Inter College Competition of Culinary and Management Skills of Students From Institutes of Hotel Management & Catering Technology

Report on the Annual 10th Chandiwala Hospitality Ensemble 2011 A Curtain Raiser
Banarsidas Chandiwala Institute of Hotel Management & Catering Technology, New Delhi, established in 1999, is a Self-Financing and progressive Hotel Management College in the Country. This is the first and only Hotel Management Institute established under Guru Gobind Singh Indraprastha University, Delhi, awarding a Four-Year Degree in Hotel Management & Catering Technology and is approved by AICTE. The Institute is run under the aegis of noted philanthropic Society, Shri Banarsidas Chandiwala Sewa Smarak Trust Society, which counts education, health and sports among its primary functions. The Institution has been assessed and registered against the provisions of ISO 9001:2008 International Standard on 13 September 2011. BCIHMCT was also accredited by NAAC ( National Assessment and Accreditation Council) an autonomous body under University Grants Commission during the NAAC Accreditation Award Ceremony held in Bangalore on 24th April 2011. Outlook MDRA Survey (June 2010 and June 2011) has placed BCIHMCT among top ten Indias Best Professional Colleges among the Hotel Management Category. In order to enhance the creativity of the Professional Skills, the Institute has strived hard for the success of Annual Hospitality Ensemble with increased participation of Hotel Management Colleges across the country, under the banner, Chandiwala Hospitality Ensemble. The 10th Chandiwala Hospitality Ensemble, 2011 is being held this year from October 19th to 21st, with an objective to give an opportunity to young aspiring hoteliers to display their talents at the National level and interact with the experts from Industry. The Institute has been witnessing tremendous growth of this event. The IHMs look forward to this Ensemble and this year we have 30 teams participating in the various events highlighting the Professional Skills in the field of Culinary Art, Bar Tending Skills and Management Oriented Competitions like Hospitality Brain Twister and Hotel Design Specific Facility Planning. The teams comprise of participants headed by their respective Faculty. Above all, the Hotels in Delhi-NCR contribute their share by nominating their Chefs and Managers as Judges for the events, inspite of the Hotels having their own operational pressures. This year, two Hotel groups namely- Welcom Heritage Group and Intercontinental Hotel Group, have initiated an active Industry Institution partnership by being the Co and Associate Sponsors for this Mega Event.

This attempt of the Institute has taken BCIHMCT at an elevated platform as through this ensemble a close integration and interaction has been developed between the Education Sector of the Hospitality Industry with the Hotel Industry in Totality and also with the Sponsors who are the supply chain both to the Institutes as well as the Hotel Industry. BCIHMCT is all set to inaugurate its Annual 10th Chandiwala Hospitality Ensemble from October 19th to 21st, 2011. The Chief Guest for the Opening Ceremony will be Mr. Nalin Mandiratta, General Manager, Crowne Plaza, Rohini. Besides many other dignitaries the three day event will host 13 events in various fields of the Hospitality Industry namely - IHG Hospitality Brain Twister, Chandiwala Hotel Facility Planning and Designing Championship, California Prunes Dessert Competition, R-Pure Culinary Competition, Vegit Aloo Mash Culinary Competition, Luca Barwizard Bar Challenge, Cremica Culinary Challenge, Del-Monte Culinary Challenge, Dunar Rice Contest, Chandiwala Floral Decoration Competition, Remington Fruit and Vegetable Carving, Susta Culinary Wizard, Maggi Coconut Milk Powder Culinary Contest. This year the theme is Colours of India depicting various cultures, festivals, traditions and eating habits of its vast population in different regions belonging to distinct religions and ethnic groups. The students of Chandiwala will organize the theme dinner on 21st October showcasing their event management capabilities. At the Valedictory Function on 21st October Chief Guest, Mr. Nikhil Sharma, Assistant Vice President-Operations, The Lemon Tree Hotel Company and Guest of Honour, Mr. Ritesh Arora, Director HR, The Oberoi, New Delhi will be present to boost the morale of the participants. The Media collaborating for this event are Hospitality Biz, Hospitality Biz India.com, Spiritz Magazine, Hotels and Restaurants Network, Bakery Biz, Hospemag (The Hospitality E-Magazine) and Tourism & Trade. The three day ensemble preloaded by a Press Conference on 14th October 2011 was also organized. Eminent personalities from the media both Trade Media and National Media participated in the conference. The proceedings of each day were flashed to the media at the conclusion of each days programme and the same are being attached herewith along with this report.

Highlights of the Press Conference on 14th September, 2011


Banarsidas Chandiwala Institute of Hotel Management & Catering Technology, New Delhi, organized a Press Conference to highlight the events of 10th Chandiwala Hospitality Ensemble, being held this year from October 19th to 21st, with an objective to give an opportunity to young aspiring hoteliers to display their talents at the National level and interact with the experts from Industry. The Press Conference was intiated by Mr. R.K. Bhandari, Principal, BCIHMCT where he welcomed the Media personalities and introduced the panel. He then emphasized upon the fact that this event serves as a platform to various Hotel Management Colleges to showcase their talents and skills. He showed his delight on the overwhelming response from the Industry and Institutes for this event, which helps in developing a better interaction and understanding between the two. He also mentioned that this year, two Hotel groups namelyWelcom Heritage Group and Intercontinental Hotel Group, have initiated an active Industry Institution partnership by being the Co and Associate Sponsors for this Mega Event. He also appraised the media about the Institute followed by a detailed presentation about the 10th Chandiwala Hospitality Ensemble 2011. Dr. Bhuwan Mohan, Secretary, Shri Banarsidas Chandiwala Sewa Smarak Trust Society welcomed the delegated from the Press and Media and explained how this event has become an annual feature for Hotel Management Institutes all over. He enlightened the gathering how the sponsors, participants and the Hotels are benefited as these three bodies are interlinked and inter-related. In the end Mr. R.K. Bhandari announced the International Conference organized by the Institute from 1st to 3rd February, 2012.

Highlights of the first day of 10th Chandiwala Hospitality Ensemble 2011


One of the largest hospitality events "The 10th Chandiwala Hospitality Ensemble 2011" began with all the rituals of inauguration. The crowd comprised of young Hotel Management students from across the country, their faculties, the Media (trade and print) and eminent personalities from the Hospitality Industry. The 10th Chandiwala Hospitality Ensemble's inauguration started with lamp lighting by Mr. Nalin Mandiratta, General Manager, Crowne Plaza, Rohini, Mr. R. K. Bhandari, Principal, BCIHMCT and Mr. Pradeep Gupta, Deputy Director Administration. Mr. Sachin Gupta, Human Resource Manager, IHG - South West Asia, was also present on this occasion. Mr. Bhandari welcomed the dignitaries and the participating teams. He emphasized upon the fact that the institute has formed lasting relationships with hospitality professionals and educational institutions, transcending borders of time and distance, through this Ensemble. He showed his delight on the overwhelming response from the Industry and Institutes for this event, which helps in developing a better interaction and understanding between the two. Mr. Nalin Mandiratta congratulated the college for completing a decade and mentioned that this Ensemble has become a prestigious event in the Hospitality sector. He was impressed by the number of participating colleges and announced the event open. The first competitive event of the day was Brain Twister which was a Hospitality Quiz Competition. Eighteen teams participated in this event. The event comprised of four rounds that had questions and visuals pertaining to the Hotel Operations and Management. The winners were Hitesh Shakya and Mohit Sehra from IHM, Kufri and runners up were Vicky Kumar and Udit Nagar, CIHM, Chandigarh. Brain Twister was followed by Hotel Design and Facility Planning Competition. The various Sale Points of the Hotels like Coffee Shop, Hotel Kitchens, Reception, Guest Rooms were planned by the students. The students were given a specific activity for making a Site Plan and Layout Plan based on architectural principles applicable to the Hospitality Industry, in detail. The contestants planned the given facilities which were judged and evaluated by the Judges from the Industry, comprising of Mr. D.D.Sharma, Director, IRCTC, Mr. Ashok Dhar, Chairman, ABL Hospitech, Mr. Taranjit Singh Chandpuri, Director Design and Engineering, IHG and Ms. Jyoti Khosla, Corporate Vice President, Royal Kapsons. Ten teams participated in this event.

Highlights of the second day of 10th Chandiwala Hospitality Ensemble 2011


On the International Chefs Day, 20th October, chefs around the world celebrate their profession while cooking up a storm in the kitchen, inventing new flavors and preparing delectable dishes, not only to feed but also to nourish. Similarly at Banarsidas Chandiwala Institute of Hotel Management, the budding chefs from different participating teams, during the Hospitality Ensemble, competed with each other in various culinary competitions throughout the day. The second day of the Mega Event started with a Culinary Competition of one snack and one dessert to be made in one and half hours time. This event was judged by Chef Yogender Pal, Executive Chef, The Claridges, Surajkund and Chef Vivek Saggar, Chef Consultant. Nineteen teams from IHMs participated in this event. The winners for this event were Rishab and Regina from Bcihmct (prepared Grenade Blast & Devil's Chamber). The runners up were Sayali Wagh and Shreyas Kulkarni from AISSMS, Pune (prepared Vegit Aloo Muthia and Vegit Pan with Rabri). Bar Challenge competition was next where each team made an innovative cocktail. The judges judged them various criteria like technique, bouquet, aroma, taste and appearance of the drink, flair with ice and bar equipment, overall efficiency and time frame prescribed. This was judged Mr. Gurmeet Singh Barry, Outlet Manager, EROS Hotel, Mr. Sharad Sharma, Beverage Manager, The Leela, Mr. Puneet Sehgal, Director F & B, Crowne Plaza, Okhla, Mr. Harleen Singh, F & B Manager, Crowne Plaza, Okhla and Mr. Abhishek Shukla, Asst. F & B Manager, Smoke House Group. This is one of the most popular challenges where one can see a lot of enthusiasm in the students to master the bartending skills. Nineteen contestants participated in the event. The participants were cheered and applauded by the audience on their bartending skills. The winner of this competition was Prince Gupta from Bcihmct. The Runners-up for the event were Nitish Thapar from Regency College, Hyderabad and Saurabh Aswani, BCIHMCT. The third event was another culinary competition where students prepared Salads, Sandwiches/Canaps and Dessert from the ingredients given in the basket. Nineteen teams participated in this event. This event was judged by Chef Avdesh S. Bhadauria, Executive Chef, PSK, Chef Ramit Wasan, Executive Chef, Crowne Plaza, Okhla and Chef Yadav, Corporate Chef, ITC Group. The winning team was of BCIHMCT with participants - Himanshu Swaroop & Bhanu Singharia. The team from AISSMS, Pune, stood second. Near to the end of the day the last event had students who concocted Three Course Menu- Mocktail, Starter, Main Course (Pasta) and Dessert using the given products. The judges for this event were Chef Ajay Kumar, Executive

Sous Chef, The Lalit, Chef Rajiv Srivastava, Corporate Chef, Lemon Tree and Chef Tapan, Consultant Chef. Twenty one teams participated in this event. All the culinary events were coordinated by Chef Ranojit Kundu and Chef Prem Ram, BCIHMCT.

Hospitality Education Comes Full Circle at 10th Chandiwala Hospitality Ensemble 2011
The day three of the Mega Event was buzzing with activities throughout the day. Various kitchens and venues holding competitions were filled with enthusiastic students from different participating teams. The two course menu (main course and starter) competition to be made from rice brought out the most innovative dishes and even newer names, as the starting event of the third day. Twenty one teams participated in this event. This event was judged by Chef Virender Kumar, Le Meridien, Chef Tarun Datcha, Sarovar Group and Chef Ajit Kumar Thakur, Jaypee Vasant Continental. The winning team of Flower Decoration Contest put up a very thought provoking arrangement keeping the points of balance, color and theme in mind. Yogesh Khare from AISSMS, Pune won the competition with award winning theme related to female infanticide. The runner up team of Regency College, Hyderabad had the arrangement putting up a message Hope Never Ends by N.Nagavansi. The participants revolved their arrangements around themes like Indian Weavers, Love, New Born Babies and above all did not forget the Ecology and Environment while making their floral arrangements. Total twelve teams participated in this event which was judged by Mrs. Neeraj Sharma, The Oberoi, Mrs. Saroj Vanmala, Claridges, Surajkund, Mr. Baru Chauhan, Dusit Bird Hotel and Ms. Juanita Madan, Crowne Plaza, Rohini. The Fruit and Vegetable Carving got all the participating ten teams into quick action with lovely carvings emerging. The various carvings that emerged were of flowers, birds, human faces, fruit baskets etc. This event was judged by Chef Atul, Exec Chef, Hotel Royal Plaza and Chef Vivek Rana, Chef De Cuisine, Pan Asian, IHC. Prashant from BCIHMCT won the competition with Irfan Khan from GIHM Hyderabad being the runner up. In salad and dessert competition dishes were prepared by sixteen teams. This event was judged by Chef Paresh Kondvilkar, Exec. Sous Chef MBD Neofolis, Jalandhar, Ms Garima Khanna, Manager Masscom, SUSTA, Chef Nitin Jain, Senior Sous Chef, Radisson Blu MBD. The winners of this event were Hanoz Messman & Shivam Desai, CZ Patel College Gujarat. The teams presented their dishes very creatively. The contests came to an end with the last culinary competition of the day where each of the sixteen teams participating prepared a three course menu using coconut milk powder.

The judgement parameters only for Culinary Competitions were effective use of ingredients given in the basket, accompaniments, authenticity, creativity and innovation, taste/ color/ texture, written recipe, portion size and nutrition balance, wastage & cleanliness. The first position was bagged by AISSMS, Pune with contestants - Ambar Rode and Sumit Kisar. Sonal Nagdev, Viraj Patel from CZ Patel College stood second. The three day Ensemble concluded on 21st October 2011 followed by the Valedictory function followed by theme dinner Colors of India.

The Valedictory Function


The valedictory function of the 10th Chandiwala Hospitality Ensemble was held in the lawns of Chandiwala Estate with great variations of events which included Award Presentation to the winning teams, Cultural Programme by the students of BCIHMCT and Pushpanjali dance recital by a student from the participating Institute of Hotel Management and finally the much awaited Theme Dinner "Colours of India". The programme commenced with the rituals of lamp lighting and release of the Souvenir of Chandiwala Hospitality Ensemble 2011 by the Chief Guest Mr. Nikhil Sharma, Asst. Vice President Operations, The Lemon Tree Hotel Company and Guest of Honour Mr. Ritesh Arora, Director HR, The Oberoi, New Delhi, Mr. Peter Douglas, Corporate Training Manager, The Lalit, Ms. Sharda Sharma, Executive Housekeeper, Crowne Plaza, Okhla along with Dr. Bhuwan Mohan and the Principal Mr. R.K. Bhandari. Mr. Bhandari read out the details of the three day Ensemble and at the same time he expressed his gratitude to the Chief Guest and Guest of Honour for their presence and above all the participating teams from the IHMs of the country and outside, for their overwhelming participation. He also thanked the sponsors for their generous support and the media from both National and Hospitality Trade for covering the event. The awards were presented to the winning teams of all thirteen events along with Certificates of Competence. A vote of thanks was given by Mr. R.K. Bhandari, Principal, BCIHMCT. The Theme Dinner was declared open after the stage performances. The Theme depicted a replica of the Colors of India and highlighted the various festivals of the country with visual displays made by students of the institute. The dinner venue was transformed into an arena of venues with cultural amalgamation. The Menu comprised of irresistible delicacies from five major festivals of India namely, Baisakhi, Diwali, Eid, Onam and Christmas. The entire event was sponsored by eminent Industrialists and Corporate Houses and their Directors also participated on this occasion.
