Cornell University’s Smarter Lunchrooms Movement works to
apply principles from behavioral economics to
school lunchroom environments.

Because individuals, including students, are influenced by their surroundings,


behavioral theory can be applied to encourage healthier behaviors even in
school lunchrooms.

Research in behavioral economics examines how social, cognitive, and


emotional factors effect economic decisions. Findings of this research
identified seven key factors that affect our choices:
• price
• appearance
• convenience
• information

FoodWIse Racine Kenosha SLR Strategy for
Federal Fiscal Years 2019-2021
• Engage community with the effort (FFY19)
• Identify 2-3 schools to pilot the program (FFY19)
• Work on a coalition(s) to assess pilot schools’ cafeterias (Ongoing for
three years)
• In conjunction with school staff, engage youth groups to participate in
applicable components of the movement (naming foods, signage, peer
engagement, artwork, etc.) (Ongoing)
• Complete tray waste assessments at schools that are engaged in the
project (Ongoing)
• Identify target strategies for improvements based on the scorecards
• Report progress and continue communication with pilot schools and
coalitions involved
• Celebrate successes!!
Needs and Observations
Pilot schools with administration and staff who are willing to allow FoodWIse
staff and GGR volunteers to observe lunch service and complete the scorecard
(WINGS forms must be completed and approved to work in RUSD schools, others
may have other processes for ensuring the safety of youth).

School administration and staff who are willing to help communicate the scope
of the project and progress to their colleagues and facilitate conversations with
youth, parents (as appropriate), and lead youth groups (Partnering schools must
have an adult representative present at all times during youth education per UW

Given the enhanced success of this movement (and other waste reduction and
recycling efforts) by engaging youth groups, it seems like a reasonable next step
would be to work toward identifying the structure for youth groups to meet and
begin work, be they in a particular class period or at a designated time and with
a staff member that is also engaged in the effort.

Oversight of the scorecard completion, tracking progress, data sharing.

Leadership in communication with school groups that are engaged.

Reporting on progress for Smarter Lunchroom objectives, including tray waste.

Series of Nutrition Education in income eligible schools to complement the


Smarter Lunchroom efforts (already teaching in many schools!)

FoodWIse Administrator and staff hours, travel budget to schools, and larger
signage, all funded by the Supplemental Nutrition Assistance Program Education
(SNAP-Ed) grant.

FUN!! We employ partner and learner centered engagement techniques to give


personal meaning to learning and projects, increasing the efficacy of lessons and
the likelihood that learners will continue to apply the lessons in relevant ways to
their own lives and as circumstances allow.
