Hi Kiorionis,

Good question - presumably, the enzymes are destroyed within a few hours at 50°C and
I've also read that higher temps will denature the honey so I'm wondering what happens to
the quintessence if we reflux 3 - 7 times.

I suppose it depends on if you think the quintessence is wrapped up in enzymatic action, or

is something which underlies the chemical/biological information and function.

Kiorionis, funny you should say that. I've been having an internal debate between my
instincts and chemistry and in the meantime have made no real progress. Thank you for
the gentle reminder and point taken
