OBJECTIVE:
To define basic nutrition concepts such as malnutrition, nutrition, health, wellness and nutrients and
principles.
What Is Malnutrition
What is Nutrition
What is Health
What is Wellness
5
What is Malnutrition?
Malnutrition is a state of nutrition in which a deficiency or excess (or imbalance) of energy, protein and
other nutrients causes measurable adverse effects on tissue / body form (body shape, size and
composition) and function and clinical outcome
Malnutrition is a condition that results from eating a diet in which nutrients are either not enough or are
too much such that the diet causes health problems. It may involve calories, protein, carbohydrates,
vitamins or minerals.
⇒ Poor concentration
⇒ Loss of appetite
⇒ Rickets
6
Nutrients Deficiency
Zinc deficiency causes skin rashes and decreased ability to fight infection
Vitamin B12 deficiency can cause anaemia and problems with nerves
Preventing Malnutrition
Malnutrition is caused mainly by not consuming what the Nutritional Guide for Filipinos (NGF).
• Carbohydrates
• Protein
7
• Dairy - vegans are able to find abundant nutrients from non-animal sources Fats.
The average human should drink at least 1.2 liters of fluid per day.
8
IMPORTANCE OF NUTRITION
Several developmental changes in brain, body and organ occur at this time.
Vitamins and minerals are very important for bone health, brain development and to strengthen the
immune system.
It is a growth spurt time where nutritional needs are high but fairly small appetite.
Food choices largely depends a lot on family food choices, peer groups, media.
Important for good development for cognitive skills, bone mineralization and life long eating
patterns
NUTRITION
Nutrition is about eating a healthy and balanced diet. Food and drink provide the energy and
nutrients you need to be healthy.
Nutrition is the science that interprets the interaction of nutrients and other substances in food in
relation to maintenance, growth, reproduction, health and disease of an organism.
9
FOOD
Any nutritious substance that people or animals eat or drink, or that plants absorb, in order to
maintain life and growth.
Refers to any edible material which when taken into the body can provide nutrients needed to
support the various body functions.
CALORIE
Calorie - is the amount of heat produced or released when food is burned by the body cells.
Calorie also refers to the amount of energy required to “do work” or to perform certain physical
activities.
ENERGY
Food and drinks are made up of different amounts of protein, fat, carbohydrate (and sometimes
alcohol); known collectively as macronutrients. The amount of each macronutrient in the food will
determine its energy content.
NUTRIENTS
Chemical substances derived from food which the body uses to build and repair tissues, generate
energy and regulate body processes.
Substance that provides nourishment essential for growth and the maintenance of life.
10
Macronutrients are eaten in large amounts and include the primary building blocks of your diet
— protein, carbohydrates, and fat — which provide your body with energy.
Vitamins and minerals are micronutrients, and small doses go a long way.
ESSENTIAL NUTRINIENTS
Carbohydrates
Carbohydrates are the main energy source for the brain. Without carbohydrates, the body could not
function properly.
Protein
Protein is the major structural component of cells and is responsible for the building and repair of body
tissues.
Fat
11
Fat is an energy source that when consumed, increases the absorption of fat-soluble vitamins including
vitamins A, D, E and K.
Vitamins
Vitamin C is necessary for the synthesis of collagen, which provides structure to blood vessels, bone and
ligaments. Rich sources include citrus fruits, strawberries and peppers.
Minerals
Sodium helps to maintain fluid volume outside of the cells and helps cells to function normally.
Potassium maintains fluid volume inside and outside of cells and prevents the excess rise of blood
pressure with increased sodium intake. Calcium helps to maintain and build strong bones and teeth.
Include three servings of calcium-rich foods per day including milk, low-fat cheese and yogurt.
Water
Water helps to maintain homeostasis in the body and transports nutrients to cells.
All beverages and high-moisture foods such as soup and watermelon contain water and count
towards your daily water requirement. Adults should consume 25 to 35 milliliters of fluids per kilogram
body weight or 2 to 3 liters per day.
VITAMIN DEFICIENCY
Vitamin A are essential for eye health, immunity and cell growth. Vitamin A deficiency is the leading
cause of preventable blindness, disease and death from severe infections in children and cause night
blindness and increases risk of death in pregnant women.
12
Thiamine (vitamin B1) deficiency is associated with beriberi.
⇒ Beriberi in infants can present as cardiomegaly, tachycardia, a loud piercing, cyanosis, dyspnea, and
vomiting, all culminating in fulminant cardiac syndrome.
Riboflavin (vitamin B2) deficiency presents with relatively non-specific signs, such as sore throat,
hyperemia and edema of mucous membrane, stomatitis, glossitis and seborrheic dermatitis.
Pyridoxine (vitamin B6) deficiency is not commonly encountered as an isolated nutritional deficiency.
If encountered, it is often associated with isoniazid treatment or in infants older than six months who are
exclusively breast-fed.
Deficiencies of cobalamin (vitamin B12) in infants, cobalamin deficiency is usually due to cobalamin
deficiencies of breast-feeding mothers who follow strict vegan or moderate vegetarian diets. Infants
often present with growth, movement, developmental, and hematologic problems, but if identified and
treated early with supplementation, children can avoid long term consequences of this nutritional
deficiency.
VITAMIN C DEFICIENCY
Deficiency are quite low, but when patients’ diets are deficient in this vitamin, they present with
symptoms such as:
bleeding gums,
ecchymoses,
petechiae,
hyperkeratosis,
13
impaired wound healing
It is needed for the health and repair of various tissues in your body, including skin, bone, teeth and
cartilage. Persistent lack of vitamin C in your diet can lead to a condition called scurvy.
VITAMIN E DEFICIENCY
It is essential to the central nervous system. It is among the body's main antioxidants
ZINC DEFICIENCY
Zinc deficiency can cause growth failure and impaired immune system functioning.
Health - is “a state of complete physical, mental, and social well-being and not merely the absence of
disease and infirmity”
A more recent definition states that health is the dynamic, ever-changing process of achieving potential
in the physical, social, emotional, mental, spiritual, and environmental dimensions.
14
Wellness - It is defined as “the achievement of the highest level of health possible in each of several
dimensions.
A. Physical Growth
A study published in the "New England Journal of Medicine" by doctors H. Peter Chase and Harold P.
Martin measured children who were hospitalized for undernutrition during their first year of life. The
doctors found that these children were consistently smaller than children who had not experienced
undernutrition, even three and four years later. At the other end of the spectrum, the Academy of
Nutrition and Dietetics suggests that poor nutrition in the form of overfeeding can contribute to weight
issues later in a child's life.
A 2010 study from "The Journal of Nutrition" found that undernourished 2-year-olds were 16 percent
more likely to fail at least one grade in school and entered school later than their well-nourished
counterparts. The scientists behind the study determined that this could decrease the child's lifetime
income by about 10 percent. The United Nations Standing Committee on Nutrition says that even in
mild or moderate situations, stunted growth resulting from poor nutrition is correlated with poor
academic performance and lowered mental capacity.
15
Poor nutrition can pave the road to emotional or psychological development issues. Dr. Lawrence
Wilson from the Center for Development has studied psychiatric issues in relationship to hair sample
mineral analysis in children. Some minerals, such as calcium, have proved to be extremely important for
emotional development. Wilson's research has shown developmental emotional issues related to
autism, hyperactivity, depression, bipolar disorder, schizophrenia and anxiety are associated with some
nutritional imbalances.
D. Behavioral Development
Dr. David E. Barrett, a Harvard Medical School psychologist, and Dr. Marian Radke-Yarrow, a National
Institutes of Health child development psychologist, performed research focused on behavioral issues in
6- to 8-year-old children. Their research showed that social behaviors were even more susceptible to
the negative effects of poor nutrition than learning functions were. The children in the study who had
poor nutrition during the critical two-year period after birth appeared withdrawn, less active and were
less helpful than their well-nourished counterparts.
16
Multivitamins I NUTRI10 SYRUP & DROPS
A child's most formative years are their youngest, from birth to age 5.
About 90 percent of a child's brain develops in that time, according to studies. And 85 percent of a
child's intellect, personality and social skills are developed by that age.
The period of childhood between ages 6 and 13 years is characterized by continued physical growth
and rapid cognitive, emotional, and social development.
Due to increased growth and metabolism, the nutritional requirements of children are higher in
proportion to body weight compared with adults.
Good nutrition throughout childhood is important not only to support normal growth and cognitive
development but also to establish healthy eating patterns.
Children should get their vitamins from a balanced, healthy diet that includes:
Milk and dairy products like cheese and yogurt (preferably low-fat products for kids over age 3).
INDICATION:
Picky Eaters
Kids who aren't eating regular, well-balanced meals made from fresh, whole foods
17
Kids with chronic medical conditions such as asthma or digestive problems.
Kids who drink a lot of carbonated sodas, which can leach vitamins and minerals
from their bodies.
Home-cooked meals are not always possible. That's why pediatricians may recommend a daily
multivitamin or mineral supplement.

Lysine
Evidence has shown that taking lysine with other vitamins helps to boost appetite in most children.
An essential component of a large number (>300) of enzymes participating in the synthesis and
degradation of carbohydrates, lipids, proteins, and nucleic acids as well as in the metabolism of
other micronutrients.
Stabilizes the molecular structure of cellular components and membranes and in this way
contributes to the maintenance of cell and organ integrity.
Has an essential role in polynucleotide transcription and thus in the process of genetic expression.
Its involvement in such fundamental activities probably accounts for the essentiality of zinc for all
life forms.
Zinc plays a central role in the immune system, affecting a number of aspects of cellular and
humoral immunity.
Is a vitamin that is needed by the retina of the eye in the form of a specific metabolite, the
light-absorbing molecule retinal that is absolutely necessary for both low-light (scotopic vision) and
color vision.
24
A heat-labile and water-soluble essential vitamin, belonging to the vitamin B family, with
antioxidant, erythropoietic, mood modulating, and glucose-regulating activities.
Vitamin B2 (Riboflavin)
It plays a key role in energy metabolism, and for the metabolism of fats, ketone bodies,
carbohydrates, and proteins.
Vitamin B3 (Niacinamide)
One of the eight B complex vitamins that help the body convert food in to energy.
It is essential for normal brain development and function, and helps the body make the hormones
serotonin and norepinephrine (which influence mood) and melatonin (which helps regulate the
body clock).
Along with vitamins B12 and B9 (folic acid), B6 helps control levels of homocysteine in the blood.
Homocysteine is an amino acid that may be associated with heart disease. B6 is also necessary for
proper absorption of vitamin B12 and for the production of red blood cells and cells of the immune
system.
Is a water soluble vitamin with a key role in the normal functioning of the brain and nervous
system, and for the formation of blood.
25
It is normally involved in the metabolism of every cell of the human body, especially affecting
DNA synthesis and regulation, but also fatty acid synthesis and energy production.
As the largest and most structurally complicated vitamin, it can be produced industrially only
through bacterial fermentation-synthesis.
Required for the growth and repair of tissues in all parts of the body.
Necessary to form collagen, an important protein used to make skin, scar tissue, tendons,
ligaments, and blood vessels.
Essential for healing of wounds and for the repair and maintenance of cartilage, bones and teeth.
Vitamin D3 (Cholecalciferol)
One of the most important roles of vitamin D is to maintain skeletal calcium balance by
promoting calcium absorption in the intestines, promoting bone resorption by increasing
osteoclast number, maintaining calcium and phosphate levels for bone formation, and allowing
proper functioning of parathyroid hormone to maintain serum calcium levels.
Protects red blood cells and may play a role in immune function, DNA repair and other metabolic
functions.

61
Functions of Skeletal Muscle
Synergists – any movement is generally accomplished by more than one muscle. All of the
muscles responsible for the movement are synergists.
The one that is most responsible for the movement is the Prime Mover (agonist).
– example the biceps flex your arm and its partner the triceps extend your arm. The two
muscles are antagonists, i.e. cause opposite actions.
We are able to maintain our body position because of tonic contractions in our skeletal muscles.
These contractions don’t produce movement yet hold our muscles in position.
3. Heat production – contraction of muscles produces most of the heat required to maintain body
temperature.
Most muscles attach to 2 bones that have a moveable joint between them.
The attachment to the bone that does not move is the origin.
62
Tendons anchor muscle firmly to bones. Tendons are made of dense fibrous
connective tissue.
2. Bursae – small fluid filled sacs that lie between some tendons and the bones beneath them. They
are made of connective tissue and are lined with synovial membrane that secretes synovial fluid.
Electrochemical impulses travel from the frontal lobes of the cerebrum via motor nerves to the
muscle fibers and cause them to contract.
Sensation is a function of the brain – impulses are integrated in the parietal lobes of the
cerebrum (conscious muscle sense) and in the cerebellum (unconscious). These activities promote
coordination.
4. Microscopic anatomy
Muscle cells (fibers) are grouped in a highly organized way in the muscle. The membrane that
surrounds the muscle cell is called the sarcolemma.
Muscle cells are filled with 2 types of fine threadlike proteins called myofilaments: myosin (thick)
and actin (thin). These structures slide past each other causing the muscle cell to contract or shorten.
The myofilaments are arranged in the cells in small units called sarcomeres.
5. Neuromuscular junction
Spot where the axon of a motor nerve nears the muscle fiber.
The axon terminal does not touch the muscle but comes close. The space between the axon and the
muscle cell is called the synapse.
Within the terminal end of the axon are small sacs filled with a neurotransmitter called acetylcholine.
63
Muscle Contraction
SEQUENCE
Electrical impulse travels down a motor neuron. When it reaches the end, acetylcholine (chemical) is
released into the synapse.
Acetylcholine bind to special receptors on the muscle cell and causes an electrical impulse to spread
over the cell.
Movement of Muscles
⇒ Origin: the attachment of the muscle to the bone that remains stationary
⇒ Belly: the fleshy part of the muscle between the tendons of origin and/or insertion
These muscles move when the brain sends messages to the muscle
Contraction (shorten)
Extension (lengthen)
64
Practice these Movements

65
The Nervous System
Neurons within our nervous system must take in sensory information from the outside world and then
decide what to do with the information.
The Nervous System is the body’s main processing system for information.
This consists of structures and organs that facilitate electrical and chemical communication in the
body.
66
Central Nervous System (CNS)
The brain
The main function of the PNS is to connect the CNS to the limbs and organs
Consist mainly of nerves that extend from the brain and spinal cord to areas in the rest of the body.
I. BRAIN

69
Is concerned especially with preparing the body to react to situations of stress or emergency.
Two parts that have opposite effects on the organs they control:
Parasympathetic (“brake”)
How much do you know about YOUR brain and the spinal cord?
Spinal Cord
The spinal cord transmits signals from the sensory organs, muscles and glands to the brain.
70
The spinal cord is like a communication superhighway between the brain and the rest of the body.
Communicates with the body below the head through sensory and motor neurons
Carry information about touch, pain, and other senses from the periphery of the body to the
spinal cord
Transmit impulses from the central nervous system to the muscles and glands

• Skeletal (muscles that move voluntarily)
• Create heat (the calories burned for energy tend to have an output of 75% heat, therefore on a cold
day running is an effective way to warm up).
• Regulate organs
• Move substances around the body (blood from the heart and food through the digestive system.
SPASTICITY
Spasticity was described in 1980 as a motor disorder with increased muscle tone and involuntary jerking
of tendons (the flexible cords that connect joints).
Nine years later, Robert R. Young, MD introduced the term ‘‘spastic paresis, which includes weakness,
loss of dexterity, and trouble controlling muscles.
Spasticity is a common phenomenon seen in neurologic disorders that result in loss of mobility and may
produce pain due to muscle spasms. It is a state of sustained increase in tone of a muscle when it is
passively lengthened.
73
In simple terms of clinical neurology, spasticity is defined as increased resistance to passive movement
due to a lowered threshold of tonic and phasic stretch reflexes.
Spasticity
It is a disorder of the body's motor system in which certain muscles are continuously contracted. This
contraction causes stiffness or tightness of the muscles. It may interfere with gait, movement, and
speech.
In MS, ‘spasticity’ ( muscle spasm & stiffness) is thought to be due to nerve conduction being affected
by lesions located in the brain or spinal cord.
This means that the upper motor neurones struggle to regulate messages to the lower motor neurones.
The lower motor neurones can then become overactive and hypersensitive, causing stiffness or spasms
in the muscles.
Spasticity occurs as a result of an imbalance between the excitatory and inhibitory signals from the brain
and/or spinal cord.
Why worry ?
Pain ranges from mild to severe and from acute and short-lived to chronic and of long duration and
may be local or widespread.

A heat-labile and water-soluble essential vitamin, belonging to the vitamin B family, with
antioxidant, erythropoietic, mood modulating, and glucose-regulating activities.
Plays a key role in intracellular glucose metabolism and may inhibit the action of glucose and
insulin on arterial smooth muscle cell proliferation.
May also protect against lead toxicity by inhibiting lead-induced lipid peroxidation.
Vitamin B6
Helps the body make several neurotransmitters, chemicals that carry signals from one nerve cell
to another. It is essential for normal brain development and function, and helps the body make the
hormones serotonin and norepinephrine (which influence mood) and melatonin (which helps
regulate the body clock).
B6 is also necessary for proper absorption of vitamin B12 and for the production of red blood
cells and cells of the immune system.
87
Vitamin B12
Is a water soluble vitamin with a key role in the normal functioning of the brain and nervous
system, and for the formation of blood.
It is normally involved in the metabolism of every cell of the human body, especially affecting
DNA synthesis and regulation, but also fatty acid synthesis and energy production.
As the largest and most structurally complicated vitamin, it can be produced industrially only
through bacterial fermentation-synthesis.
Pharmacokinetics
After oral administration, cyanocobalamin absorbed from the gastrointestinal tract. Metabolized in
the tissues, becoming a co-enzyme form - adenosylcobalamin which is the active form of
cyanocobalamin. Excreted in bile and urine.
INDICATION
Neuropathy - Peripheral neuropathy, a result of damage to your peripheral nerves, often causes
weakness, numbness and pain, usually in your hands and feet. It can also affect other areas of your
body.
Neuralgia - is a stabbing, burning, and often severe pain due to an irritated or damaged nerve.
88
Neuritis - is inflammation of a nerve or the general inflammation of the peripheral nervous system.
Symptoms depend on the nerves involved but may include pain, paresthesia (pins-and-needles),
paresis (weakness), hypoesthesia (numbness), anesthesia, paralysis, wasting, and disappearance of
the reflexes.
Indication – Vitamin B1
In treatment of mild thiamine deficiency , dosage of 30mg daily in single or divided dosage have
been recommended.
Indication – Vitamin B6
Higher doses of up to 400mg daily have been used in the treatment of anemia, metabolic
disorders, and seizures.
89
Prophylaxis : 1-2 capsules daily
Chronic cases: a longer therapy may be required and dosage may be adjusted upon
the physician’s recommendation.
Precaution
Administration of doses greater than 10mcg of Vitamin B12 daily may produce a hematological
response in patients with folate deficiency.
Side Effects
Vitamins contained in Cramin Forte are completely non-toxic even in high doses and usually,
no side effects occur.
It must be stressed that hypersensitivity to Vitamin B1, is very rare when orally given unlike if
administered by intravenous injections where hypersensitivity is more often encountered.

Weak Teeth
⇒ Calcium plays an important role in building stronger, denser bones early in life and
keeping bones strong and healthy later in life.
93
⇒ Approximately 99 percent of the body's calcium is stored in the bones and teeth. The
rest of the calcium in the body has other important uses, such as some exocytosis,
especially neurotransmitter release, and muscle contraction.
CALCIUM
⇒ Long-term calcium deficiency can lead to rickets and poor blood clotting and in case of a
menopausal woman, it can lead to osteoporosis, in which the bone deteriorates and there is
an increased risk of fractures.
⇒ Lifelong deficit can affect bone and tooth formation, over-retention can cause hypercalcemia
(elevated levels of calcium in the blood), impaired kidney function and decreased absorption
of other minerals.
⇒ High calcium intakes or high calcium absorption were previously thought to contribute to
the development of kidney stones.
94
BIOLOGICAL FUNCTIONS OF CALCIUM
• Blood coagulation
• Secretory processes
• Membrane integrity
• Enzyme reactions
CALCIUM OCCURENCE
• Occurs most commonly in sedimentary rocks in the minerals calcite, dolomite and
gypsum. It also occurs in igneous and metamorphic rocks chiefly in the silicate minerals:
plagioclase, amphiboles, pyroxenes and garnets.

Ampalaya
Banaba
control at blood sugar level
Camote

Composition :
The Centers for Disease Control and Prevention (CDC) recommends that all women of
childbearing age — and especially those who are planning a pregnancy — consume about 400
micrograms (0.4 milligrams) of folic acid every day. Adequate folic acid intake is very important
115
before conception and at least 3 months afterward to potentially reduce the risk of having a fetus
with a neural tube defect.
Folic Acid
That's why it's so important for all women of childbearing age to get enough folic acid — not
just those who are planning to become pregnant. Only 50% of pregnancies are planned, so any
woman who could become pregnant should make sure she's getting enough folic acid.
For a woman to have a healthy baby means making sure she’s healthy, too. One of the most
important things a woman can do to help prevent serious birth defects in their baby is to get
enough Folic acid every day + Iron + Zinc + Vitamins— even before, during conception and
after pregnancy.

Iron (II) fumarate, also known as ferrous fumarate, is the iron (II) salt of fumaric acid, occuring as a
reddish-orange powder, used to supplement iron intake, occurring as a reddish-orange powder,
used to supplement iron intake. Pure ferrous fumarate has an iron content of 32.87%, therefore
one tablet of 300 mg iron fumarate will contain 98.6 mg of iron (548% Daily Value based on 18 mg
RDI).
Ferrous fumarate is a type of iron. You normally get iron from the foods you eat. In your body, iron
becomes part of your hemoglobin and myoglobin. Hemoglobin carries oxygen through your blood
to tissues and organs. Myoglobin helps your muscle cells store oxygen.
Ferrous fumarate is used to treat iron deficiency anemia (a lack of red blood cells caused by having
too little iron in the body).
Iron deficiency is the world’s leading nutritional disorder and cause of anaemia.
As many as 4-5 billion people, or 66-80% of the world’s population, may be iron deficient, while 2
billion- over 30% of the world’s population- are anaemic, mainly due to iron deficiency.
Zinc is a naturally occurring essential mineral that is present in some foods and is also widely
available as a nutritional supplement, either by itself or combined with other vitamins and minerals.
Zinc serves many important roles in both men and women, including immune function, protein
synthesis, wound healing, DNA synthesis, and cell division.
117
According to the Linus Pauling Institute at Oregon State University, an estimated 82 percent of
pregnant women worldwide are likely to suffer from a zinc deficiency. This may be because more
zinc is required during pregnancy to ensure the natural health and development of the fetus.
Zinc deficiencies in pregnant women may play a role in a number of adverse outcomes of
pregnancy, including low birth weight, premature birth, delivery complications, and congenital
abnormalities.
Adequate zinc intake in women during pregnancy may reduce the risk of these complications.

There is nothing that training cannot do.
Nothing is above its reach or below it. It
can turn bad morals to good, good
morals to bad; it can destroy principles,
it can recreate them; it can debase angels
to men and lift men to angels.
