ABSTRAK

Menurut SNI, Susu Kental Manis adalah Susu segar yang kadar airnya dikurangi
menggunakan pemanasan sekurang kurangnya 1000C. yang ditambah gula sukrosa
atau campuran gula sukrosa dan desktrosa kemudian diuapkan sebagian airnya
sehingga kental. Sampel yang digunakan dalam pengujian adalah Susu kental manis
kemasan sebanyak tiga sachet. Penetapan kadar protein dilakukan menurut metode
Kjeldahl sesuai dengan prosedur Standard Nasional Indonesia (SNI) dan peralatan
kerja untuk metode Kjeldahl yang digunakan di laboratorium Makanan Minuman
Hasil Pertanian Balai Riset dan Standardisasi (Baristand) Industri Medan. Hasil
penelitian menunjukkan bahwa Susu Kental Manis A yang diperiksa mengandung
kadar protein2,78 %, Susu Kental Manis B 1,70 % dan Susu Kental Manis C 3,57
%. Hasil ini tidak mencapai batas minimum kadar protein yang tertera di SNI 01 –
2971 – 1998, yakni minimal 6,5 %. Kadar protein susu kental manis sangat
ditentukan oleh kualitas bahan dasarnya, yaitu susu. Semakin tinggi kadar protein,
semakin baik kualitas susu yang dihasilkannya

ABSTRACT

By SNI, sweetened condensed milk is fresh milk that the water contest is resduced
using a warming of at least 100oC. Added sugar sucrose or sucrose sugar mixture
and desktroksa the evaporated some of the water so thick. The sample used in the
test is sweetened condensed milk packaging as much as three sachets. Protein assay
was perfomed according to the method in accordance with the procedure kjedahl
Indonesian National Standard (SNI) and tools for kjedahl method used in Food and
Beverage Laboratories Agricultural research centers and standardization
(Baristand) Industrial Field. The result showed that the sweetened condensed milk
containing A examined protein content of 2,78%. Sweetened condensed milk B
1,70% and sweetened condensed milk C 3,57%. This result did not reach the
minimum threshold levels of protein contained in the SNI 01 – 2971 – 1998, ie at
least 6,5%. Sweetened condensed milk protein content is determined by the quality
of higher protein content, the better the quality of the milk produced
