Introduction

As reported by Michael Delizo, Lack of healthy sustenance among youngsters is a widespread

dilemma in the Philippines with 33.4 percent or 3.8 million kids under 5 years are not getting

enough everyday nourishment (ABS-CBN, 2019). A considerable amount of people might have

the mentality that either obtaining or retaining a healthy lifestyle is easy as pie. Being healthy is

depicted as the act of eating vegetables and fruits along with regular exercise when in reality, it is

being reckoned as one that requires more than those two. In addition to that, outside factors are

to be taken into consideration as well. An individual’s way of living and the environment they

are surrounded with has to be taken into account before grabbing life by the horns. A person

cannot simply tell the other to exercise and eat vegetables and fruits.

What if they do not have sufficient finances to afford a complete and nutritious meal? How about

the availability of the resources that will be needed? Others may seek to apply physical activities

into their daily living but are unable to do so as their schedules are always packed with heaping

amounts of work. Influences from their peers are to be given attention to, especially in regards to

the youth on their food consumption and leisure activities. Families and schools do not have full

control on the child because if they are unwilling to do so, then all of their efforts will be put to

waste instead.

However, surely it has been agreed upon that as long as you are still young, you must make the

best of it before it is too late. Adulthood is a whole new stage in life with much more

complicated obstacles, plus the probability that you would not have anyone to depend on when it

comes to conquering each problem. But then there comes a situation where an individual is

incapable of relishing their childhood because of the fact that they are either underweight or

overweight. What is much worse is when the child continues to carry this disease along with

them up until they have reached the peak of being an adult. Being overweight and underweight

are two of the concerns that should be given attention to as this would definitely cause negative

effects unto the country’s goal to develop.

With this being said, the researchers have successfully formulated three alternative vegetable

dishes from their qualitative study last school year 2018-2019 and has guaranteed the approval of

a total of 30 respondents within the ages of 4-10 years from junior kindergarten up to grade 5 in

Canossa Academy Calamba. The previous study was conducted with the intention of helping the

youth in attaining a healthy lifestyle, considering their preferences with the vision of placing

these three products into the market to be sold well. There is only one question that needs to be

answered, Are these three alternative vegetable dishes truly are nutritious?

For this school year 2019-2020, the researchers are to embark on another journey to further

investigate on how they can contribute in the campaign of eliminating the cases of overweight

and underweight people once and for all. The feasibility study will focus purely on having good

nutrition and determining the capability of the three products to last in the market once they are

officially launched.

Statement of the Problem

This study seeks to measure the efficacy of the Alternative Vegetable Dishes which are;

Shanghai with Ampalaya, Pumpkin Pancake, and Carrot Ice Cream to the weight and overall

well-being of the children ages 5-10 years before the researchers officially launch their three

products in the market.

Research Objectives

The main objective of the present study is to determine if the alternative vegetable dishes are

unequivocally nutritious significantly to those children who are malnourished before establishing

the business. In order to attain the main objective, sub-objectives can be formulated:

 To be able to achieve a number of 10 respondents from Canossa Galvaville, Calamba

along with the parent and the tyke’s consent.

 To accomplish the task of conducting a feeding program dedicated to the selected

respondents using the three alternative vegetable dishes within a span of one month

 To conduct a survey to Grade 5-12 students from Canossa Academy Calamba and the

parents from Canossa Galvaville, Calamba to identify the business’ name, logo, pricing,

and packaging.

Purpose of the Study

The purpose of this feasibility study is to analyze the effectiveness of the three alternative

vegetable dishes in helping the youth to attain a healthy lifestyle.

Significance of the Study

This study evaluated the effectiveness of the Alternative Vegetable dishes given to children ages

5-10 years with the hope that data gathered would prove useful to the following:

The parents may review the findings made by the researchers in which they may apply for the

improvement of their lifestyle and may contemplate on acquiring the dishes presented unto

their and would look into purchasing the said dish when it is officially placed into the market.

The school canteen may consider serving the dishes to be presented to their students to

implement a healthy eating lifestyle inside the school grounds.

The children will be guided towards acquiring a healthy lifestyle and simultaneously find

pleasure in eating vegetables that they were not fond of.

And lastly the future ABM students may find this useful for any feasibility study.

Theoretical Framework

Attitude, Social Influences and Self-efficacy (ASE) model was invented by De Vries H., Dijkstra

M., and Kuhlman P. way back in 1988. In 2014, a study was made by a group of researchers

collaborating from different departments such as the Department of Public Health, Department

of Food Safety and Food Quality, Food, Nutrition and Health Program, Rural Research Centre,

Public Health Section, ScHARR (School of Health and Related Research), and the Department

of Public Health. The study was entitled, “A Conceptual Framework for Healthy Eating

Behavior in Ecuadorian Adolescents: A Qualitative Study”.

They applied the cognitive variables of the ASE model onto their conceptual framework into the

dietary behavior of an individual specifically the youth in which they are heavily influenced by

three factors which are their environment, moderators, and lastly the individuals themselves.

Adolescents are reported to have lack of time to prepare a nutritious

breakfast, in which the parents agree upon. Cases may occur that the youth eat little to no food in

the morning. Most of them consider on choosing food that is easy to eat without taking note of

its nutritional facts first.

Their consumption is based upon what is only available around them or

what their parents serve them on the dinner table.

Rules, Role Modeling, and Permissiveness

Implementation of rules is inconsistent in terms of healthy eating

as well as the fact that the parents do not set a good example to their children. It is unlikely to

happen for a parent to influence their child to live healthily if they themselves do not do so. On

the other hand, some parents struggle on controlling their children and give in to their own wants

instead as long as it makes them happy and full.

Financial Constraints

Families who belong to low-socio economic societies explained that the

cost of providing a healthy meal is a barrier to attaining a healthy lifestyle.

Despite the school cafeteria’s efforts in selling only products that

are healthy, the students find their way in eating junk foods outside the premises of the campus

due to the existence of numerous food stands and other establishments. It has been reported that

shops outside the school reflects heavily on the youth’s preference on processed food. Some

adolescents perceive fruits and vegetables as unpalatable to them.

Socio-Economic Status (Financial Autonomy)

The amount of pocket money that adolescents have or even their family’s finances

determine the foods they purchase, not putting into mind the nutrition the product holds for them.

Setting (Urban/Rural)

Individuals who reside in an urban society reported that food is available

anywhere and the cost it holds is not an issue to them. Meanwhile, those who are living in a rural

community admit that the availability of resources is a barrier to eating healthily.

Individual Factors

Self-Efficacy

The youth has this perception that attaining a healthy lifestyle is impossible due to

their inability to control themselves plus the lavishness of mouth watering yet unhealthy foods at

school and home.

Subjective Norm

The majority of the youth is conscious on what their peers would think if they

start on having a healthy lifestyle such as eating vegetables or exercising regularly.

The adolescents are immensely aware that healthy living leads them to looking

good and having a longer life span. They also have knowledge in the effects that junk foods

contain; nonetheless, they like unhealthy foods more than the other up to the point that they are

unable to resist it.

Habit Strength

Habit is a strong influence on their food consumption. The fact that they have

been used to eating junk food ever since from the start made them unable to remove these

unhealthy foods from their daily meals.

Perceived Food Safety

A great quantity of the adolescents perceive stereotypical healthy foods such as

fruits and vegetables while French fries, potato chips, candies, and the like are those which are

“unhealthy”. Only a few of the youth are aware that eating healthily is actually acquiring a

balanced diet with a sufficient amount of fats and an abundance of vitamins. Another belief that

these individuals have is that traditional and home-grown foods are those which are perceived as

“healthy” while those that are sold in streets, restaurants, or any type of food outside their homes

in general are those that are “unhealthy” because they have no idea how the meal was prepared.

The youth are indeed enthusiastic when it comes to discussing the taste of sweet

and fatty foods. Meanwhile, vegetables or salads specifically are given unpleasant and negative

responses due to their experiences and preferences.

An individual has its own factors and are also heavily influenced by their Environment and

Moderators as derived from the ASE model of a study entitled; “A Conceptual Framework for

Healthy Eating Behavior in Ecuadorian Adolescents: A Qualitative Study”. Furthermore, the

individual will go through a process of a feeding program and an interview with their

parents/guardians in which will lead to the result on the efficiency of the alternative vegetable

Scope and Limitations

The study focuses on the residents of Canossa Galvaville, Calamba between ages 5-10 years and

students from grades 5-12 in Canossa Academy Calamba. The residents of Canossa Galvaville

will be fed using the three alternative vegetable dishes for a whole month while their weight,

height, and attitude will be observed. An interview will be conducted to the child along with their

parents to check on their socio-economic status which affects the changes that might occur with

the child’s health. As for the students of Canossa Academy Calamba, a survey questionnaire will

be given to them as market research.

Summary

Being healthy is not easy as eating vegetables and fruits and exercise, the individual’s way of

living and the environment should also be taken into account. Others may regularly perform

physical activities but are unable to eat nutritious food for the reason that they cannot afford it,

the resources are unavailable and they are always packed with heaping amounts of work.

Families and school do not have full control of the children as they can be influence by their

peers and other environment factors. From last school year 2018-2019, the researchers have

successfully formulated three alternative vegetable dishes which are Shanghai with Ampalaya,

Pumpkin Pancake and Carrot Ice Cream. For this school year 2019-2020, the researchers aim to

identify the nutritional efficiency of the three products and also to determine its capability to last

in the market once they are officially launched. The study will focus on the 10 children of

Canossa Galvaville, Calamba ages 5-10 years and their weight, height and behavior are to be

observed by the researchers. The study hope that data gathered would prove useful to the parents,

school canteen, children and future ABM students. Using Attitude, Social Influences and Self-

efficacy (ASE) model, the researchers are able to construct their conceptual framework. The

conceptual framework shows the individual factors and its influential environment. Furthermore,

the individual will go through a process of a feeding program and an interview with their

parents/guardians in which will lead to the result on the efficiency of the alternative vegetable

dishes. Then, a survey for the market research, as an extraneous variable, will be conducted at

Canossa Academy Calamba where grades 5-12 are the focused participants.
