Call for Abstracts Overview

The Institute of Food Technologists (IFT) welcomes the submission of quality and
original food science and technology research for presentation at the 2011
Annual Meeting & Food Expo®.

Scientific Program Goals


In 2011, IFT will continue and expand upon its’ long standing history of offering
the best and most comprehensive food science educational program by:
1. Providing cutting-edge, top quality scientific research and programming by
leading food science professionals and researchers.
2. Offering relevant research and programming on key foucs areas facing
food science professionals, consumers and the industry.
3. Presenting both basic and transformative research and applied science.
4. Maximizing the attendee value through their participation in the scientific
program.

An accepted session honors the scientific and scholarly achievements of the


presenters and helps contribute to the growth of the food science and technology
field. Each year, as many as 1,800 abstracts are submitted to IFT for
consideration. IFT’s Divisions are charged with reviewing all abstracts and
recommending the ―best of the best‖ among them for the 2011 schedule. IFT
welcomes and appreciates all who submit abstracts and looks forward to another
successful year.

Abstract Submission Categories

Individuals may submit their research for consideration in one of the following

Right of First Refusal

IFT reserves the right to publish the accepted abstracts in a Book of Abstracts,
on the IFT website or both. Authors are not required to submit papers for
publication. Papers should not have been published prior to the meeting. The
right of first refusal applies to all research, science and technology
abstracts/papers presented at the Annual Meeting. Authors are encouraged to
submit their papers for consideration in IFT’s publications—the Journal of Food
Science (JFS), Comprehensive Reviews in Food Science and Food Safety
(CRFSFS), the Journal of Food Science Education (JFSE), and Food
Technology. As soon as possible after the Annual Meeting, authors should visit
http://mc.manuscriptcentral.com/jfs to submit their manuscripts to JFS, CRFSFS,
and JFSE. To submit to Food Technology, contact Bob Swientek at
bswientek@ift.org. Call the IFT Publications Office at 312-782-8424 for further
information. Those who do not wish to publish their papers in IFT publications
but rather other journals should also contact Bob Swientek to request permission.

Presenter Information and Reimbursement Policy


IFT is extremely appreciative of the hard work, dedication and expertise
presenters provide each year. Without this help the IFT Annual Meeting would
not be a success.

Presenter Affirmations
All submitters will be asked to complete a series of affirmations to let IFT know
they accept, are aware of the important deadlines and that they will follow
standard presenter protocols. There are a few affirmations that presenters do not
have to accept such as giving IFT the right to audio or videotape the presentation
(for oral presentations) and distribute the PowerPoint slides.

Refer to Appendix C for a listing of the presenter affirmations.

Reimbursement for Invited Presenters


IFT does not reimburse presenters for travel, hotel, registration fees or other
expenses incurred during the Annual Meeting.

Abstract Submission Guidelines

Submission Deadline: December 7, 2010 by 4pm Central Time


Time for informing acceptance/rejections: February 10, 2011

Individuals interested in submitting timely and high-quality science papers


whether by oral or poster presentation are encouraged to submit under this
section. Additionally, graduate student and international abstract competitions
are a part of this submission process. More information on all of these
submission opportunities are detailed in this section.

Abstract Selection Criteria


IFT reserves the ultimate right to select abstracts submitted for review by the
Scientific Program Subcommittee based on quality factors including, but not
limited to:
o Scientific merit,
o Relevancy to the food science industry,
o Innovation,
o Practical application of content,
o Pertinence to Division and tracks, and
o Pertinence to target audience(s).

Abstracts failing to meet one or more quality factors will not be selected.

Oral vs. Poster Presentations


 Papers accepted to oral or poster sessions will possess the same
scientific merit.
 You may indicate a preference for oral or poster presentations. Limited
oral sessions will be available for presenting abstracts. Division reviewers
will help decide if a paper will be selected for oral presentation or if it will
be scheduled for a poster presentation due to space limitations.
Submitters may also indicate a preference to present orally only, however,
there is no guarantee whatsoever that this preference will be satisfied. In
the event that an orally only submission is not scheduled for a oral session,
than it will also not be considered for presentation in a poster session, and
thus will be declined from the program altogether.
 Unless a quality delivery is assured, presenters are advised to submit in
the poster category. A very limited number of the papers will be accepted
in the oral presentation category.
 IFT reserves the right to assign accepted abstracts to oral or poster
sessions due to scheduling issues. Most abstracts will be scheduled for
poster presentations.

Poster Presentations
Poster presentations provide the opportunity for the presenter and the audience
to talk with one another. A physical arrangement similar to an exhibit area is used
for this interaction. Each presenter is provided with a freestanding bulletin board
on which to display the poster. A relatively large number of posters will be
displayed during each poster session. During the designated period, the
audience moves through the poster displays, stopping to interact with those who
are presenting research that is of special interest to them. Poster presenters
should come prepared with a 3-5 minute oral presentation to provide interested
attendees. Some poster presenters find it useful to have selected handouts for
interested attendees visiting their posters. These could be a reduced photocopy
of the poster, selected data/conclusions, or other relevant material. This is
completely optional.

Oral Presentations
The oral presentation of a paper is typically limited to 20-minutes in total. Of this
time there is a 15-minute allotment for the presentation of your research with an
additional 5 minutes for questions. Speakers should rely on handouts for all
supplemental materials; however, audio visual equipment is available during the
presentation. Some oral presenters find it useful to have selected handouts for
interested attendees at their presentation. This is completely optional and of the
presenters’ responsibility.

In the 2011 Annual Meeting, oral sessions will have a total of four abstract
presentations.

Student Professional Development Oral Sessions


Select students with the highest reviewed papers who are accepted to give a
poster presentation will be given an opportunity to also present orally in front of
professionals and peers to gain experience and feedback on their presentations.
Limited ―Student Professional Development Oral Sessions‖ will be created
throughout the Annual Meeting for this professional enhancement experience. As
part of the poster presentation acceptance process, students that accept to
present a poster will also be able to indicate if they are interested in being
considered to present in a Student Oral Professional Development session.

Presentations should be not more than 15 minutes total, including 3 minutes of


questions and answers. PowerPoint presentations are encouraged.
Presentations should adequately cover:
1. Justification;
2. Objective;
3. Methods;
4. Results and
5. Significance of research to the food science field.

Abstract Submission Rules
 The data presented must not be published before the meeting.
 The data presented must be substantive. IFT discourages the submission
of incomplete research at the time of submission. Recent results may be
added at the time of presenting. However, the results shown in the
abstract must be substantive.
 Abstracts MUST address the following:
1. Justification
2. Objective
3. Methods
4. Results
5. Significance of your research to the food science field.
 Authors should not split data to create several abstracts from one study. If
two or more abstracts on related topics with minimal information are
submitted, priority of related abstracts will be reduced.
 Data must represent new findings obtained using the scientific approach.
Data similar to previous presentations should not be submitted. Findings
should be stated in sufficient detail to support conclusions.
 The abstract must cite quantitative data from representative experiments.
Do not simply state that the results will be discussed.
 Abstracts may be no longer than 300 words.
 Standard abbreviations may be used without definition. Nonstandard
abbreviations must be kept to a minimum, and must be placed in
parentheses after the first use of the word or phrase abbreviated.
 Do not include references, credits or grant support.
 Abstracts dealing with commercial products or services must have a
scientific emphasis and should not be submitted for promotion purposes.
See New Products and Technologies Submission Guidelines for abstracts
of this nature.
 All abstracts must use correct grammar and punctuation.
 Proofread very carefully for formatting, spelling, and grammar to avoid
errors before submission. The 300-word standard abstract will be
published exactly as it has been submitted.
 Tables and images may NOT be included in the abstract.
 All authors must have a copy of the abstract before the time of submission.
 At least one of the authors must be a member in good standing of the
Institute of Food Technologists or one of the non-U.S. IFT Allied
Organizations.
 Incomplete proposals will not be reviewed.

NOTE: Individuals interested in promoting a particular commercial product or


service are encouraged to participate as exhibitors in the Food Expo ®. New and
unique products or technologies introduced between January 2008 and 2011

should be considered for the New Products and Technologies abstract
presentations. See the Call for New Products & Technologies Abstracts
Submission Guidelines for more information.

A checklist of information requested at the time of abstract submission can


be found in Appendix A. This will enable submitters to prepare their
submissions prior to submitting on-line if they prefer.

Refer to Appendix B for a sample abstract.

Abstract Revisions
Changes are not permitted after submission deadlines. All authors must be
listed at time of submission. No changes will be made after the submission
deadline.

Abstract Withdrawal
Submit withdrawal requests in writing by May 9, 2011 to avoid publication.

Abstract Review and Acceptance


Abstracts will be peer-reviewed in a multi-step process. Each abstract must be
submitted to one appropriate Division for consideration. Abstracts will be peer-
reviewed by experts in the Division to which they are submitted.
 Each abstract will be critically evaluated by at least three reviewers and
the selection will be based on the abstract selection criteria listed above.
 Any abstracts submitted not meeting the criteria and adhering to these
guidelines will not be selected.
 The same quality and scientific merit standards will be applied to both oral
and poster presentations.
 Possible reasons for abstract rejection
o Information is not new or is similar to previous
presentations/publications
o Methods are not appropriate or informative
o Statistical analysis incorrect or missing
o Results are not clearly presented, discussed or interpreted
o Findings are insufficient to support the conclusion
o Incomplete study, not substantial
o Promote commercial products, not science, as the primary goal
o Do not follow the format guidelines
o Many language errors
o Topic not relevant to IFT members

Notifications
All presenting authors will receive e-mail notification of abstract status on
February 10, 2011. Notices will be sent to presenting authors only.

It is the responsibility of the presenting author to inform all co-authors and faculty
advisors of disposition status and abstract scheduling information (if accepted).
Please check with all authors regarding acceptance before contacting IFT.

All notices will be sent as bulk email messages. Many times web-based email
accounts (e.g., Hotmail, AOL and Yahoo) automatically send bulk email
messages into the spam folder. Please check both your inbox and your junk
mail folder for your disposition notice.

If you have not received your e-mail by February 12, please contact the IFT
Knowledge & Learning Department by email at IFT_Knowledge@ift.org . It is
the responsibility of the presenting author to ensure that he/she has a valid
and current email address. This will ensure timely delivery of your abstract
disposition notice.

By submitting an abstract IFT assumes you will be in attendance to present if


your submission is scheduled.

Poster Presentation Guidelines

Presentation
 If a paper is accepted, the author(s) must attend the meeting to present it.
Failure to show up to present the paper, if not justified in advance, will
jeopardize the acceptance of papers submitted by the author(s) for the
next three IFT Annual Meetings.
 Poster presenters must be available for at least the first two hour period
during their session to discuss their work. Failure to be present during this
period of time will be regarded as not showing up for the meeting and will
jeopardize the future acceptance of their papers by IFT. Poster
presenters are encouraged, however, to stay for the entire period of the
poster session.
 Posters must be sized so that they can fit on the 4ft tall by 8ft. wide display
board that IFT provides each poster presenter. Your Poster must be
smaller than 4ft. wide by 8ft high.
 Presenters in competition must remain at their posters for the entire time.
Failure to do so may eliminate them from competition.
 Papers scheduled for poster presentation will be numbered and listed in
the program booklet.

IFT Will Provide: A 4 ft. tall by 8 ft. wide board as a display area. ―Dots‖ with
adhesive on one side and Velcro on the other will be available at the poster
session.
Signage identifying your paper number and the title will also be provided. Authors
on hand to discuss their research results during the attended period of the
sessions will be identified by their name badges received at registration.

You Must Provide: An abstract of your paper


and illustrations in a size and format suitable for
poster display. In addition, it is suggested that
you prepare brief statements of the purpose of
your work, your experimental methodology and
design, and the major results of your findings
and their implications.

The abstract and illustrations must be readable


by interested viewers from a distance of about
three feet or more. Text material should be
printed from a laser printer with a font size Sample of the poster board display

Keep illustrations simple. Simple use of color, however, can add emphasis. Any
photograph should be a minimum of 8‖ x 10‖. Minimum size for all other
illustrations is 9‖x 12‖.

Do not mount your illustrations on heavy boards because these may be difficult
to place in position on the poster boards using the Velcro dots.

For suggestions regarding the preparation of posters, each presenter will be sent
a link to the IFT Presenter Resource web page that includes a link to ―Thinking
Verbally: Communication Tips for Technical Presentations‖ and ―Thinking
Visually: Graphic Tips for Technical Presentations‖ to assist them in preparing
their presentation.

Optional Materials
Some poster presenters find it useful to have selected handouts for interested
scientists visiting their posters. These could be a reduced photocopy of the
poster, selected data/conclusions, or other relevant material. This is completely
optional.

Display Hours and Expectations (Times are subject to change)

The IFT poster sessions are staggered against the times of the scientific program,
so as to decrease the overlap between the poster sessions and the scientific
program technical sessions. As in previous years, poster presenters will still be
asked to set up their posters 30 minutes prior to the start of the poster session.
A detailed list of the 2011 poster session times and their corresponding set up,
and tear-down times will be forthcoming.

All posters must remain on display for the entire duration of the poster session.
Posters must be attended by the authors for at least the first two hours of the
poster session. Tear-down must be completed no later than 30 minutes after the
poster session has ended. Posters left up after the tear-down period will be
removed and disposed of by IFT staff.

IFT staff members and student monitors will be available during the setup period
to provide authors with the materials needed to mount the data and illustrations.
The student monitors will be available during the entire session to provide
authors with any information or assistance they may need.

Oral Presentation Guidelines
Below are the basic guidelines for the technical research paper oral session
presentations:

1) Unless otherwise instructed, talks should be structured for 15 minutes plus 5


minutes of questions and answers for a total presentation time of 20 minutes.

2) Limit slides to 10-15, including a title. Please include contact information


and/or your company’s booth number at the end of the presentation.

3) Presentations must be uploaded no later than June 1, 2011.

4) Session moderators will arrive 25 minutes prior to the session to allow


presenters to quickly review their talk before the scheduled start of the program.

5) Any revisions to your presentation must be uploaded through our presentation


management system at least 20 minutes in advance of when your session takes
place. The revised session will be electronically transferred to your session room
within 10 minutes of being uploaded in the presentation management collection
system.

6) Failure to show up to present the paper, if not justified in advance, will


jeopardize the acceptance of papers submitted by the author(s) for the next three
IFT Annual Meetings.

Graduate Student Research Paper Competition
Guidelines
Submission Deadline: December 7, 2010 by 4pm Central Standard Time

Eligibility
 Students entering the competition must be members of the IFT Student
Association by December 7, 2010, and should not have graduated earlier
than June 30, 2010.
 The student entering the competition must be the principal author of the
paper. The entrant’s name must be listed first to denote the student as the
speaker.
 All research must have been completed while the entrant was a graduate
student.
 The paper must be accepted to present at the IFT Annual Meeting
Scientific Program.
 A student may submit only one paper in the competition in any one year
with the exception of the George F. Stewart/International Research Paper
Competition, Society for Laboratory Automation and Screening (SLAS)
Young Scientists Poster Award and the American Association of Food
Scientists for the Indian Sub-continent (AAFSIS) Student Paper
Competition, which may be entered in addition to a Division competition.

How to Enter
 All entries must comply with the ―Call for Abstracts Submission
Guidelines.‖
 If you are entering a poster competition, you must select POSTER ONLY
on-line and if you are entering an oral competition, you must select ORAL
PREFERRED. If you do not choose the appropriate presentation format,
your abstract may be automatically disqualified from the competition.
 If accepted, it must be presented at the Annual Meeting, regardless of the
outcome of the judging for the competitions.

Poster Competition Timeframe and Approach


All poster competitions will be scheduled and judged at the same time on
Saturday from 1:00-2:45 p.m.
 Poster finalists will be asked to set up and be prepared for judging during
this time, prior to the IFT Awards Ceremony and opening reception.

 Each Division’s competition finalists will be located together allowing
judges to efficiently assess the merit of each finalist during a time before
the majority of Annual Meeting & Food Expo events commence. This will
allow for greater efficiency of the judges’ time and ensure better
recognition of the finalists throughout the meeting.

 Abstracts of all accepted papers are judged by each Division or


competition jury to determine the finalists.

 Finalists will learn which place they have been awarded between 3:00 -
4:30 p.m. during the Phi Tau Sigma reception and awards ceremony.
Details are being finalized and will be communicated to finalists in the
spring.

 First place winners of each competition will be asked to display their


winning poster, interact with attendees and receive informal recognition
during the opening receptions that immediately follows the Awards
Ceremony.

 Additional recognition will be given to Division competition winners when


the finalists present their poster for a second time to all attendees (during
their regularly scheduled presentation). The winners will be recognized
with a ribbon stating where they have placed (1st, 2nd, 3rd). All finalists
must still present their poster during their regularly scheduled poster
presentation time in addition to the competition judging.

Poster ONLY Abstracts are eligible for the following competitions (Award
prizes are subject to change):

The Aquatic Food Products Division winners are determined on the basis of
an abstract and presentation, either oral or poster. The Division will give one first
place award of $500, two second place awards of $350, and two third-place
awards of $250.

The Biotechnology Division winners are determined on the basis of the poster
presentation. The Division will give first and second place awards of $300
and$200 and two third place awards of $100 each.

The Carbohydrate Division preliminary selection is based on the abstract. The


finalists are then identified and the winners are determined on the basis of their
presentation, either oral or poster. The division will give first, second and third
place awards of $500, $400 and $300.

The Citrus Division Preliminary finalists (3-5) will be selected on the basis of the
abstract. A winner will be selected from the oral presentations (or poster

presentation) given by the finalists during the IFT Annual Meeting. The entries
will be judged for scientific merit, clarity and professionalism of the presentation.
The winner of the competition will receive a plaque and check for $300 from the
IFT Citrus Products Division.

The Dairy Foods Division (John C. Bruhn) winners are determined on the basis
of the poster presentation. The Division will give one first place award of $500,
one second place award of $250 one third place of $150 and the two runners up
will receive awards of $75 each.

The Food Chemistry Division winners are determined on the basis of the
poster presentation. Five finalists will be selected from the applicants to compete
in the competition at the meeting. The Division will give first, second and third
place awards of $500, $300, and $200 and two awards of merit for $100 each.

The Food Engineering Division winners are determined on the basis of an


extended abstract. The Division will give first, second and third place award of
$1,000, $500 and $250.

The Food Microbiology Division (John C. Ayres) winners are determined on


the basis of the poster presentation. The Division will give first, second and third-
place awards of $300, $200, and $100 and one honorable mention award of $50.

The Food Packaging Division winner is determined on the basis of the poster
presentation. The Division will give first, second and third-place awards of $500,
$350, and $100.

The Foodservice Division awards are to be given to graduate students for their
meaningful research contribution to the foodservice industry. The Division will
give first, second and third place award of $1,000, $500 and $250, and two fourth
place awards at $100 each.

The Fruit and Vegetable Products Division winners are determined on the
basis of the poster presentation. The Division will give first, second, and third-
place awards of $400, $300, and $200 and 2 fourth place awards of $100 each.

The Marketing & Management Division Graduate Paper Competition finalists


are determined on the basis of the poster presentation. The first place winner
will receive an award certificate plaque and check for $1,000. Second and third-
place awards of $750 and $500, respectively, will all be given.

The Muscle Foods Division Graduate Paper Competition finalists are


determined on the basis of submitted abstracts. Finalists will be required to give
an oral presentation (in addition to the poster) during the Muscle Foods Division
business/social meeting. The Division will give first, second, and third-place
awards of $900, 700, and 500.

The Nonthermal Processing Division winners are determined on the basis of


the poster presentation. Six finalists will be selected from ten semi-finalists to
submit extended abstracts. The Division will give first, second, and third-place
awards of $700, $500, and $300.

The Nutraceuticals and Functional Foods Division will be determined on the
basis of the poster presentation. The Division will give first, second and third
place awards of $500, $400 and $300.

The Nutrition Division (Mark L. Bieber) winners are determined on the basis of
the poster presentation. The Division will give one first place award of $700, one
second place award of $500, one third place award of $300 and two fourth place
awards of $100 each.

The Product Development Division winner is determined on the basis of the


poster presentation. The Division will give first, second, and third-place awards of
$1,000, $750 and $500. Fourth and fifth place will receive honorary awards of
$100 each.

The Refrigerated and Frozen Foods Division (IFT RFFD-Seafood Products


Association) competition winners are determined on the basis of the poster
presentation. The Division will give first and second awards of $300 and $200.

The Susan L. Hefle Toxicology and Safety Evaluation Division winner is


determined on the basis of the poster presentation. Finalists in the paper
competition are given a one-year membership to the Division. The Division will
give first, second and third place awards of $750, $500, and $300.

Oral Abstracts ONLY are eligible for the following competitions (Award prizes
are subject to change):

The Dairy Foods Division (Manfred Kroger) winners are determined on the
basis of the oral presentation. The Division will give one first place award of
$750, one second place award of $500 one third place of $250 and the two
runners up will receive awards of $100 each.

The Food Microbiology Division (Z. John Ordal) winners are determined on the
basis of the oral presentation and the Division will give first, second and third-
place awards of $300, $200, and $100 and two honorable mention awards of $50
each.

The Sensory and Consumer Sciences Division (Rose Marie Pangborn)


winners are determined on the basis of an oral presentation. The Division will
give first, second, and third-place awards of $1,050, $800, $550.

Division Oral Competitions Timeframe and Approach

All oral competitions will be scheduled and judged at the same time on Sunday
from 4:00-5:35 p.m.

 The Division oral competitions will run as they have in years past with up
to six finalists presenting for 15 minutes (12 minutes presentation and 3
minutes Q&A).

The International Division Research Paper Competition, named in honor of


George F. Stewart (1967-68 IFT President), was inaugurated as part of IFT's
50th Anniversary Celebration in 1989. The competition is administered by the IFT
International Division.

Purpose
The purpose of the competition is to recognize food science and technology
research conducted in countries other than the United States of America. The
International Division encourages professionals and students entering the
International Paper Competition to think on global food science and technology
issues and the needs of all people in the world. We expect this competition will
help IFT reach its goal of becoming a global organization, promote the diversity
of opportunities and needs in a shrinking world, and recognize the diverse and
rich research skills of the international members of IFT.

How to Enter
All entries must comply with the ―Call for Abstracts Submission Guidelines‖ at
www.ift.org.

The research must be conducted by a primary author who is a non-U.S. citizen,


and the research should be conducted outside the United States. This
competition is open to students and professionals.

A primary author can submit no more than one paper in the competition. At least
one author must be a member in good standing of IFT or an IFT Allied
Organization. Entry in the competition is requested by checking the appropriate
box during online submission at www.ift.org. Participation in the International
Research Paper Competition does NOT preclude participation in other
Annual Meeting competitions. (The authors must choose one IFT Division that
will review the competing abstract for acceptance at the Annual Meeting. This
choice includes the International Division or any of the IFT Divisions.)

The authors must send an curriculum vitae for the first author, a brief description
of the research center where the work was performed, and an additional copy of
the abstract to the Chair of the International Research Paper Competition Jury:

Judging
Only abstracts accepted for presentation by the Scientific Program Subpanel will
be evaluated by the International Paper Competition Jury. Each abstract will be
judged using the following criteria:
(a) Research relevance;
(b) Research quality;
(c) Materials and methods used;
(d) Discussion of results and conclusions; and
(e) Clarity of presentation.

The Jury will use a point system to differentiate author career stage and research
resources available.

NOTE: Papers that have already been published or submitted to peer-reviewed


journals or to other meetings will be disqualified from this competition.

As a result of the abstract evaluation, the jury will select up to five entries and
finalists. The primary author will be advised of his/her selection no later than
February 25, 2011. Finalists must prepare a full paper following the format
required by the Journal of Food Science. Check out our web site for the

Submission of the paper does not lead to a review for publication. This paper
must be submitted no later than March 25, 2011 to the Chair of the International
Research Paper Competition Jury, Dr. Elvira González de Mejía, for evaluation
by five judges. Contact information for Dr. González de Mejía is listed in the
previous section.

The names of the finalists will be announced during the International Division
Luncheon at the Annual Meeting. Selection of the winners will be made soon
after all finalists have presented their work (either oral or poster) at the respective
scientific session as announced in the IFT Annual Meeting Scientific Program.

Awards and Recognition


The first-, second-, and third-place winners receive $700, $500, and $200,
respectively. All five finalists will be recognized at the International Division
Luncheon and will receive certificates of recognition. The five finalists will also
receive a free one-year personal subscription to one of Elsevier’s food science
journals.

The primary author will receive complementary one-year membership in the


International Division. In the case of a winning paper authored by two or more

persons, the Institute of Food Technologists and the organizers of the George F.
Stewart International Research Paper Competition, assume no responsibility
regarding the manner in which the cash prize is distributed by the coauthors
among themselves, except that funds are to be distributed only to authors
residing outside the U.S. If the winners cannot be present at the International
Division Luncheon where the prizes will be awarded, such prizes will be
forwarded to them by IFT.

The accomplishments of Dr. George F. Stewart, the generous contributions of


the competition sponsor, and the competition finalists will be recognized at the
Phi Tau Sigma reception and Award Ceremony sponsored by the Phi Tau Sigma
Honorary Society at the Annual Meeting on Tuesday, June 14, 2011. Finalists
should arrange their travel departure for Wednesday, June 15 or after. The
International Division home page will also announce the finalists and include the
research abstract and pictures.

Society for Laboratory Automation and Screening
(SLAS) Young Scientists Poster Award
Graduate and undergraduate students are eligible to participate in this poster
competition. SLAS will provide the top student poster author with a $500 (USD)
cash award, flight and shared hotel accommodations to present their winning
poster at LabAutomation2012 for the most outstanding poster presentation of
research involving unique and compelling laboratory automation. The judging
panel will evaluate each of the candidate's poster presentations on originality,
clarity of purpose, and seminal integration of automation and will collectively
select the winner of the SLAS Young Scientists Poster Award.

The SLAS Young Scientists Awardee will be required to submit a manuscript


based on the winning poster presentation to the SLAS peer-reviewed scientific
journal: Journal of the Association of Laboratory Automation (JALA) for
publication by June 1, 2011.

Review criteria:
Abstract and research must address one or more of the following:
 unique and compelling laboratory technologies

and/or

 automation inclusive but not limited to:


o micro/nanotechnologies,
o detection and separation,
o high-throughput screening, and/or

IFT-AAFSIS (American Association of Food Scientists
for the Indian Sub-Continent)
Student Paper Competition

The American Association of Food Scientists for the Indian Sub-continent


(AAFSIS) will sponsor a poster competition at the IFT Annual Meeting, beginning
in 2011. The purpose of the award is to encourage student research relating to
the quality and nutrition of the food supply in the Indian sub-continent which is
also pertinent to other emerging nations.

ELIGIBILITY:

 Students entering the competition must be members of the IFT Student


Association by December 7, 2010, and should not have graduated earlier
than June 30, 2010.

 The student entering the competition must be the principal author of the
paper. The entrant’s name must be listed first to denote the student as the
speaker.

 All research must have been completed while the entrant was a graduate
student.

 The paper must be accepted to present at the IFT Annual Meeting


Scientific Program.

 A student may submit only one paper in the competition in any one year
with the exception of the George F. Stewart/International Research Paper
Competition, Society for Laboratory Automation and Screening (SLAS)
Young Scientists Poster Award and the American Association of Food
Scientists for the Indian Sub-continent (AAFSIS) Student Paper
Competition, which may be entered in addition to a Division competition.

PROCEDURE:

1. All entries must comply with the ―Call for Abstracts Submission
Guidelines.‖

2. You must select POSTER ONLY on-line. If you do not choose the
appropriate presentation format, your abstract may be automatically
disqualified from the competition. Additionally, you must indicate if your
paper meets the IFT-AAFSIS (American Association of Food Scientists for

the Indian Sub-continent (AAFSIS) Student Paper Competition criteria
during the submission process.

3. If accepted, it must be presented at the Annual Meeting, regardless of the


outcome of the judging for the competitions.

JUDGING:

1. Each AAFSIS Paper Competition paper accepted by IFT will be evaluated


by a panel of judges appointed by the AAFSIS. These judges will select
(3-5) finalists by reviewing the abstracts. A winner will be selected from
the poster presentations given by the finalists during the IFT Annual
Meeting.

2. The entries will be judged for scientific merit, clarity and professionalism of
the presentation.

AWARD:

1. The winner of the competition will receive a plaque and check for $500
from the AAFSIS, and second and third places will be $300, and $200
respectively.

2. Award winners will be recognized with IFT’s other poster competitions.

Frequently Asked Questions
Below are some of the most frequently asked questions during the abstract
submission process, with references to additional information in this set of
guidelines.

1. When is the deadline to submit abstracts?


Abstracts are due by December 7, 2010 by 4 pm Central Time.
Late submissions will not be accepted.

2. Can I make changes after the abstract submission deadline?


No. After the deadline, submitters will not be allowed to make changes.

3. When will I hear if my abstract was accepted for presentation?


Submitters will be notified on February 10, 2011.

4. Does submitting an abstract guarantee acceptance?


Unfortunately, it does not. Abstracts are peer-reviewed by Division Reviewers
based on the quality factors outlined in these guidelines. Any abstracts submitted
not meeting the quality factors will not be selected.

In some cases, abstracts that satisfactorily meet these requirements will also not
be selected due to limited program space and the higher quality of competing
abstract submissions.

5. What is the review process for abstracts?


Divisions will review all abstracts submitted to their Division only. They will accept
or reject them and the Division Lead Reviewer will recommend the highest rated
abstracts for scheduling.

6. Do I have to submit my abstract to the Journal of Food Science for


publication?
Yes. Submission of an abstract to the IFT Annual Meeting indicates that the
authors agree to give IFT the first opportunity to publish the work (right of first
refusal). Authors are encouraged to submit their papers for consideration in any
of IFT’s publications—the Journal of Food Science (JFS), Comprehensive
Reviews in Food Science and Food Safety (CRFSFS), the Journal of Food
Science Education (JFSE), and Food Technology. As soon as possible after the
Annual Meeting, authors should visit http://ift.ManuscriptCentral.com to submit
their manuscripts to JFS, CRFSFS, and JFSE. To submit to Food Technology,

Sensitivity of plasma membrane intrinsic proteins (aquaporins) to divalent cation-induced


conformational changes

Membrane proteins are thought to play an important role in post-harvest quality.


However, it has been difficult to correlate quality changes with specific polypeptides. In

SAMPLE
higher plants, major intrinsic proteins (MIPs), or aquaporins, are mercury-sensitive
channel-forming proteins selective for water, ions, and other solutes. Mercury is believed
to sterically block water channels by binding to a cysteine adjacent to the pore. We
hypothesize that mercury may also induce conformational changes in aquaporins
leading to a loss in function. We have identified two plasma membrane intrinsic proteins
(PMIPs) of 31 and 27 kDa from storage tissue of Beta vulgaris L.
Limited proteolysis using trypsin and Pronase E was conducted using rightside-out
plasma membrane vesicles. Immunoblotting using affinity-purified polyclonal antibodies
recognizing PMIP31 was used to detect divalent cationinduced changes in polypeptide
fragmentation patterns.
Our results showed that, in the absence of divalent cations, PMIP31 remained intact. In
the presence of mercuric compounds, a unique proteolytic fragment of 22 kDa (p22) was
produced from PMIP31 using either trypsin or Pronase E. Removal of unbound mercury
and treatment with 1 mM EDTA before the addition of trypsin did not prevent p22
formation. Moreover, formation of p22 was not the result of endogenous proteolytic
activation by mercury. Incubation of the membranes with the detergent digitnonin at
0.1% during proteolysis caused the complete hydrolysis of PMIP31, indicating that
proteolytic sites are deeply embedded with the PM.
These results suggest that mercury binds tightly to the PM and induces conformational
change in PMIP31 such that previously inaccessible cleavage sites become exposed.
This alteration may result in a loss of the ability of membranes to regulate water
permeability. Therefore, conformational changes of membrane channel proteins may
parallel the ripening process, and have significance for maintaining fruit and vegetable
quality.
