INTRODUCTION

Brief Introduction

Dough moulder SM-500 is produced to get rid of CO2 from the dough, and
press, roll the dough into coil shape for Toast, Baguette and Hot Dog etc.

With the two pressure rollers, the machine can get rid of CO2 easily and the
dough can also have a beautiful appearance after moulding. The space
between two rollers can be shown in scale clearly. The scrapers can be
taken down easily for cleaning.

Owners and operators should carefully read and familiarize themselves


with this entire manual before attempting to operate or service this machine.
Complying with this manual will ensure years of safe and trouble-free
operation.

All of the information, illustration and specification contained in this manual


are based on the latest product information available at the time of printing.

INSTALLATION AND COMMISSIONING

Installation
After uncrating the machine, inspect it carefully whether there is any
damage that might have occurred during shipment. Report any damage to
the forwarding company before proceeding to operate the machine. The
damage can then be assessed to determine liability. Non-obvious damage
can be claimed within seven days, including the day of arrival. We do not
grant the right of replacement for damages claimed after this period.

The dough moulder is ready for installation, and it should be installed in a


dry and ventilated place. Then select a horizontal and plain floor to locate
the machine. After locating the machine, lock the four castors to fix the
machine steadily.

Electric Connection
Before making any electric connection, be sure that your electric mains is
compatible with the electric specifications of your Dough Moulder. This data
is shown on the machine nameplate.
Connect the electric cables to the machine with a circuit breaker which is
about 1.5m high over ground. The machine should be in ground protection.

Commissioning

Before starting the machine, ensure that there is no foreign object lying on
or inside the machine.

Switch on the machine and make sure the belt is running centrally. If not,
Adjust by turning the belt tensioners until the belts runs centrally. Refer to
the following picture 1 and 2. Turn the top roller to adapt the tension degree
of the top belt, turn the bottom nut to adapt the tension degree of the bottom
belt, turn the front bolt to adapt the tension degree of the front belt.

The machine should now be switched on and a sample piece of dough put

through. The top roller adjuster and top belt adjuster should be moved until
the dough sample comes out with a desired shape. Then production can
commence.

Operation

Check that the machine direction of rotation is correct, by making sure that
the feed belt situated in the front of the roller moves in such a way as to
bring the pieces towards the machine. If not, reverse any two phases of the
three cables. The operation system of the machine is illustrated in the
following pictures.

OPERATION

The distance between the pressure rollers and between the belts can be
adjusted by means of the handles situated at the right side of the machine
body. The upper handle regulates the rollers while the below one regulates
the belts (See Picture 6).

This feature means that pieces of 50~500g can be accurately proceeded.


At the parity of weight it is possible to obtain more or less twisted shapes,
as demonstrated by the following pictures.

Furthermore, it is very important that rolling out thickness (distance


between rollers) and the number of twist required for the pieces are kept
proportional. If not, there is a risk of problem, which could result in
production rejects.

Picture 9 and 10 illustrate two irregular conditions, while picture 11


illustrates the correct roller and belt position.

OPERATION

The machine is also complete with a device which permits the formed piece
to fall on the front board or the operator’s side. Therefore rapid sequence
double operation is possible. See the following pictures.

See Picture 14, by introducing the piece into the forming machine for the
second time, it is possible to obtain different forms.

CLEANING AND MAINTENANCE

Cleaning

The machine must be cleaned on a daily basis to ensure optimum


performance.

With the machine switched off, use a dry brush to dust and clean the belt,
the rollers and the motor. A plastic scraper may be used on the catch tray to
scrape off any dough sticking to it.

CAUTION: The belt can’t be washed by water.

Maintenance

After the initial 2 months of operation, the side covers of the machine
should be removed and the gears and chain inspected. The chain should
be oiled using a good quality oil. And the chain transmission should be oiled
once every 3 months basis thereafter.

Clean all cables, wires, motors and electrical components with a soft brush
or by means of a vacuum cleaner, once every 3 months.

Ensure that all connection are very tight.

Attention: Before any job is commenced, ensure that the machine is


disconnected from the mains.

Machine Warranty

We promise to offer our clients the best quality of products and service, our
guaranty period is one year dated from the delivery date.

The following terms are not included:

1. Abnormal operation or adjustment.

2. Sundries or corrosive liquid or wasted oil enter into the machine to make
short circuit and burnt out of internal components.

3. Damage caused by hard matter impact.

4. Disasters caused by nature reasons.
