CHAPTER 1

PROBLEM AND ITS BACKGROUND

INTRODUCTION

Pastillas, also known as Pastillas de Leche or Pastiyema is a milk-based confectionery with

origins in the town of San Miguel in Bulacan, Philippines. From San Miguel, pastillas-making

spread to other Philippine regions such as the provinces of Cagayan and Masbate.

Initially, pastillas de leche were primarily home-made by carabao-rearing farmers. A small-scale

industry on the food product soon grew, with the pastillas made from either carabao or cow milk

or both. Refined sugar and calamondin juice are also added during the pastillas-making process.

In San Miguel, Bulacan, a Pastillas Festival has been celebrated every May since 2006. The

paper-cut form of the pabalat is also linked to the festival, involving making elaborate paper-cut

designs using these wrappers.

Pastillas are not only delicious, but they are also very easy to make. They don't even need to

be baked! You simply mix the ingredients and devour them. Eating pastillas can be a delightful

part of your daily life because they make a quick, delicious snack. If you're hungry and don't

have a lot of time, pastillas are the answer. Pastillas de Leche, translated from Spanish, means

"milk pills" or "milk tablets". This food delicacy is not usually available in other countries. If

you love milk then you will love pastillas, as the main ingredient is milk. Pastillas are candies

made out of milk. They can be served with a main dish, or as a snack. Pastillas are so easy and

fast to prepare, some people even make them as a product to sell.

Carrot

Carrot is a widely used root vegetable (usually orange in color) that is used all around the

world as one of the most popular food ingredients. Because of their high nutrition value,

presence of β-carotene, dietary fiber, antioxidants, minerals, flexibility for processing in many

kinds of ways and the ability to remain edible even after months of reliable storing in both

ordinary or refrigerated places, carrot instantly became embraced wherever it appeared after it

was carried out from its home in Iran and Afghanistan. During its journey across centuries and

continents, countless botanists managed to improve the composition, look, flavor and size of

ancient carrots and produce the modern orange-colored carrot that appeared first in 17th century

Netherlands.

Home of carrots and its numerous cousins can be tracked to dry and hot lands of Iran and

Afghanistan. Earliest evidence of its use there was dated to 3000 BC. From there, carrot seeds

were picked, carried and sold via caravans to neighboring Arabian, African and Asian lands, who

all accepted carrots immediately and started crossbreeding and creating new types of this famous

root. Even in those ancient times, many colors of carrots were present and used – black, white,

red and purple. Interestingly, orange colors that we use today were not present. The most telling

sign of how popular carrots were in those ancient times come from Ancient Egypt, where

numerous carrots were placed in the tombs of dead Pharaohs and the drawings of the carrot

harvest and processing can be found in numerous hieroglyph paintings. The most popular color

of carrots that was cultivated in Egypt was purple, and it was used not only for eating but also for

Malunggay (Moringa Oleifera)

Malunggay (Moringa Oleifera), is a popular plant known for high nutritional value as well as

an herbal medicine. Malunggay is a plant that grows in the tropical climates such as the

Philippines, India and Africa. Malunggay is widely used as vegetable ingredient in cooking, as

herbal medicine for a number of illness and other practical uses.

The Malunggay plant can grow to as high as 9 meters with erect white trunks. The compound

leaf has about 3 to 9 leaflets. Malunggay has white fragrant flowers that produces long pods with

3-angled winged seeds.

Malunggay may be propagated by planting its seeds about an inch in the ground or matured

malunggay stem cuttings of about 3 feet in length may also be planted into the ground. Planted

malunggay cuttings grows faster compared to planted seeds.

Malunggay (Moringa Oleifera) has been used as herbal medicine in many cultures for

hundreds of years, Malunggay is known as a very nutritious plant where it is used to combat

malnutrition in third world countries especially for infants and nursing mothers.

The developing and marketing of successful new food products is recognized as an important

competitive strategy, albeit one of the riskiest, of a modern food company. In consumer food

markets, new and improved products have become important symbols of economic growth,

improved living standards and technological progress. Manufacturing do not expect to be able to

sustain, let alone improve, their market positions without product initiatives. The markets

themselves are seen as vulnerable if they cannot be revitalized with new products. (Food choice

The researcher goal is to develop new product which is pastillas one of the favourite candy.

This will provide healthy and nutritious favourite sweet products that the nutrient contents are

essential for the development of the body. And also the study of the development od carrot

pastillas with malunggay is another trend of opportunity for product innovation.

THE STATEMENT OF THE PROBLEM

1. What is the level of acceptance of development of carrot malunggay pastillas to the

students?

2. What is the ingredients and process needed in the development of the carrot malunggay

pastillas?

Scope and Limitation of the Study

The focus of the study is to develop pastillas candy using carrot and malunggay as the main

ingredient and the following ingredients I also considered; sugar, egg white, milk and butter. The

ingredients are delimited to the ones specified in the recipe. The carrot pastillas has expiration

date but the best quality is achieved during the first two (2) months.

The respondents of the study are the students of Bulacan State University , composing of

one hundred (100) individuals.

Significance of the Study

The Children. The candy is good for children who love sweet foods like candy. It will also

provide them with the essential nutrients like vitamin A and C.

The Parents. The product will help parents provide their children with food containing essential

nutrients like vitamin A and C.

The Student of Food Service Management. This will be a source of information on how to

conduct a research. It will also help them to understand the other aspects of the product that are

discussed in detail in other reading materials.

The Instructors of Food Service Management. This study will initiate ideas and concept and

develop entrepreneurship activity that eventually will result to income generating project of the

college.
