ENSALADANG TALONG

Ensaladang Talong is commonly served as a side dish, its


combination of ingredients provides a stark contrast to the dish
that it partners and also, if it was partnered with anything fried,
will provide a counter to the oil of the main dish.

Ingredients

 3 eggplant
 2 medium-sized tomatoes, chopped
 1 medium sized white onion, chopped
 2 tablespoons shrimp paste (bagoong)
 1 medium sized red chilli, sliced
 ¾ cup white vinegar
 freshly ground black pepper

Instructions
1. Slice the eggplants in half crosswise then grill until cooked.
Cool down then using a spoon scrape off the flesh from
the skin. Roughly chop then set aside.
2. In a mixing bowl mix everything together.
3. Place on a small serving plate then serve.

berries from the vine Piper nigrum. it is High in antioxidants and has
anti-inflammatory properties,

Kilawen na bangus

Kilawen na Bangus (Milk fish ceviche) “Ceviche” is a Latin


American word for raw fish cured in lemon or lime. The recipe
is very similar to what we would call in the Philippines “Kilaw”
or “Kilawin”. However, the use of vinegar is more common and
the traditional citrus fruit, “kalamansi”/Philippine lemon is
added to flavor the fish.

Ingredients:

 3/4 kilo deboned bangus, chopped into squares


 1 cup coconut vinegar, plus additional for pouring
 4-5 cloves garlic, very, very finely chopped
 1 tsp finely chopped ginger
 1 medium onion, very, very finely chopped
 1 medium onion, sliced into rings and soaked in ice water
for 20 minutes
 3-4 calamansi
 Pinch of sugar
 Green Chili

Instructions:

1. Marinate bangus in coconut vinegar for 15 minutes. This will


further remove smaller bones from the bangus that may have
been left behind after initial deboning.
2. Strain the bangus and press with fork until fish is dry. Arrange
fish on a plate and mix in garlic, ginger and the finely chopped
onion. Squeeze calamansi on top of bangus and let stand for
five minutes.
3. Pour additional coconut vinegar if desired. Add sugar and
siling labuyo. Sprinkle with black pepper. Top with sliced onion
rings. Enjoy!

Milkfish, is a silver-colored Pacific salt-water fish that lays
