Cookies & Cream Oreo Ice Cream Cake

Cookies and Cream Ice Cream Cake is the perfect summer birthday or celebration cake. Best of
all loaded with a rich, creamy double layer of Oreo cookies, Tim Tam chocolate biscuits and
whipped cream.

It’s Friday so I’m bringing you my last ice cream cake for the season.  I was originally going to
share this last Friday but then decided to wait until this week.

It’s National Ice Cream Day on Sunday so you should totally take part with a bang.

This Cookies and Cream Oreo Ice Cream Cake is a classic favorite with everything you love
about cookies and cream in a dreamy frozen dessert.
We never got ice cream cakes for our birthdays when we were younger.  Instead it was usually
the same fruit filled cake covered with a light whipped cream frosting every year and as much as
I love those type of cakes now — an ice cream cake was all the rage back then especially for any
little girl.
Luckily, they aren’t very hard to make at all so you can totally make one for yourself now 

Use either homemade or your favorite storebought ice cream and the best part is it can be made
ahead of time.  Just wrap it up and store it in your freezer prior to decorating it.

 
We start off by setting out the chocolate and vanilla ice cream on the counter until they get nice
and melty.

While you’re waiting, make the soft Oreo cookie crust and press it gently into the bottom and the
lower sides of a 6″ springform pan. (<—not an affiliate link)  (If you want to make a 9″inch, just
increase the amounts accordingly)

Crushed Oreo cookies get folded into the ice cream and the chocolate layer gets spread evenly
over the cookie crust.

What makes this cake extra special is the the layer of Tim Tam biscuits I added between the
chocolate and vanilla ice cream.  They add a delightful chocolatey crunch and really complement
the cookies and cream flavor.
Next comes the vanilla ice cream and then we just park the whole thing in the freezer for a few
hours or overnight to set up.

When you’re ready to serve it, spread a thin layer of freshly whipped cream or your favorite
whipped topping and pipe on some rosettes.  Throw on some more crushed cookies in the middle
and arrange the whole Oreo cookies in a circle.
Finally add a handful of sprinkles just for fun and grab your fork.

Tim Tam chocolate biscuits and whipped cream. Perfect for a summer birthday celebration!

Ingredients

 Cookie Crust
 25 Oreo cookies (or any chocolate sandwich cookie)
 2 tablespoons milk
 1/4 cup unsalted butter, melted

 2.5 cups of your favorite chocolate ice cream, softened (homemade or storebought)
 2.5 cups of your favorite vanilla ice cream, softened (homemade or storebought)
 12 Oreo cookies (crushed)
 8 Tim Tam Chocolate Biscuits, crushed (optional)

Topping
 Whipped Cream Frosting or Cool Whip
 8 Oreo Cookies
 a handful of crushed Oreo cookie crumbs
 sprinkles, optional

For Whipped Cream Frosting
 2 cups heavy cream, well chilled
 1 cup sifted icing sugar
 1 teaspoon vanilla extract

Instructions

1. Make the cookie crust - In the bowl of a food processor, add the entire Oreo cookies (no
need to remove the cream filling) and pulse into fine crumbs. Add the milk and melted
butter and blend until well combined. Press mixture into the bottom and sides of a 6"
springform pan. Place in freezer for about 1 hour to set .
2. Take out the chocolate ice cream to soften (about 20 - 30 minutes) and stir occasionally
until smooth and spreadable. Stir in half of the crushed Oreo cookies.
3. Spread chocolate ice cream evenly over the cookie crust using an offset spatula if needed.
Top with crushed Tim Tam biscuits if desired.
4. Place in freezer to harden for about 20 minutes while taking out the container of vanilla
ice cream to soften. Once softened, mix in the other half of the crushed Oreo cookies.
5. Spread evenly to make the top layer.
6. Return to freezer and allow to set for at least 4 hours, ideally overnight.
7. When ready to serve, let the cake sit at room temperature for about 3 minutes, and run a
knife around the inside of the cake pan. Open the springform mold gently; it should
release easily from the slightly melted cake..
8. Before serving, spread a layer of whipped cream frosting over the ice cream, pipe on
rosettes if desired and arrange Oreo cookies in a circular design. Crumble any leftover
cookie crumbs in the middle of the cake and place an Oreo cookie on top. Top with
sprinkles if desired.
9. Return to the freezer to set up for about 15 minutes or serve immediately.

To make the whipped cream frosting
11. In a chilled bowl, beat the cream until frothy.
12. Slowly add the powdered sugar and vanilla while beating.
13. Whip until light and a thick enough consistency to spread as an icing.
14. Use immediately.

Notes

**If you want to make a 9" cake instead, just increase the amount of ingredients by 1.5.

Ingredients

 1 container (1-1/2 qt.) chocolate ice cream (7x4-1/2x4 inches), divided


 20 OREO Cookies, coarsely chopped, divided
 3 cups vanilla ice cream, softened
Instructions

 Line  9x5-inch loaf pan with plastic wrap. Cut chocolate ice cream crosswise in half, then cut
each half into 4 slices. Place 4 slices on bottom of prepared pan; press to form even layer
covering bottom of pan. Reserve 1/2 cup chopped cookies; set aside.
 Sprinkle  half the remaining cookies over ice cream layer in pan. Cover with vanilla ice cream;
press firmly to form even layer. Top with remaining chopped cookies. Cover with remaining
chocolate ice cream slices; press firmly to completely cover cookie layer. Freeze 3 hours or until
firm.
 Invert  dessert onto platter just before serving. Remove pan and plastic wrap. Top dessert with
reserved cookies.

Oreo Ice Cream Cake

About This Recipe

"I've never made this but I tasted a bit, that was all that was left, and it was really good. It only
has 4 ingredients and sounds super easy to make. I think you could easily substitute homemade
sauce for the hershey's. I think it would be great to take to a potluck because you wouldn't have
to worry about keeping it warm or making sure it doesn't spill on the way there."

Ingredients

o 1 (20 ounce) packages Oreo cookies, crushed


o 1 (8 ounce) packages Cool Whip, thawed
o 1 (16 ounce) jars of hershey's hot fudge
o 1 1/2 gallons vanilla ice cream

Directions

1. Grease a 9x13" pan.


2. Crush the cookies, either in a food processor or put them in a plastic bag and beat the heck out
of them. Layer half of the crumbs in the pan.
3. Spread the softened ice cream over the cookies.
4. Warm the fudge until pourable in the microwave and pour over the ice cream.
5. Spread the Cool Whip over the fudge. Then cover with the rest of the oreos.
6. Put it in the freezer for probably at least two hours or until it gets firm.
7. Take it out of the freezer about 20 minutes before you want to serve it.
