RESUMEN
ABSTRACT
An ultraviolet and visible spectrophotometry analysis (UV-Vis) was carried out to determine the quantitative
determination of proteins by means of the Biuret method in a sample of commercial wheat flour. A solution of
Albumin whose concentration was 5 mg / was used as standard. mL, and analyzed in the range of 500-600 nm,
the experimental conditions were 0.996 atm and between 18-22 ° C, in the same way, the results of the
concentration of the proteins present in the sample, were of [write concentration], so it is concluded that wheat
flour is a good source of protein, which therefore provides good nutrition indices.
