Running Head: REFLECTION
This Spring Semester 2019, I took Health Nutritional Perspectives 1020 at Salt Lake
Community College. This name for the course does it justice because that’s exactly what it did
for me, broadened my perspectives on nutrition and health in both great and small ways.
First off, something new that I learned about was the MyPlate online resource available
to anyone to be able calculate food and calories. I had never heard about that before, since that
was a new switch over to that from the food pyramid after I had taken health in high school and
so it was really good to learn that now and discover the new resource that it is for tracking your
Secondly, I learned more in depth about eating disorders. I’ve known people close to me
that have both now and in the past certain eating disorders that were talked about in the textbook
and it was great to go over that again. I remember learning about eating disorders in Jr. High and
High School, and it’s something that you can continuously learn more about and gain new
perspectives and insights, especially when it comes to how to help people that are struggling. I
loved the early intervention idea that the textbook gave, because it gave me a lot of new ideas for
how to help the people that I know who can use some help.
Thirdly I learned more about the nutritional content of food. Before this course, I knew
what food was healthy and which foods weren’t, but took that knowledge only at a surface level
that fruits, vegetables, leafy greens, meats, etc. are all good for me and that they also taste good.
But what I didn’t know was why or how exactly healthy foods are considered to be “healthy”
and what kind of nutritional content they held and what they do for us in regard to processing
food, breaking down and synthesizing it into energy for the body, brain and bones. Each chapter
went into great length and detail to explain and expand on this question that I had at the
beginning of the course. It’s a very useful and valuable skillset of knowledge to have now, and

I’m noticing that I view both food itself very differently now. Even my food choices and the
amounts that I eat are all impacted and affected daily, even mealy by this new heightened
perspective and knowledge I’ve gained about the nutritional content of the food that I eat.
Some of the work that I completed during this course included book work which
consisted of reading along with the highlighted portions of the textbook online, and then
answering questions that pertained to what I was reading about at each section. This helped
expand my study skills and improved my ability to retain information that I read, not just for this
class, but also for other classes as well this semester. It also taught me new study techniques that
I hadn’t tried before such as studying along with the questions of the quiz after failing my first
attempt in my History class, so that I could learn and understand the facts I missed. It’s
something that I wouldn’t have tried if I hadn’t have had this class or the online textbook
I also completed the $10 food challenge which opened up so much for me. Through that
challenge, which was to go to the grocery store and buy as much nutritionally dense food that I
could, such as fruits and vegetables, for just under $10, and then report back on my findings.
This assignment taught me for really the first time that it honestly can be not only healthier, but
cheaper to buy healthy! I’ve come to learn that eating healthy foods is the smartest and healthiest
option, which life choice I’ve made now will impact me in the future as well as my future family.
Now I have all the tools at my disposal to be able to make smart food choices, the will
power to resist foods high in fat, saturated fat, trans fat and sugars or fried foods, and the desire
to share this course, the things I’ve learned, and the perspectives I now have on nutrition and the
power of eating healthy. I have felt so good this semester from eating healthy consistently and
