 Introduction:
Poultry are domesticated birds kept by humans for their eggs, their meat or their feathers. These

Galliformes(which includes chickens,quils,and turkeys).
Poultry also includes other bird that are killed for their meat, such as the young of pigeons but
does not includes similar wild birds hunted for sport or food and known as game. The word
“Poultry”comes from the French/Norman word poule, itself derived from the Latin word
pullus,which means small animal.
The domestication of poultry took place several thousand year ago. This may have originally been
as a result of people hatching and rearing young birds form eggs collected from the wild, but
later involved keeping the birds permanently in captivity.
Selective breeding for fast growth,egg-laying ability, conformation, plumage and docility took
place over the centuries, and modern breeds often look very different form their wild
ancestors.Although some bird are still keot in small flocks in extensive systems most birds
available in the market today are reared in intensive commercial enterprises.Although some bird

The word “Poultry”comes form the Middle English”pultrie”,form old French pouletrie, form
pouletier, Poultry dealer, form poulet, pullet. The word”pullet”itself comes form Middle English
pullet,from old French polet,both from Latin pullus,a young fowl,young animal or chicken.The
word “fowl”is of Germanic origin(Old English Fugol,German Vogel,Danish Fugl).

 Definition:
“Poultry”is a term used for any kind of domesticated bird,captive-raised for its utility, and
traditionally the word has been used to refer to wildfowl(Galliformes)and waterfowl

domestic fowls including chicken, turkeys, geese and ducks, raised for the production of meat or
eggd and the word is also used for the flesh of these birds used as food.

 Types of Poultry
1.CHICKEN
Mass production of chicken meant and eggs began in the early 20 th century, but by the
middle of that century meat production had outstripped egg production as a specialized
industry. The market for chicken meat has grown dramatically since then with worldwide exports
reaching nearly 12.5 million metric tons by the early 21 st century.

The breeds of chickens are generally classified as American,Mediterranean,English, and

Asiatic. While there are hundreds of breeds in existence, commercial facilities rely on only a select
few that meet the rigorous demands of industrial production. The single-comb White Leghorn,a
Mediterranean breed widly used throughout the global egg industry,is a prolific layers that
quickly reaches sexual maturity. The Cornish cross a hybrid of Cornish and white Rock,is one of
the most coman breeds for industrial meat production and is esteemed for its compact size and
rapid efficient growth.

2.TURKEYS
After World War II,turkey production became highly specialized, with large flocks
predominating.Turkeys are raised in great numbers in Canada where their ancestors still live wild
as Well as in some parts of Europe the United states Mexico, and Brazil.A hybrid white turkey
dominates commercial production while the Broad Breasted Bronze, the Broad Breasted White
the White Holland, and the Beltsville small white are common breed for smaller farms. In
breeding flocks, one tom is required per 8or10hens,though the modern hybrid turkey is too large
for natural breeding and must be artificially inseminated.
3.DUCKS AND GEESE
Duck raising is practiced on a limited scale in nearly all countries usually as a small farm
enterprise, though some commercial plant do exist.Duck are easily transported can be raised in
close confinement and convert some waste products and scattered grain to nutritions and very
desirable eggs and meat.Khaki Campbell and Indian Runer ducks are prolific layers each
averaging 300 eggs per year.Although the white fleshed Aylesbury was once the favoured meat
duck in England disease and market competition from the yellow fleshed pekin duck have led to
its decline.

TRADE
Poultry is the second most widely eaten type of meat in the world, accounting for about 30% of
total meat production worldwide compared to pork at 38%. Sixteen billion birds are raised
annually for consumption, more than half of these in industrialised, factory-like production units.
Global broiler meat production rose to 84.6 million tonnes in 2013. The largest producers were
the United States (20%), China (16.6%), Brazil (15.1%) and the European Union (11.3%). There
are two distinct models of production; the European Union supply chain model seeks to supply
products which can be traced back to the farm of origin. This model faces the increasing costs of
implementing additional food safety requirements, welfare issues and environmental
regulations. In contrast, the United States model turns the product into a commodity.
