4-601.11 (A) - EQUIPMENT, FOOD CONTACT SURFACES, AND UTENSILS
REPEAT OBSERVATION (CORRECTED DURING INSPECTION): A. Surfaces of the deli slicer are soiled
with food debris. It does not appear that the deli slicer was disassembled for cleaning.
B. Three knives from the cookline magnetic knife rack are soiled and appear to have only been wiped rather than
washed, rinsed and sanitized correctly.
C. The blade or the dicer press stored above the warewash area is soiled.
Corrective Action(s): Disassemble deli slicer and uses brushes or other tools necessary to effectively clean all
crevices and food contact surfaces. Wash, rinse and sanitize noted equipment and utensils. Maintain food contact
surfaces in a clean condition. Retrain staff on correct cleaning procedures. Action Taken: Staff disassembled the
deli slicer and had staff wash, rinse and sanitize all noted food equipment and utensils.
Code citation: (A) EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be clean to sight and
touch.
