1. Describe the food hygiene and sanitation practices of the movie characters that
can be observe throughout the movies.

- Food hygiene and sanitation practices of the movie characters are all the workers
have good personal hygiene where they wear long sleeve shirt and cap to cover
their hair. Moreover, the workers applied the general hygiene and health during
handling the food. It can be shown when Collete taste the food with spoon instead
of taste food with fingers. Besides, Remy shown the importance of handwashing
before start handling food. It can clearly see when Remy tells their friends to wash
their hands first and sanitize before handling food. Lastly, watch and monitor
employees and their work habits and treat poor hygiene practices as disciplinary
violation. In the movie, Collete tells Linguini to always keep a clean and
organized the kitchen when Linguini cooks pasta and simply puts his dishes to the
side.

2. Discuss how the food handling practices shown in the movie influence the quality
of food severed.

- The food handling practices shown in the movie are the storage of ingredient and
raw materials. All the ingredients were placed in food storage cabinet that located
in storage where rodents and insects cannot enter. Next, preparation area is not
allowed for children and non-food worker. This is because to avoid any accidents
occurs and contamination towards food. Moreover, the work surface and
equipment are always clean to ensure they are free from harmful bacteria. All the
workers also have a good personal practice and always wash their hand before and
after prepared the food. They are not wearing outdoor clothes in food preparation
area. Besides, the workers also trained themselves to instance cleaning up any
spillages immediately. When the employees and employer have a good food
handling practices, the quality of food severed was also good and not easily
spoiled.

3. Describe the type of rodent in the movie and their characters

- Type of rodent in the movie is roof rats. Roof rats are dark brown or black in
colour with white and grey underside. They also have large ears and a tail that is
longer than their body and a pointed nose. Moreover, roof rat ability to climb very
well because they are such good climbers and often found in the attics and upper
level of homes and buildings. They also can jump 2 feet up and 4 feet
horizontally. Besides, they tend to nest above the ground in the trees, bushes and
in areas of dense vegetation. If they move inside of a home or building, they can
be found in attics, above false ceilings, behind walls and in the tops of cabinets.
Other than that, they also love to eat all types of citrus and other fruits and nuts
including lemons, grapefruits, peaches and so on. Furthermore, roof rats enter
homes, sheds, garages and other structure through any opening larger than a nickel
and may follow pipes down from the attic.
