sirve en copitas de mariscos o algún platito apropiado. Adorna con eneldo y sirve
enseguida. Rinde para dos personas.
Espolvorea las pechugas con adobo. En un papel echa la harina y pasa cada
pechuga para que se impregne de harina. En un sartén derrite la mantequilla con
el poquito de aceite y cuando esté caliente, sofríe las pechugas hasta dorarlas por
ambos lados. Retíralas a un molde de hornear. Echa la mantequilla y el aceite si
es necesario.
Agrega el vino blanco al sartén y con la cuchara de madera, raspa el sartén para
que se disuelvan los pedacitos de harina. Únelo bien y viértelo sobre las
pechugas.
En la misma sartén derrite la mantequilla y sofríe el cebollín, añade las uvas y une
bien. Agrega la harina y une todos los ingredientes.
Agrega el caldo de pollo caliente y cocina moviendo todo el tiempo con una
cucharada de madera hasta que espese un poco. Añade el cilantro y únelo. Vierte
la salsa encima de cada pechuga.
Tapa el molde con papel de aluminio y hornea en horno precalentado a 170 grados
por 30 minutos. Retira del horno y destápalo. Pon las pechugas en una fuente de
servir y riega un poco de salsa encima, echando la restante en una salsera para
que cada cual se sirva más. Adorna con cilantro y uvas y sirve enseguida. Sirve 2

8. Preparar la Crema de chocolate batida y decorar los bordes
de la torta con ella sobre la torta repartir las cerezas y si se
desea decorar con crema batida. Refrigerar hasta el momento
de servir.
Valentine's Cupcakes
Yield: 36 Cupcakes
Frosting:
8 ounce cream cheese; softened
1 egg (egg safety)
1/3 cup sugar
Valentine Decorations:
Lips Puffy Picks
Valentine Glitter Ring
or similar
Preheat oven to 350F. Line cupcake baking pans with paper cupcake liners.
In large mixing bowl, combine flour, sugar, cocoa, baking soda and salt; set aside.

In second small mixing bowl, combine water, vegetable oil and vanilla. Add contents of
small mixing bowl to large mixing bowl and stir with mixing spoon to combine.
Using mixing spoon, ice-cream scoop, or soup spoon, fill cupcake liners half full with
cupcake batter.
Wearing oven mitts, place cupcake pans in oven; bake approximately 25 minutes or until
done. When done, wear oven mitts to remove pan from oven and turn off oven. Cool
completely.
In small mixing bowl, use electric mixer to combine cream cheese, egg and sugar. Using a
pastry bag with a star tip pipe frosting onto muffins. Decorate with muffin picks or rings.
Sprinkle sides with candy hearts if desired.
Yield: 12 servings.
Frosting:
1-1/2 cups whipping cream
1/4 cup confectioners’ sugar
Line two greased 9-in. heart-shaped pans with waxed paper and grease the paper; set aside.

In a small bowl, combine cocoa and water until smooth; cool. In a large mixing bowl,
combine 1 cup sugar, flour, baking soda and salt. Add egg yolks, oil, vanilla and cocoa
mixture; stir until smooth. In a small mixing bowl, beat egg whites until foamy. Add cream
of tartar; beat for 1 minute. Gradually add the remaining sugar, beating until soft peaks
form. Gradually fold into chocolate mixture.
Pour into prepared pans. Bake at 350 F for 18-20 minutes or until top springs back when
lightly touched. Cool for 10 minutes before removing from pans to wire racks to cool
completely; carefully remove waxed paper.
In a mixing bowl, beat cream and confectioners’ sugar. Spread frosting between layers and
over top and sides of cake. Spoon 1-1/2 cups of frosting into a pastry bag with a star or
round tip. Pipe a decorative lattice design on cake top and sides. Garnish with strawberries
and mint if desired. Refrigerate until serving.
Cake:
4 tablespoons unsalted butter, melted
Mousse Base:
1 cup heavy whipping cream
4 cinnamon sticks, broken in half

For Cake:
Preheat oven to 400 F. Place 8x2-inch heart-shaped cake ring on sheet of foil. Wrap foil up
sides of ring. Brush foil and inside of ring with 1 tablespoon butter; dust with flour. Place
on baking sheet. You could also use a buttered and floured 8-inch round cake pan with 2-
inch-high sides.
Sift flour, cocoa, and salt into medium bowl. Combine eggs and sugar in large metal bowl.
Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water).
Whisk until sugar dissolves, about 2 minutes. Remove from over water. Using electric
mixer, beat mixture until thick and billowy and heavy ribbon falls when beaters are lifted,
about 5 minutes. Sift half of dry ingredients over; fold in gently. Repeat with remaining dry
ingredients. Transfer 1/4 cup batter to small bowl; fold in 3 tablespoons butter. Gently fold
butter mixture into batter; do not overmix or batter will deflate. Transfer batter to ring.
Bake cake until tester inserted into center comes out clean, about 20 minutes. Transfer cake
with foil to rack; cool completely. (Can be made 1 day ahead. Cover and store at room
temperature.)
Strain cinnamon cream into large bowl; beat until soft peaks form. Stir finely chopped
chocolate in heavy small saucepan over low heat until smooth. Quickly fold warm
chocolate into whipped cream (chocolate must be warm to blend smoothly). Immediately
drop mousse by dollops over bottom cake layer; spread to within 3/4 inch of edge. Gently
press second layer, jam side down, atop mousse. Smooth sides of cake with offset spatula.
Chill assembled cake on rack while preparing glaze.
Bring cream, 1/4 cup water, corn syrup, and tea to boil in small saucepan, stirring
constantly. Remove from heat; steep 5 minutes. Strain into another small saucepan; return
to boil.
Remove from heat. Add coarsely chopped chocolate; whisk until smooth. Cool glaze until
thickened, but still pourable, about 30 minutes. Place rack with cake over baking sheet.

Slowly pour glaze over cake to cover, using spatula if necessary to spread evenly. Chill
until glaze is firm, at least 2 hours and up to 1 day. Place cake on platter and serve.

Mezclar todos los jugos en un highball de cristal llenó de hielo. Agregar un poco de
agua mineral, tapar y revolver. Sirve en un vaso largo adornado con una cereza y
un popote largo
