    Tortillas with caucara

    This is a very traditional dish of the inhabitants of Machachi this flat is very delicious consisting of
    fried egg, potato tortillas, beet salad, chopped lettuce and “caucara”.La Criollo cauca. It is a dish
    based on beef, animal brought by the Spanish, combined with local spices and garnishes such as
    achiote and potatoes.

    Its name comes from the Kichwa "Cau", about to mature, and "cara", leather or skin.
    This dish is accompanied with'chicha '. It is produced throughout Ecuador and the ingredients may
    vary depending on the region where it is prepared. As for example panela, this product can be
    golden or black in different parts of the country and you can even use sugar as an option instead of
    panela. All these variations of sweeteners will make the tonality of the chicha change.
