining at villages.

An Act was passed to solve the problems of managing and governing


these issues. This Act was MACS Act, passed in 1995. It cut all the links
between district level and state level cooperatives. Therefore, it provided
a direct autonomy to villages and district levels.

1. A private dairy

1. It is ISO-9001 certified and verified dairy in Andhra Pradesh.


2. The firm was set up after MMPO enabled dairy diaries in 1992.
Recently it also trades for stock exchange in India.
3. The firm serves milk to three metropolitan cities namely
Hyderabad, Chennai and Bangalore. This firm is also looking
forward to set itself up in Mumbai.
4. A huge variety of products are manufactured and marketed by the
firm. The products include milk, butter milk, curd and paneer.
Along with these items, new products which are new tasting buds
of youth are also offered like flavoured milk and flavoured yogurt.
5. The firm also house various chilling and cooling units. This is done
in the firm of Andhra Pradesh to ensure the quality of milk chain.
6. The company obtains milk supply via agents who have direct
communication with farmers. As per the social and geographical
condition, there might be more than one agent for one village.
7. The milk is then collected by agents and supplied to firm. The milk
collected by firm from the agents of usually on a negotiated price,
however the firm is not involved with the negotiation between
agents and farmers.
8. The agents usually offer finances to prove and maintain their
loyalty. Usually, the agents even argue with other private agents
for the supply of milk.

2. Orissa State Co-operative milk data:

Investment in private sector is on rise now a days. Trade of milk hasn't


grown as much as it should so National dairy development board works
on the integration of milk producers.

3. Gujrat Cooperative Milk Federation:

1. Dr.Verghese Kurien established Anand Milk Union Limited


(AMUL) in 1946 for
1. finishing the exploitation of milk producers.
2. Brand name AMUL was managed by Gujarat Cooperative milk
marketing federation.
3. GCMMF composed by thirteen district unions, including thirteen
thousand one hundred and forty-one village dairy Cooperative
societies.
4. Asia's biggest dairy business empire having approximate milk
processing capacity of 10.2 million litres per day.
5. Gujarat Cooperative milk marketing federation exports milk, ghee,
skimmed and whole milk powder, butter, cheese and indigenous
milk products to China, Hong Kong, Singapore and USA.
6. GCMMF consists three thousand wholesale distributors and over
five lakh retail outlets that provides a national level achievement
for fast moving consumer goods companies also can boast.

Structure

Gujarat Cooperative milk marketing federation work in three -tiered body


structure. GCMMF regularly collects milk form farmers, makes regular
payments to milk producers and provides them with various products and
services. Gujarat Cooperative's Amul model of dairy development stated
Rs.10 for share certificate and Rs.01 for registration for an individual to
become a member of village Cooperative society.
Elected representatives of farmer members make policy decisions at all
levels of management, which are then implemented by professional
managers. This type of structure eliminates all middlemen.
Case study:

Majority of the Indians are eating out because developing economy


promotes income. That is the reason that the topmost dairy in the biggest
milk producing country of the world is challenging to develop its reach.

Amul decided to expand its reach by supplying milk, curds, cheese and
butter to all hospitality industry including hotels m, caterers and
restaurants. Their aim is to expand the share of HoReCa sales.

As the income of people is rising, more people have started going out of
eating. And this has increased the demand of dairy products. The
managing director of Gujrat Cooperative milk federation, which is the
producer of Amul products, Mr RS Sodhi says that in any party or a
celebration, more and more value-added milk products are seen. So, it can
be considered as a developing market.

More and more urbanisation, enhanced lifestyle of people and majority of


the population below 24 years in an economy of population above 1.2
billion is leading the growth and expansion of hospitality industry.
It is aiming to touch ₹5.5 lakh till 2022, developing at an annual rate of
10 percent from ₹3 lakh in 2016, as per the report of a National
Restaurant Association of India-Technopak.

Globalised food chains such as Pizza Hut, Dominos, McDonalds and


Baskin-Robbins are flourished all over the country, even opening outlets
in towns and smaller cities. Restaurant chains including Pind Balluchi
and Barbeque Nation are now opened even in areas like Bhopal, Raipur
and Kolhapur.
That has motivated a new group of enterprises to open cafes and
restaurants. All they would need is milk, butter, cheese and other milk
products. And that would definitely help economy to hit a dairy market
worth ₹5.5 lakh crore.

Amul is the largest source of milk in the country and has a huge network
of cooperatives. It started in 1970s and transformed our country into the
largest producer and consumer of milk. The firm collects 30% of the
organised market which is around 25.5 million litres of milk. By March
2017, revenue was 27000 crores.

Sodhi added that aim was retail till now, different from the developed
markets where sales of the institute add its share of around 50%. Amul is
already the supplier of Taj group of Hotels, ITC Hotels and The Marriott
and now is aiming to grow more and expand, he added.

The aim and concept of Amul is not new or different. The smaller
segments like HoReCa provide its supplies to Parag Milk Foods Ltd. and
Parag Dairy ltd. These two firms were dependent on their supplies to
cafes and restaurants to increase volume before aiming to retail.

Amul is looking forward to expand its reach by developing the market


share and revenue of the firm, said the consumer and retail partner of
consultancy Grant Thornton ltd. That’s rational only when the sales are
increasing strongly and the number of outlets is growing, he added.
Conclusion

Dairy farming has possibility to improve rural incomes, nutrition and has
potential to create more jobs in this sector which aims higher in women
empowerment, hence being very critical space for investment. An
industry that is well- built and has specialized techniques for efficient
cattle farming, allows millions of farmers to earn profit from the
emerging scenarios and make an observable impact on rural incomes. On
the other side, desolate efforts towards development in dairy trade can
have a remarkable negative effect on the dairy industry.

The growth rate has been declining over the past few years. With
rapid increase in demand of milk products like curd, various kinds of
cheese like (mozzarella, cheddar, parmesan etc.), yoghurt, butter,
buttermilk etc. and stagnant supply of other, there will be a likely
shortage in demand in the coming years.

Major areas of intervention in dairy sector have been spotlighted in


this review. Carrying out deliberations requires resources and assurance
from main institutions- government, NGOs, development agencies, and
the national dairy development board- to partner and work together.
Two very important factors for the growth of this industry are- dairy
development activities, and milk prices paid to farmers. In the distinct
policy environment, any player can assure milk in any region. The earlier
concepts of milk sheds are very different from this state of affairs which
constricted the agency or association procuring milk to a particular area.
Therefore, agencies now-a-days feels insensible to invest in dairy
development activities.
Private companies are discouraged to invest in dairy development
activities due to freedom for procurement. However, investment by
private sector in procurement is rising.

What is obvious is that as the number of buyers is rising, little is being


done to develop the sector.
In this scenario, organizations that are owned by the farmers need to be
developed at the grassroots level, and be attached to service providers.

To address issues regarding availability of all inputs, including


feed, fodder, breeding, veterinarian services, medicines, vaccines, credit
and insurance etc., dairy farmer establishments should be used. The
GCMMF has been the most successful in meeting the input requirement
of farmers as perceptible from the examples previously presented.
Because of issues with the basic organization of cooperatives, this model
has not been successful.
