MESS MAN
1.1 Messman
Duties and Responsibilities
a. serve foods and beverages
b. assistant of the chief cook
c. fully responsible for the cleanliness and sanitation
d. other duties as required by the Master or Chief
Cook
Messman Qualities
a. knowledgeable to manage his time
b. must be trained
c. always attentive to carry multi tasking
Messman can be:

Topic 2
GALLEY BOY
1.2 Galley Boy
Duties and Responsibilities
a. Reports on time and properly groomed
b.Maintains the cleanliness of galley
c. Utilizes proper sanitation procedures
d.Have an operational and cleaning knowledge of all electrical or non electrical
equipment
e. Segregates and removes trash and garbage.
f. Transfers supplies and equipment.
g. Loads or unloads supplies.
h. May participate in the set up of banquet tables.
i. Perform any other job‐related duties assigned.
Topic 3
CABIN BOY / CABIN GIRL
Stateroom Attendant:
a. Makes beds
b. Changes towels
c. Replenishes bathroom supplies
d. Maintains an assigned section of 10 to 21 guest staterooms
e. Cleans showers, sinks, carpets, upholstery, floors
Cabin Steward
a. Responsible for the cleanliness and upkeep of a delegated amount of
passenger's cabins.
b. Changes sheets and makes beds.
c. Cleans bathrooms.
d. Washes windows, vacuums floors etc.
e. Can be assigned public areas to clean as well.

WAITER / WAITRESS
Customer Relations
a. Welcome restaurant patrons.
b. Inform passengers of daily specials.
c. Answer passengers’ questions about various
menu items .
d. Make recommendations based on
customers' preferences.
e. Record orders and relay them to the kitchen.
f. Diplomatically handle patrons' complaints
regarding service or food.
g. Leading customers to their tables.
Food and Beverage Service
a. Prepare and serve hot and cold beverages.
b. Serve the courses of meals on time and in the
correct order.
c. Open and pour wine table‐side
d. Check with diners occasionally to ensure they are
satisfied
e. Prepare coffee and plate desserts prior to serving.
f. Communicate with kitchen staff to expedite meal
preparation during busy times.
Preparation and Clean‐Up
a. Remove soiled tableware and clear tables.
b. Perform general cleaning such as cleaning
counters, service stations and floors.
c. Prepare and set tables with tablecloths,
glasses and silverware.
d. Replenish salt and pepper and other
condiments.
e. Stock service areas with cutler and
glassware.

Duties and Responsibilities
a. Mixes and serves alcoholic and non‐alcoholic
beverages.
b. Takes orders from guests or Bar Servers.
c. Able to converse with guests, answer questions and
promotes drink specials.
d. Stocking the bar with liquor, beer, win, & necessary
supplies.
e. Arranging glasses and bottles into displays that will
be attractive to customers

GALLEY STEWARD
a. Maintains the cleanliness of galley.
b. Follows proper washing and sanitation.
c. Utilizes proper sanitation procedures at all
times.
d. Practices careful handling of all galley
equipment.
e. Sweeps and cleans galley deck, scuppers, walls
and ceilings.
f. Segregates and removes trash and garbage and
places it in designated containers.
STEWARD'S ASSISTANT
a. Can also be referred to as steward (the usual
term on British ships), galley utility man,
Messman, supply or waiter.
b. The role of the SA consists mainly of stocking,
cleaning and assisting with the preparation and
serving of meals.
