INTRODUCTION
INTRODUCTION

This organizational study was done in Geo Food Products, Muvattupuzha. The
objective of the study was to understand about an organization. And this will be a learning
experience for future. Organization Study is the systematic study and careful application
of knowledge about how people as individuals and as groups-act within Organization. An
Organizational Study encompasses the study of organizations from multiple viewpoints
method, and level of analysis.

The main objective of the study is to understand the working of various department
functions during a particular period and the concept of organization. It also enables us to
explore issues and problems in an organization, give suggestions to sort these issues that
would help the future managers to face the challenges ahead. It provides the students the
opportunity to know, observe, learn, collect and analyze the nature and mission. An
organizational study includes the structure and functioning of every organization. The
structure is very important for its proper functioning and growth. Organization as a
structure refers to the network of relationships among individuals and position in an
organization. Organization structure is the structured frame work within which the efforts
of different people are coordinated related to each others.

The study mainly aims to get a general awareness of the functioning and management
of the Foster foods. This study helps to understand the structure, function and process of various
departments and their interdependence. This study may help to identify the strength, weakness,
opportunity, and threats of the organization and also useful to understand the organizational
behaviour.

1.3 SCOPE OF THE STUDY

The organizational study at GEO FOOD PRODUCTS aims at to get an experience


of future performance. The study will be conducted to understand the structure, functioning
and process of various departments and their interdependence.

INDUSTRY PROFILE

Food processing industry has a wide scope all over the world. The food processing
industry provides vital linkages and synergies between industry and agricultural. The food
processing industry sector in India is one of the largest in terms of production,
consumption, and export and growth prospectus. The government has accorded it a high
priority with a number of fiscal reliefs and incentives to encourage commercialization and
value addition to agricultural produce for minimizing pre/post harvest wastage, generating
employment and export growth. India’s food processing sector covers wide range of
products, fruit and vegetables, meat and poultry, milk and milk products, alcoholic
beverages, fisheries, plantation, grain processing and other consumer product groups like
confectionary, chocolates and cocoa products, soya based products, mineral water, high
protein foods and so on.

The Indian food processing industry is one of the largest in the world in terms of
production, consumption, export and growth prospects. Earlier food processing was largely
confined to the food preservation, packaging and transportation which mainly involved
salting, curdling, drying, pickling etc... However over the years with emerging new markets
and technologies the sector has widened its scope. It has started producing mainly new
items like ready - to - eat food, beverages, processed and frozen fruit and vegetable
products, marine and meat products etc... It also include establishment of post - harvest
infrastructure for processing of various food items like cold storage facilities, food parks,
packaging centers, value added centers, irradiation facilities and modernized abattoir.

India has a strong agricultural production base with diverse agro - climatic
conditions and arable land of 184 million hectares. It is one of the major food producers in
the world and has abundant availability of wide variety of crops, fruits, vegetables, flowers,
live - stock and seafood. India produces annually 90 million tones of milk (highest in the
world), 150 million tones of fruits and vegetables (second largest), 485 million livestock,
204 million tons of food grains (third largest), 6.3 million tons of fish (third largest), 489
million poultry and 45,200 million eggs. As a result, Indian food processing industry has
become an attractive destination for investors the world over.

The size of the semi - processed and ready to eat packaged food industry is over
Rs.4000 core (US$ 1 billion) and is growing at over 20%. Agricultural and agro products
remain the most important sector of the Indian economy. They contribute nearly one third
of the GDP and account for 64% of the workforce.

The food processing sector is highly fragmented industry. It widely comprises of


the following sub - segments: fruits and vegetables, milk and milk products, beer and
alcoholic beverages, meat and poultry, marine products, grain processing, packaged or
convenience food and packaged drinks. A huge number of entrepreneurs in this industry
are small in terms of their production and operations and are largely concentrated in the
unorganized segment. This segment accounts for more than 70% of the output in terms of
volume and 50% in terms of value. Though the organized sector seems comparatively
small, it is growing at a much faster pace.

In short, India has the following advantages in the food processing sector:

India is one of the largest food producers in the world.


India has diverse agro - climatic conditions and has a large and diverse raw material
base suitable for food processing companies.
India has huge scientific and research talent pool.
A largely untapped domestic market of 1000 million consumers.
300 million upper and middle class consume processed food.
Well developed infrastructure and distribution network.
Rapid urbanization, increased literacy, changing lifestyle, increased number of
women in workforce, rising per capita income leading to rapid growth and new
opportunities in food and beverages sector.

2.1 WORLD SCENARIO

.Mango covers an area of 4540 thousand ha with a production of 31.72 million tons in the
world during the year of 2013. India occupies top position among mango growing countries
of the world and produces 47.88% of the total world mango production. China and
Thailand stood at second and third position among mango producing countries in the world
with 4,3500 and 2,6100 thousand tons respectively. The other major mango producing
countries in the world during 2013 were Thailand (2610 thousand tons), Pakistan (1890
thousand tones), Mexico (1833 thousand tones) and Indonesia (1830 thousand tones)
respectively. The details are given below in the table.

2.2 INDIAN SCENARIO

Mango is grown almost in all the states of India. Andhra Pradesh tops the list of
mango producing states. Other major producing states are Uttar Pradesh, Maharashtra,
Karnataka, Bihar and Gujarat. Rest of the states has quite less production. The details are
given bellow in the table.

2.4 FOOD PROCESSING INDUSTRY IN KERALA

Kerala has a warm humid tropical climate with annual rainfall of above 3000mm
distribution over a long duration and the topography ranges from 0 to 2000 meters above
sea level. The state has the right climate and enjoys good rainfall throughout the year
making conditions conductive for the growth of numerous horticultural crops throughout
the year.

Large areas are also under fruit cultivation with banana, pineapple and mangoes.
Kerala also has large tracts under tapioca cultivation. All these produce are already being
converted into value - added food products by hundreds of units in the unorganized and a
handful in the organized sector.

The state government has already initiated steps to set up eight agric - export zones
in an area of around 4000 hectares. About 16,000 farmers would be covered under the
scheme. The areas delineated are Palakkad, Thrissur, Ernakulam, Idukki, Kottayam,
Alappuzha, Pathanamthitta, Kollam and Thiruvananthapuram. The zones are proposed to
be set up at a total cost of Rs.29.07 crore and once operational, could export as much as
60000 tones of fruits and vegetables a year - primarily bananas, pineapple and vegetables.
The state government is also developing a cold chain protocol for post harvest handling of
produce.

Mango (Mangiferaindica Linn) is the most important fruit of India and is known as
“King of fruits”. The fruit is cultivated in the largest area i.e. 2500 thousand ha and the
production is around 15.19 million tons, contributing 47.88% of the total world production
of mango. The main mango producing states in India are Uttar Pradesh (24.36%), Andhra
Pradesh (24.44%), Karnataka (9.97%), Bihar (7.57%), Gujarat (5.57%) and so on. Total
export of mangoes from India is 59.22 thousand tons, valuing Rs. 162.92 cores during
2012-13. India exports mango to over 40 countries worldwide. The major importing
countries of India’s Mangoes during the period of 2012-13 were UAE (61.79%),
Bangladesh (11.41%), UK (8.92%), Saudi Arabia(3.79%), Kuwait (2.32%), and Bahrain
(2.19%) respectively

2.5 GOOD AGRICULTURAL PRACTICES (GAP)

• Adoption of improved cultivars.

• Adoption of high density planting in cultivars

• Regulating flowering and increasing intensity of flowering.

• Pruning malformed mango shoots at bearing stage

• Alternate bearing needs to be managed by reducing fruiting during a year by adoption


of pruning and thinning practices.

• Providing life saving irrigation at the critical stage of fruit growth etc.

• Integrated nutrient and water management.

• Management of spongy tissue through sod mulching.

• Integrated pest and disease management practices and timely control of pests and
diseases, especially mango hopper, mango mealy bug and sprays of Bavistin at fruit
development stage especially after rains

2.6 DISTRIBUTION OF PRODUCE FROM PRIMARY TO TERMINAL MARKET

• Mangoes grown in different parts of the country are transported to the big cities for
marketing.

• The fruits produced in Andhra Pradesh and Tamil Nadu find markets in Nagpur, Bombay,
Calcutta.

• The important wholesale mango markets in India are Calcutta, Delhi, Bombay, Madras,
Ahmedabad, Pune and Nagpur.

• Mangoes for these big markets are usually collected at the central places in all the mango
growing areas, e.g., in Uttar Pradesh, Luck now and Varanasi; in Gujarat, Gandevi, Gadat
and Amalsartalukas; and in Maharashtra, Ratnagiri and Vengurla.

4.1 VARIOUS EXECUTIVES OF THE COMPANY

Sri Ram Das (Managing Director):

They provide training and guidance to employees while delegating


responsibilities to those employees. Managing directors are sometimes in charge of
hiring and creating work schedules. If work goals are not met, the director is
sometimes in charge of firing employees as well. Managing directors hold meetings
and give presentations in these meetings. They must also make sure there is
financial security in the company.

A financial manager is a person who takes care of all the important financial
functions of an organization. The person in charge should maintain a far sightedness

Geo Food Products have different departments. There are production, quality,
finance and marketing departments. Theses departments have different duties and
responsibilities are there. Duties and responsibilities are different from one department to
another. The main objective of the organization study is to understand the functions of
various departments of the organization.

there are four departments in Mexica are;

1) Production Department

2) Quality Control Department

3) Finance and Administration Department

4) Marketing Department

5.1 PRODUCTION DEPARTMENT

Production department is the largest and complex department in MEXICA. The


activities in this department are controlled by a production manager. The department
consists of engineers, supervisors, technical assistance, operators and other workers. Each
of the workers is working for different product. Ingredients are different from product to
product. Workers are concentrating on the assigned product.

The production department is expected to carry out production in required quantity


at minimum cost. The production department is to convert raw materials into finished
products. Functions of this department begin from bringing raw materials into the factory
and finished only when the good are properly packed and kept for dispatch.

5.2 PULP PRODUCTION

Mangoes of required category are brought to the plant on bulk amount from
different states, quality assured and stored in sheds. The mangoes are buried inside hat to
speed up ripening. After mangoes have achieved enough ripening they are categorized into
three classes. The first group consists of very high quality mangoes, which are stored in
yellow code crate. The second class consists of mangoes which have some defects and is
stored in black code crate. The third class consists of substandard mangoes that should be
discarded and is stored in red code crate. The raw mangoes are stored as a new group for
ripe.

The mangoes in the first and second group are brought to the processing plant when
they undergo a series of operations. In the first stage the mangoes are sorted manually in

to these three groups. The three operations performed after this manual sorting are
extraction concentration and filing.

First they are washed in chlorine water and then they are fed to the conveyer belt
in fixed ratios. The conveyer system is so arranged that during its path mangoes are
thoroughly cleaned. These mangoes are checked manually during its course for quality
once again and hence the mangoes pass through screening once again. These mangoes falls
into a pool of circulated fresh water, where water is forced with high pressure through
number of jests. Here the mangoes are again thoroughly cleaned so that the chlorine debris
and other impurities will be completely removed. From there mangoes are fed to the
conveyer in a fixed ratio so as to prevent over feeding and thus chocking. These cleaned
mangoes are passed to the destoner apparatus through an elevator.

The mangoes pass through the elevator by water pressure. Before reaching the
destined apparatus the mangoes are cleaned again by a number of brushes. It helps to
remove some solid waste particles that are attached outside the mangoes. These mangoes
are fed to the destine apparatus for extraction of juice. The destined is a device that consists
of a series of rotor blades, which are arranged vertically. It is rotating at very high speed,
which can press the fruits to extract completely the juice from it. At this portion the
unwanted materials during juice production like mango seed and mange skin are received
and expelled outwards during a separate conveyer system.

The juice is fed in to a pre-heater which is a long cylinder with its axis aligned
slightly inclined to the vertical towards the discharge end. The pre-heater is set at a
temperature of 650C whose discharge is filtered through a series of filters, arrangement
called mango super creamer and is collected in small collecting tank. The super creamer is
helpful in removing the fiber particles of the mango. The thick filtrate obtained is pumped
into the storage tank and is collected in a collecting tank.

From this tank the fruit extract is fed into the plate heat exchanger where it is heated
and then cooled to about 500C using hot and chilled water respectively. Then the fruit
extract is fed in to the centrifuge, which is rotated at fixed speed and time depending upon
the material to be produced. For example: for MEXICA the speed is 10000rpm and the

time is 4min. centrifugation is done to thoroughly remove the fibers and the large particles
which may be present in the extract. Here 85% of the fiber is removed. From the centrifuge
the extract is fed to the deaerator where the air is removed from extract by using vacuum.
The extract from the deaerator is collected in a storage tank.

Then the extract is passed to the lubber for removing the water in the extract by
vaporizing the water content. The heat is produced with the help of boilers. Then the extract
is stored in another three tanks arranged in series. Each batch of this tank is checked for
brix, acidity etc in lab and if found fit is further processed. The quality assured extract from
each tank is sterilized thoroughly using aseptic sterilizer. The extract passes through
different stages of sterilization in the apparatus. Sterilized product is filled in aseptic bags,
which is made up to special materials like polythene and Aluminum foil, thoroughly
sterilized and completely evacuated. The aseptic sterilizer helps to fill the aseptic bags
under aseptic conditions. These aseptic bags were stored in drums and are kept at 200Cand
where the humidity is controlled.

5.3 PRODUCTION OF JUICE FROM PULP

The pulp produced is stored aseptically in aseptic bags maintained in aseptic drums.
The entire unit consists of a juice formulation tank of reconstruction tank, syrup tank and a
water storage tank. The reconstitution tank is the most crucial component where through
mixing of pulp, sugar syrup and water in the required amount achieved.

5.4 SYRUP TANK

This is the cylindrical compartment where the sugar syrup is produced. This
involves mixing of 1000kg of sugar, 4201 sterile water at a temperature of 85-900C. This
sugar syrup is directed to a filter through steel pipes. The filter used here is paper filter in
order to remove any suspended debris or impurities. This clear filtrate is then stored in the
syrup storage tank.

5.5 STORAGE TANK

Water is taken from nearby barbell and subjected to water treatment. Sterilized
water after conducting lab test such as coli from test and BOD test is the water storage tank.

5.6 RECONSTITUTION TANK / JUICE FORMULATION TANK

Pulp stored in aseptic bas is transferred in required amounts into the reconstitution
tank with the help of a reciprocating pump. Sugar syrup from the sugar storage tank and
sterile water from the water storage tank is pumped into the reconstitution tank through
steel pipes. The reconstitution tank I coupled to a graduated meter, which shows the
amount of pulp, water and sugar syrup added. The total volume of pulp, water and sugar
syrup is 1200 kg for a single batch. The volume of each component in reconstitution tank
varies according to the product.

In each cases the volume is made up to 1200Kg using sterile water. In addition to
this citric acid, ascorbic acid and flavours are also added in minor quantities Citric acid is
added to maintain the acidity of the product.

5.8 FILLING OF FRUIT JUICE

Filling of the Mexica Fruit Juice is done by Hydraulic machine which is situated in
the juice filling section. The filling process includes pouring Mexica into a 200ml glass
bottle after boiling of the container at 100 degree Fahrenheit temperature. After that
Hydraulic machine is doing filling, ceiling, labelling of the product. Lastly 24 bottles are
arranging in each boxes for the purpose of marketing.

5.9 ELECTRICAL SECTION

The electrical supply is given at 400KV considering the company as a high tension
consumer. The company has planted its own transformer system inside the premises. The
company has two diesel generators of 500V and 250V capacity. The 500V generator can
facilitate complete working of the plant in case of power failure and it consumes fuel at the
rate of 50 its/hour. The fuel is stored first in a high capacity storage tank and is brought to
small scale tanks as per usage. There is also a 250V generator which is run at the time of
the working of the LUBER, as the machine demands uninterrupted power supply. The
company will to solve this problem by buying a generator in future.

The firm prepares its final accounts at yearly intervals and the accounts are allowed

Slice is a line of fruit-flavored soft drinks manufactured by PepsiCo and introduced in


1984. Varieties of Slice have included lemon-lime (replaced Teem in the United States;

This type of organizational study increase practical knowledge of the students besides the
theoretical knowledge to a large extent. The MBA students are well aware about the
functioning of the companies and corporate world by providing these types of studies.

The organizational study aims at to get an experience of future performance. The


study will be conducted to understand the structure , functioning and process of various
departments and their interdependence.
