EMULSION BREAKING METHODS
Emulsion breaking requires counteracting the stabilizing
effects of emulsifiers at the interface.
Methods include:
• Decomposing the emulsifiers
• Chemically reacting the emulsifiers
• Increase the solubility of emulsifiers in either bulk phase
• Disrupt the orientated structure of the emulsifiers at the
interface
