OPENING AND SERVING WINE (1/2)

PROCEDURE PURPOSE : WINES MUST BE SERVED IN PROPER TEMPERATURE


AND GLASS

PROCEDURE
 Collect the bottle of wine
Ambil botol anggur
1. Pick up the wine bottle from the service bar and make sure it is the correct
one that has been ordered and at the right temperature.
Ambil boto anggur dari bar pelayanan dan pastika itu adalah anggur yang
benar sesuai dengan pesanan dan suhunya tepat
2. For the red wine, put the bottle into a wine basket
Untuk anggur merah, di letakkan di keranjang anggur
3. For the white wine, prepare a wine cooler with enough ice cube and water.
Untuk anggur putih, siapkan pendingin anggur dengan es dan air di dalamnya
4. When carrying the bottle of wine into the restaurant, always have the service
napkin with you. Be careful when carrying wine.
Ketika membawa botol anggur ke restoran, pastikan membawa kain
pelayanan. Hati-hati ketika membawa anggur
 Present the bottle of wine
Memperlihatkan botol kepada tamu
1. Make sure you have placed the correct wine glasses on the table and the
side plate for the place the cork.
Pastikan gelas yang benar telah di pasang diatas meja dan juga piring kecil
untuk meletakkan gabus anggur
2. Put the wine cooler with stand and napkin next to the guest’s table or the red
wine on the assigned station.
Letakkan pendingin anggur dengan tempatnya di sebelah meja tamu, atau
keranjang anggur di station yang di sediakan
3. To present the bottle of wine, fold and place the service napkin over your left
hand, place the bottle of wine in your left hand holding the neck of the bottle
by your right hand, then step to the right side of the guest (host) who ordered
the wine.

Untuk mempelihatkan botol anggur kepada tamu, lipat dan letakkan kain
pelayanan di tangan kiri dan letakkan botol anggur kemudian pegang leher
botol dengan tangan kanan dan melangkah mendekati sebelah kanan tamu
yang memesan
4. Present the bottle of the wine with label facing to the guest. At the same time
say the name of the wine, e.g. : “this is your Wolf Blass Black Label,1997,
Sir”).
Perlihatkan merek anggurnya kepada tamu dan dan katakan nama
anggurnya “Ini Wolf Blass Black Label, 1997”
 Open the bottle of the wine
Membuka botol anggur
1. For white wine, bottle is open on the wine cooler and for red wine on the wine
basket.
Untuk anggur putih, botol di buka di pendingin anggur dan untuk anggur
merah di keranjang basket
2. Hold the bottle neck in your left hand, open the bottle with the corkscrew,
using the knife to cut the foil under the rim. Do not turn the bottle while
cutting.
Pegang leher botol dengan tangan kiri, buka botol dengan pembuka anggur.
Gunakan pisaunya untuk memotong foilnya tepat di bawah mulut botol.
Jangan memutar botol waktu membukanya
3. Insert the corkscrew into the middle of the cork, do not push too hard.
Masukan ujung dari pembuka anggur ke tengah gabus, jangan di tekan
terlalu kuat
4. Turn the corkscrew slowly clockwise. Lift up the cork slowly, trying to avoid
any noise. Remove the cork and place it on the side plate. Clean the bottle
neck with the service cloth.
Putar pembuka anggur dengan pelan searah jarum jam. Angkat gabusnya,
hindari suara yang berlebihan. Angkat gabusnya dan letakkan di piring kecil.
Bersihkan mulut botol dengan kain
5. Take the bottle in your right hand and wipe and pour the wine slowly from the
right side of the guest (host), into the host’s glass, pour only “mouth full” with
the label facing the guest.
Ambil botol, keringkan dan tuangkan ke gelas tuan rumah dari sebelah
kanan, tuangkan hanya sedikit saja untuk mengetesnya dengan merek
menghadap tamu
6. After the approval of the host, pour the wine into the other glasses, ladies
first, clockwise and the host last, then place back the bottle into the wine
cooler or the wine basket.
Setelah di setujui oleh tuan rumah, tuangkan ke gelas tamu yang lain, wanita
dulu , searah jarum jam dan tuan rumah terakhir. Letakkan kembali ke
pendingin anggur atau keranjang anggur
