Meatloaf with Tomato Gravy

 Prep Time: 30 min.


 Total Time: 1 hrs. 30 min.
 Servings: 5-6

Ingredients

Meatloaf
o 1/2 cup, bread crumbs, (dry or toasted)
o 2 tablespoons, olive oil
o 1/2 medium onion, diced
o 6 garlic cloves, minced
o 1 teaspoons, kosher salt
o 2 teaspoons, dried oregano
o 1/2 teaspoon, pepper
o 1 1/2 lbs. ground sirloin or chuck (80% to 90% lean)
o 12 ounces, ground pork sausage
o 1/3 cup, grated Parmesan cheese (or more as desired)
o 2 teaspoons, Worcestershire sauce
o 2 large eggs, beaten

Gravy
o 1 tablespoon, olive oil (Extra Virgin Olive Oil or Avocado Oil Will also work)
o 1 tablespoon, butter
o 1/2 onion, diced
o 6 cloves garlic, mashed
o 1 teaspoon, dried oregano
o 3 tablespoons, tomato paste
o 1 whole bay leaf
o 2 teaspoons, chicken base, dissolved in
o 2 cups, water
o 1 (15 ounce) can, diced tomatoes
o 1/4 cup, Parmesan cheese, grated (or a bit more)
o 1 teaspoon, red wine vinegar
o 1/2 teaspoon, kosher salt (or other salt of your choice)
o 1/2 teaspoon, pepper (for a richer taste grind your own peppercorns)
Directions

1. Meatloaf-Preheat the oven to 350°F.


2. In a large skillet, add oil, butter.
3. Add onion, garlic, oregano, salt and pepper and cook on medium until the onions are tender
about 10 minute-let mixture cool.
4. In a large bowl, add the bread crumbs, onion mixture, raw meats, cheese and Worcestershire
sauce. Toss and mix gently.
5. Don't over handle to avoid making the meat tough.
6. Add the beaten eggs and stir to coat the meat.
7. Transfer to a greased pan or greased glass baking dish and gently form a rounded top.
8. Bake at 350°F for approximately 45 minutes.
9. Check at 35 minutes to see if an instant read thermometer reads 160°F. If so, ,,,
10. Tent the meatloaf with aluminum foil and let rest 15 minute. The meatloaf will continue to cook.
11. Gravy-In a large skillet, add the olive oil, and butter.
12. Add the onions, garlic and oregano and cook over medium heat about 6 minutes.
13. Add the tomato paste and bay leaf.
14. Stir about 3 minutes.
15. Add the chicken broth and diced tomatoes.
16. Bring to a boil over medium-high heat, reduce to a simmer and cook the sauce until thickened,
about 5-10 minutes.
17. Add the Parmesan cheese, Apple Cider Vinegar, salt and pepper.
18. Be sure to remove the Bay leaf (It is a Choking Hazard)
19. After the meatloaf has rested, top the meatloaf with the gravy.
20. Cut into serving slices and ENJOY!

Special Notes: If you enjoy a richer flavor toast your herbs and spices in a dry skillet over low to medium
heat while stirring constantly. The fragrance will intensify but remove from heat and remove contents
to cool until ready to use. *****Overheating will destroy the fragrance and flavor.
