Call for Abstracts Overview
The Institute of Food Technologists (IFT) welcomes the submission of quality and
original food science and technology research for presentation at the 2011
Annual Meeting & Food Expo®.
Presentation Preference
Individuals may submit their research for consideration in one of the following
presentation formats:
Poster presentation
Oral presentation
Abstract Competitions
Qualified individuals may also submit their research for consideration with the
following abstract competitions:
Division Competitions
George F. Stewart International Research Paper Competition
Society for Laboratory Automation and Screening (SLAS) Young

Technical Research Papers Critical Date Overview
The following timetable shows the activities and events which will lead to
developing a successful scientific program at the IFT Annual Meeting.

Right of First Refusal
IFT reserves the right to publish the accepted abstracts in a Book of Abstracts,
on the IFT website or both. Authors are not required to submit papers for
publication. Papers should not have been published prior to the meeting. The
right of first refusal applies to all research, science and technology
abstracts/papers presented at the Annual Meeting. Authors are encouraged to
submit their papers for consideration in IFT’s publications—the Journal of Food
Science (JFS), Comprehensive Reviews in Food Science and Food Safety
(CRFSFS), the Journal of Food Science Education (JFSE), and Food
Technology. As soon as possible after the Annual Meeting, authors should visit
http://mc.manuscriptcentral.com/jfs to submit their manuscripts to JFS, CRFSFS,
and JFSE. To submit to Food Technology, contact Bob Swientek at
bswientek@ift.org. Call the IFT Publications Office at 312-782-8424 for further
information. Those who do not wish to publish their papers in IFT publications
but rather other journals should also contact Bob Swientek to request permission.
Presenter Affirmations
All submitters will be asked to complete a series of affirmations to let IFT know
they accept, are aware of the important deadlines and that they will follow
standard presenter protocols. There are a few affirmations that presenters do not
have to accept such as giving IFT the right to audio or videotape the presentation
(for oral presentations) and distribute the PowerPoint slides.

Abstract Submission Guidelines
Abstracts failing to meet one or more quality factors will not be selected.

Poster Presentations
Poster presentations provide the opportunity for the presenter and the audience
to talk with one another. A physical arrangement similar to an exhibit area is used
for this interaction. Each presenter is provided with a freestanding bulletin board
on which to display the poster. A relatively large number of posters will be
displayed during each poster session. During the designated period, the
audience moves through the poster displays, stopping to interact with those who
are presenting research that is of special interest to them. Poster presenters
should come prepared with a 3-5 minute oral presentation to provide interested
attendees. Some poster presenters find it useful to have selected handouts for
interested attendees visiting their posters. These could be a reduced photocopy
of the poster, selected data/conclusions, or other relevant material. This is
completely optional.
Oral Presentations
The oral presentation of a paper is typically limited to 20-minutes in total. Of this
time there is a 15-minute allotment for the presentation of your research with an
additional 5 minutes for questions. Speakers should rely on handouts for all
supplemental materials; however, audio visual equipment is available during the
presentation. Some oral presenters find it useful to have selected handouts for
interested attendees at their presentation. This is completely optional and of the
presenters’ responsibility.
In the 2011 Annual Meeting, oral sessions will have a total of four abstract
presentations.

Abstract Submission Rules
The data presented must not be published before the meeting.
The data presented must be substantive. IFT discourages the submission
of incomplete research at the time of submission. Recent results may be
added at the time of presenting. However, the results shown in the
abstract must be substantive.
Abstracts MUST address the following:
1. Justification
2. Objective
3. Methods
4. Results
5. Significance of your research to the food science field.
Authors should not split data to create several abstracts from one study. If
two or more abstracts on related topics with minimal information are
submitted, priority of related abstracts will be reduced.
Data must represent new findings obtained using the scientific approach.
Data similar to previous presentations should not be submitted. Findings
should be stated in sufficient detail to support conclusions.
The abstract must cite quantitative data from representative experiments.
Do not simply state that the results will be discussed.
Abstracts may be no longer than 300 words.
Standard abbreviations may be used without definition. Nonstandard
abbreviations must be kept to a minimum, and must be placed in
parentheses after the first use of the word or phrase abbreviated.
Do not include references, credits or grant support.
Abstracts dealing with commercial products or services must have a
scientific emphasis and should not be submitted for promotion purposes.
See New Products and Technologies Submission Guidelines for abstracts
of this nature.
All abstracts must use correct grammar and punctuation.
Proofread very carefully for formatting, spelling, and grammar to avoid
errors before submission. The 300-word standard abstract will be
published exactly as it has been submitted.
Tables and images may NOT be included in the abstract.
All authors must have a copy of the abstract before the time of submission.
At least one of the authors must be a member in good standing of the
Institute of Food Technologists or one of the non-U.S. IFT Allied
Organizations.
Incomplete proposals will not be reviewed.

Abstract Revisions
Changes are not permitted after submission deadlines. All authors must be
listed at time of submission. No changes will be made after the submission
deadline.
Abstract Withdrawal
Submit withdrawal requests in writing by May 9, 2011 to avoid publication.
Notifications
All presenting authors will receive e-mail notification of abstract status on
February 10, 2011. Notices will be sent to presenting authors only.

It is the responsibility of the presenting author to inform all co-authors and faculty
advisors of disposition status and abstract scheduling information (if accepted).
Please check with all authors regarding acceptance before contacting IFT.
All notices will be sent as bulk email messages. Many times web-based email
accounts (e.g., Hotmail, AOL and Yahoo) automatically send bulk email
messages into the spam folder. Please check both your inbox and your junk
mail folder for your disposition notice.
If you have not received your e-mail by February 12, please contact the IFT
Knowledge & Learning Department by email at IFT_Knowledge@ift.org . It is
the responsibility of the presenting author to ensure that he/she has a valid
and current email address. This will ensure timely delivery of your abstract
disposition notice.

Poster Presentation Guidelines
Presentation
If a paper is accepted, the author(s) must attend the meeting to present it.
Failure to show up to present the paper, if not justified in advance, will
jeopardize the acceptance of papers submitted by the author(s) for the
next three IFT Annual Meetings.
Poster presenters must be available for at least the first two hour period
during their session to discuss their work. Failure to be present during this
period of time will be regarded as not showing up for the meeting and will
jeopardize the future acceptance of their papers by IFT. Poster
presenters are encouraged, however, to stay for the entire period of the
poster session.
Posters must be sized so that they can fit on the 4ft tall by 8ft. wide display
board that IFT provides each poster presenter. Your Poster must be
smaller than 4ft. wide by 8ft high.
Presenters in competition must remain at their posters for the entire time.
Failure to do so may eliminate them from competition.
Papers scheduled for poster presentation will be numbered and listed in
the program booklet.
IFT Will Provide: A 4 ft. tall by 8 ft. wide board as a display area. ―Dots‖ with
adhesive on one side and Velcro on the other will be available at the poster
session.
Signage identifying your paper number and the title will also be provided. Authors
on hand to discuss their research results during the attended period of the
sessions will be identified by their name badges received at registration.

Keep illustrations simple. Simple use of color, however, can add emphasis. Any
photograph should be a minimum of 8‖ x 10‖. Minimum size for all other
illustrations is 9‖x 12‖.
Do not mount your illustrations on heavy boards because these may be difficult
to place in position on the poster boards using the Velcro dots.
For suggestions regarding the preparation of posters, each presenter will be sent
a link to the IFT Presenter Resource web page that includes a link to ―Thinking
Verbally: Communication Tips for Technical Presentations‖ and ―Thinking
Visually: Graphic Tips for Technical Presentations‖ to assist them in preparing
their presentation.
Optional Materials
Some poster presenters find it useful to have selected handouts for interested
scientists visiting their posters. These could be a reduced photocopy of the
poster, selected data/conclusions, or other relevant material. This is completely
optional.
The IFT poster sessions are staggered against the times of the scientific program,
so as to decrease the overlap between the poster sessions and the scientific
program technical sessions. As in previous years, poster presenters will still be
asked to set up their posters 30 minutes prior to the start of the poster session.
A detailed list of the 2011 poster session times and their corresponding set up,
and tear-down times will be forthcoming.
All posters must remain on display for the entire duration of the poster session.
Posters must be attended by the authors for at least the first two hours of the
poster session. Tear-down must be completed no later than 30 minutes after the
poster session has ended. Posters left up after the tear-down period will be
removed and disposed of by IFT staff.
IFT staff members and student monitors will be available during the setup period
to provide authors with the materials needed to mount the data and illustrations.
The student monitors will be available during the entire session to provide
authors with any information or assistance they may need.

Below are the basic guidelines for the technical research paper oral session
presentations:

Graduate Student Research Paper Competition
Guidelines
Submission Deadline: December 7, 2010 by 4pm Central Standard Time
Eligibility
Students entering the competition must be members of the IFT Student
Association by December 7, 2010, and should not have graduated earlier
than June 30, 2010.
The student entering the competition must be the principal author of the
paper. The entrant’s name must be listed first to denote the student as the
speaker.
All research must have been completed while the entrant was a graduate
student.
The paper must be accepted to present at the IFT Annual Meeting
Scientific Program.
A student may submit only one paper in the competition in any one year
with the exception of the George F. Stewart/International Research Paper
Competition, Society for Laboratory Automation and Screening (SLAS)
Young Scientists Poster Award and the American Association of Food
Scientists for the Indian Sub-continent (AAFSIS) Student Paper
Competition, which may be entered in addition to a Division competition.
How to Enter
All entries must comply with the ―Call for Abstracts Submission
Guidelines.‖
If you are entering a poster competition, you must select POSTER ONLY
on-line and if you are entering an oral competition, you must select ORAL
PREFERRED. If you do not choose the appropriate presentation format,
your abstract may be automatically disqualified from the competition.
If accepted, it must be presented at the Annual Meeting, regardless of the
outcome of the judging for the competitions.

Each Division’s competition finalists will be located together allowing
judges to efficiently assess the merit of each finalist during a time before
the majority of Annual Meeting & Food Expo events commence. This will
allow for greater efficiency of the judges’ time and ensure better
recognition of the finalists throughout the meeting.
Finalists will learn which place they have been awarded between 3:00 -
4:30 p.m. during the Phi Tau Sigma reception and awards ceremony.
Details are being finalized and will be communicated to finalists in the
spring.
Poster ONLY Abstracts are eligible for the following competitions (Award
prizes are subject to change):
The Aquatic Food Products Division winners are determined on the basis of
an abstract and presentation, either oral or poster. The Division will give one first
place award of $500, two second place awards of $350, and two third-place
awards of $250.
The Biotechnology Division winners are determined on the basis of the poster
presentation. The Division will give first and second place awards of $300
and$200 and two third place awards of $100 each.
The Citrus Division Preliminary finalists (3-5) will be selected on the basis of the
abstract. A winner will be selected from the oral presentations (or poster

presentation) given by the finalists during the IFT Annual Meeting. The entries
will be judged for scientific merit, clarity and professionalism of the presentation.
The winner of the competition will receive a plaque and check for $300 from the
IFT Citrus Products Division.
The Dairy Foods Division (John C. Bruhn) winners are determined on the basis
of the poster presentation. The Division will give one first place award of $500,
one second place award of $250 one third place of $150 and the two runners up
will receive awards of $75 each.
The Food Chemistry Division winners are determined on the basis of the
poster presentation. Five finalists will be selected from the applicants to compete
in the competition at the meeting. The Division will give first, second and third
place awards of $500, $300, and $200 and two awards of merit for $100 each.
The Food Packaging Division winner is determined on the basis of the poster
presentation. The Division will give first, second and third-place awards of $500,
$350, and $100.
The Foodservice Division awards are to be given to graduate students for their
meaningful research contribution to the foodservice industry. The Division will
give first, second and third place award of $1,000, $500 and $250, and two fourth
place awards at $100 each.
The Fruit and Vegetable Products Division winners are determined on the
basis of the poster presentation. The Division will give first, second, and third-
place awards of $400, $300, and $200 and 2 fourth place awards of $100 each.

The Nutraceuticals and Functional Foods Division will be determined on the
basis of the poster presentation. The Division will give first, second and third
place awards of $500, $400 and $300.
The Nutrition Division (Mark L. Bieber) winners are determined on the basis of
the poster presentation. The Division will give one first place award of $700, one
second place award of $500, one third place award of $300 and two fourth place
awards of $100 each.
Oral Abstracts ONLY are eligible for the following competitions (Award prizes
are subject to change):
The Dairy Foods Division (Manfred Kroger) winners are determined on the
basis of the oral presentation. The Division will give one first place award of
$750, one second place award of $500 one third place of $250 and the two
runners up will receive awards of $100 each.
The Food Microbiology Division (Z. John Ordal) winners are determined on the
basis of the oral presentation and the Division will give first, second and third-
place awards of $300, $200, and $100 and two honorable mention awards of $50
each.
All oral competitions will be scheduled and judged at the same time on Sunday
from 4:00-5:35 p.m.

The Division oral competitions will run as they have in years past with up
to six finalists presenting for 15 minutes (12 minutes presentation and 3
minutes Q&A).

2011 George F. Stewart IFT International
Research Paper Competition
OPEN ONLY TO RESEARCH CONDUCTED OUTSIDE THE U.S. AND
SUBMITTED BY A PRIMARY AUTHOR (STUDENT OR PROFESSIONAL)
WHO IS A NON-U.S. CITIZEN.
Purpose
The purpose of the competition is to recognize food science and technology
research conducted in countries other than the United States of America. The
International Division encourages professionals and students entering the
International Paper Competition to think on global food science and technology
issues and the needs of all people in the world. We expect this competition will
help IFT reach its goal of becoming a global organization, promote the diversity
of opportunities and needs in a shrinking world, and recognize the diverse and
rich research skills of the international members of IFT.
How to Enter
All entries must comply with the ―Call for Abstracts Submission Guidelines‖ at
www.ift.org.
A primary author can submit no more than one paper in the competition. At least
one author must be a member in good standing of IFT or an IFT Allied
Organization. Entry in the competition is requested by checking the appropriate
box during online submission at www.ift.org. Participation in the International
Research Paper Competition does NOT preclude participation in other
Annual Meeting competitions. (The authors must choose one IFT Division that
will review the competing abstract for acceptance at the Annual Meeting. This
choice includes the International Division or any of the IFT Divisions.)
The authors must send an curriculum vitae for the first author, a brief description
of the research center where the work was performed, and an additional copy of
the abstract to the Chair of the International Research Paper Competition Jury:

Judging
Only abstracts accepted for presentation by the Scientific Program Subpanel will
be evaluated by the International Paper Competition Jury. Each abstract will be
judged using the following criteria:
(a) Research relevance;
(b) Research quality;
(c) Materials and methods used;
(d) Discussion of results and conclusions; and
(e) Clarity of presentation.
The Jury will use a point system to differentiate author career stage and research
resources available.
As a result of the abstract evaluation, the jury will select up to five entries and
finalists. The primary author will be advised of his/her selection no later than
February 25, 2011. Finalists must prepare a full paper following the format
required by the Journal of Food Science. Check out our web site for the

Submission of the paper does not lead to a review for publication. This paper
must be submitted no later than March 25, 2011 to the Chair of the International
Research Paper Competition Jury, Dr. Elvira González de Mejía, for evaluation
by five judges. Contact information for Dr. González de Mejía is listed in the
previous section.
The names of the finalists will be announced during the International Division
Luncheon at the Annual Meeting. Selection of the winners will be made soon
after all finalists have presented their work (either oral or poster) at the respective
scientific session as announced in the IFT Annual Meeting Scientific Program.

Stewart International Research Paper Competition, assume no responsibility
regarding the manner in which the cash prize is distributed by the coauthors
among themselves, except that funds are to be distributed only to authors
residing outside the U.S. If the winners cannot be present at the International
Division Luncheon where the prizes will be awarded, such prizes will be
forwarded to them by IFT.

Society for Laboratory Automation and Screening
(SLAS) Young Scientists Poster Award
Graduate and undergraduate students are eligible to participate in this poster
competition. SLAS will provide the top student poster author with a $500 (USD)
cash award, flight and shared hotel accommodations to present their winning
poster at LabAutomation2012 for the most outstanding poster presentation of
research involving unique and compelling laboratory automation. The judging
panel will evaluate each of the candidate's poster presentations on originality,
clarity of purpose, and seminal integration of automation and will collectively
select the winner of the SLAS Young Scientists Poster Award.
Review criteria:
Abstract and research must address one or more of the following:
unique and compelling laboratory technologies
and/or

10. Does my IFT member login and password work on the on-line
abstract management website?
Your IFT member login and password does not work when submitting an abstract.
When you first submit an abstract you must click the ―Create New Account‖
link on the submission site.
11. Does the Division I select for review of my abstract have to be the
same Division related to a competition I want to compete in?

SAMPLE
higher plants, major intrinsic proteins (MIPs), or aquaporins, are mercury-sensitive
channel-forming proteins selective for water, ions, and other solutes. Mercury is believed
to sterically block water channels by binding to a cysteine adjacent to the pore. We
hypothesize that mercury may also induce conformational changes in aquaporins
leading to a loss in function. We have identified two plasma membrane intrinsic proteins
(PMIPs) of 31 and 27 kDa from storage tissue of Beta vulgaris L.
Limited proteolysis using trypsin and Pronase E was conducted using rightside-out
plasma membrane vesicles. Immunoblotting using affinity-purified polyclonal antibodies
recognizing PMIP31 was used to detect divalent cationinduced changes in polypeptide
fragmentation patterns.
Our results showed that, in the absence of divalent cations, PMIP31 remained intact. In
the presence of mercuric compounds, a unique proteolytic fragment of 22 kDa (p22) was
produced from PMIP31 using either trypsin or Pronase E. Removal of unbound mercury
and treatment with 1 mM EDTA before the addition of trypsin did not prevent p22
formation. Moreover, formation of p22 was not the result of endogenous proteolytic
activation by mercury. Incubation of the membranes with the detergent digitnonin at
0.1% during proteolysis caused the complete hydrolysis of PMIP31, indicating that
proteolytic sites are deeply embedded with the PM.
These results suggest that mercury binds tightly to the PM and induces conformational
change in PMIP31 such that previously inaccessible cleavage sites become exposed.
This alteration may result in a loss of the ability of membranes to regulate water
permeability. Therefore, conformational changes of membrane channel proteins may
parallel the ripening process, and have significance for maintaining fruit and vegetable
quality.

evidence-based and I will disclose my relationship to the products/services from
that entity. Additionally, I will not sell while presenting and will avoid any

I assume full responsibility for securing the necessary clearance and permission
for publication and presentation from any third party holding rights to any of the

PowerPoint Distribution
I give the Institute of Food Technologists permission to produce videotapes, CD-
Roms and/or other electronic media of my PowerPoint presentations and
handout materials presented at the 2011 IFT Annual Meeting & Food Expo , for
promotional use and/or sale by IFT or its vendors.

Background Information: IFT has retained the services of an education recording
services company, to capture the audio and PowerPoint presentations at the
Annual Meeting so that attendees can purchase all available presentations or
individual sessions they missed. This is a service that has been offered for years
at the IFT Annual Meeting & Food Expo. The PowerPoint slides will be linked
with your audio file only if you give us permission below. Your PowerPoint
presentation will be protected in a PDF format and are watermarked so that
individuals may not be able to copy and re-use your presentations.
PowerPoint Revisions
I understand that any revisions to my presentation must be uploaded through the
presentation management system at least 25 minutes in advance of when my
session starts. The updated copy will then be sent electronically to my session
room.
