I am thrilled to be the guest editor for this edition of Viva! The word “viva” means
expressing good will and well wishing, and this magazine is all about good will to
one’s self through the practice of balanced living — and I’m all about balancing the
scale to ensure wellness, vivaciousness and curvaceousness!
What is the number one obstacle between you and your weight loss goal? YOU!
Someone once to me, “for you to be the change, you must first see it and believe in
it.” In order for you to move forward in 2011, it’s important that you believe that
you will be able to stick to your resolutions and start to visualize yourself as the fit,
trimmer and healthier person you want to be.
You can’t just say that you want to lose weight and expect that it will happen.
Surround yourself with positive messages that will help fuel your journey and
remind you of exactly what your dreams are and the reasons you want to reach your
goals. If you only focus on losing weight this year, chances are you may not success:
it is a well-rounded endeavour. However, if you shift your focus to become the BEST
“you” that you can be—I think it is safe to say that you will surpass your goals and
realize a bigger outcome than you are able to imagine right now.
Here are a few suggestions to get you closer to realizing your goals:
• Recite a daily affirmation like: “I believe in my ability to improve my health, my
attitude and my life. I am worthy of the best that life has to offer and today I
have the opportunity to get closer to realizing my dreams and goals.”
• Make a personal motivation poster and cover it with pictures that depict the
live that you want to lead – who you want to be, what you want to be doing,
how it will look and feel; and place it somewhere that you will see each day.
• This journey is about YOU, not about food or cutting calories. You are improving

and your body is right along with you.
• Drink at least 1.5-to-2 liters of water per day. The body lives off of water (and you
already know it’s good for you – so up the intake and maximize your results.
• Try a motivational book or audiobook! I’m currently listening to Jack Canfield’s
Success Principle and Jim Rohn’s Weekend Event for life and business,
• Pick up a copy of my book The Vice Busting Diet for weight loss motivation. Best

• Identify your two biggest food vices and go about busting them – taking PGX

• Find a few recipes that you LIKE and that match your desired manner of eating

much up to chance.

3. BEAUTY SLEEP IS NOT JUST FOR GIRLS. While many men feel
it’s normal to lose sleep with age – and yes, it is – know when too
much sleep loss is serious. A recent study funded by the National
Institute of Health found that chronic insomnia is associated with
a two-time increase in mortality. This also includes difficulty falling

1 cup button mushrooms
2 tbsp olive oil
1 onion chopped
2 cloves garlic, finely chopped

pinch of salt
pinch of black pepper

1 2-inch cut veal Osso Buco
1 large carrot, chopped

4 cups veal stock (veal jus)
Flour for dusting
Salt and pepper to taste
1. Combine flour with salt and pepper and toss veal to coat.
2. Heat saucepot with oil to high, add veal and cook each
side until brown.
3. Once veal is browned, remove from pot and add chopped
vegetables.
4. Cook, stirring for 4 minutes or until browned. Deglaze
with red wine (cook until wine is almost gone).
5. Return veal to pot, add bay leaf and veal jus. Cook over
low heat for two to three hours or until tender.
