DEVELOPMENT OF CURD (DAHI) WITH VITAMIN- D3

BY USING VITAMIN-D POWDER.

ABSTRACT
A study was conducted to develop protein and vitamin-d3 curd
(dahi) by using vitamin-d powder. The dahi was evaluated for qualitative characteristics and
acceptability. Initial trials were conducted to adjudge the most acceptable dahi with vitamin
Dahi. The best rated dahi products were inoculated with probiotic culture Lactobacillus
acidophilus. It was found that dahi products filled in pouches were safe up to 7 days.
