As the managers of the Period RT LLC that own the Concord Depot on Thoreau Street, we are writing to
formally notify you we fully support Ian Calhoun and 80 Thoreau's use of the front porch area for
outdoor seating. We have reviewed and approve Ian's plan. As we all know, these are trying and
challenging times for everyone, but in particular for our locally owned businesses. Whatever
accommodations and support the Town can permit for their survival, would be greatly appreciated.
We belleve for the past 10 years Ian and 80 Thoreau, have served concord well and have proven
themselves as responsible business owners.

80 Thoreau Outdoor Service Plan
We will put the following measures in place regarding foodservice on the patio:
-Setup an outdoor station with hand sanitizer for the use of guests and staff as needed
-Limit the number of staff that interact with guests by dedicating two patio servers
-Utilize support staff to bring food to inside service station and remove dirty dishes
-Maintain a landing area for food/drink separate from bussing area
-Staff wash hands or sanitize after clearing, alternately single use gloves may be used
-There are two hand sinks easily accessible to staff by the dish area (one against the back windows in
kitchen and one in the coffee station
-Hight touch areas including but not limited to door pulls for exterior door and restrooms will be
disinfected before/after the shift and hourly while guests are prese·nt
-Adhere to the attached COVID Plan
