AeroWhipTM Whip-Optimized Solutions


Use in Soy-Based Whipped Topping

Consumers today are looking for healthy alternatives for their foods. Soy protein, for example, has an
increasing demand in the consumer market due to its healthful properties. However, soy can be difficult to
formulate. This is true of whipped toppings containing soy protein. These soy-based formulas often lack
whipability and the finished product is subject to instability. When AeroWhip whip-optimized solutions
are used in combination with soy protein and other ingredients, a whipped topping with the following bene-
fits may be produced:
• Excellent peak formation
• Good appearance and gloss
• Greater than 200% overrun

Procedure:
AeroWhipTM/ Protein Solution
1. Add AeroWhip to 60°C water. Stir with good agitation for 30 minutes. AeroWhip will go into
solution as the water cools. Alternatively, heat 1⁄ 3 of the water to 60°C and disperse the AeroWhip.
Add the hot dispersion to cool water with agitation, allowing it to stir for 30 minutes.
2. Add soy protein to AeroWhip solution. Agitate an additional 30 minutes to solubilize the protein.

3. Weigh all fats and emulsifiers into a small heavy pot.
4. Melt over low heat.

Whole Mix
5. Slowly blend warm fat mixture into AeroWhip solution using an overhead stirrer.
6. Dry blend the sugar and salt. If adding flavor, dry blend with sugar/salt mixture. Add to the
AeroWhip solution with continued stirring.
7. Homogenize with a silverson or similar equipment (use small hole mixing head) for 10 minutes.
8. Refrigerate overnight to allow fats to solidify.

9. Pour mixture into chilled stainless steel mixing bowl and use chilled stainless steel wire whisk on
Kitchen Aid or similar mixer.
10. Whip at highest speed for 2 minutes.
11. Refrigerate topping.
