Wash tomatoes and cut in half length ways, scoop out the seeds
and pulp and set them upside down to drain, keep the seeds and
pulp in a cup.Place the breadcrumbs, parmesan, herbs, onions,
garlic, salt, pepper and the tomato pulp with seeds in a bowl mix
well together with 3 tablespoon of extra virgin olive oil.If the mix-
ture looks too dry add some more oil, fill each tomato with this
mixture and arrange the them in a lightly oiled baking tray, driz-
zle with olive oil and roast for about a half hour or until the bread-
crumbs are browned.
You can add anchovies, olives and capers to the ingredients to give
extra flavour or give it a twist adding mozzarella or feta cheese.
Usually I make more mixture then needed so I can top up my
tomatoes with some extra filling!

On behalf of Clashmore Fianna Fail Cumann a big thankyou to The oldest Corpus Christi Procession in Ireland took place last

She may not be sending a heifer to Thailand but the proceeds of one
will be helping send our volunteer there! A heifer was just one of
numerous items very kindly sponsored for a fundraising auction
held recently at the Ole Mill in Kinsalebeg, The proceeds of this
auction which raised over 5000 goes towards sending Kinsalebeg
student Marta to "Maisai, Northern Thailand" in July. Daughter of
Liam and Kay Marta is one of four students travelling to Thailand
as part of the Freedom House "Hill Tribe Education Volunteer
Program"
Freedom House is a school set up to provide hill tribe and refugee
children with and education, which in turn will give them better
work opportunities. The school provides instruction in Thai and
English and children learn at their own individual pace.
Youghal Catholic Young Men’s Society marchers pass their premises in Market Square
Children involved on this programme live in slum areas and have to
work from a tender young age because they can not speak Thai and
can not afford to go to school they are stuck in a vicious circle of
poverty.
Volunteers at Freedom House give them an opportunity to change
that by teaching them Thai, then they can become active in Thai
society and seek legitimate employment, by learning English the
children are given an opportunity to work in the tourism industry as
tour guides or in hotels.
Freedom House also provides a daily healthy meal to the children as
part of the program, but this would not be possible without volun-
teers like Marta, who raise money to sponsor their trip to Thailand, The Procession approaches Market Square
along with giving them time as a volunteer out there.
Marta wants us to thank everyone who sponsored items for the auc-
tion, thanks to also our MC and auctioneer Pat "Knobber" Daly of
CRY fame, Assumpta Dalton who did trojan work behind the
scenes, who provided the music and everyone who helped in any
way especially Kieran, Suzanne and staff at the Ole Mill.
We wish Marta and her fellow students all the best in their travels.

A sunny May Monday evening welcomed audiences to the open-
ing night of the Chatterbox summer showcase which was held last
week in the Mall Arts Centre, Youghal. Girls and boys from the
Chatterbox school entertained full houses on both nights of the
show. After the official opening speech given by Mayor David
Savage, the curtains drew back revealing six dancers tapping their
toes to the song the best is yet to come . That certainly was the
case. As the song continued, we saw more dancers take to the Amanda de Bhiel, CÆit GairnØir, Brian Lotty, Heather N Dhonnchœ, Frank
stage adding their own unique style of dance. The crescendo of the Delaney and Christian N DhœnÆin
song saw 26 students dance in unison to an opening number that
set the standard for the rest of the show.
Each class had their moment in the spotlight. It was hard to
believe that some children were performing for the first time on
stage! Their smiles and energy aptly concealed any hidden anxi-
ety, leaving tears the reserve of the proud parents in the audience.
The colourful costumes and set, mixed with a good variety of
music from numerous genres plus the dramatic interludes made
for an evening that entertained both young and old.
As the final curtain came down on Tuesday night, weary heads
harbouring relentless smiles epitomised the heart of Chatterbox.
When is our next show? was the question echoing backstage.

Youghal Town Council intends to introduce a Heritage Paint Scheme for the Historic Core of
the Town. As part of this scheme free Architectural Advice will be given to each individual
client, together with a level of grant aid dependant on the type and size of the clients proper-
ty.
An information document is available from the offices of Youghal Town Council explaining the core prin-
cipals of the scheme. Before the scheme commences in general, Youghal Town Council intends to paint two
properties free of charge, as samples, of what the scheme intends to achieve. If you would like your proper-
ty to be considered as one of these free samples please apply now in writing to Sean McLoughlin, Town
Architect, Youghal Town Council, Mall House, Youghal before 15th June next.
The Town Architect will consider all applicants, prior to picking two to proceed with. Once these samples
properties have been finished, the general scheme will be rolled out and the individual consultations and
assessments will commence. This scheme provides the community, of the historic core with a fantastic
