Inter College Competition of Culinary and Management Skills of Students From Institutes of Hotel Management & Catering Technology
Report on the Annual 10th Chandiwala Hospitality Ensemble 2011 A Curtain Raiser
Banarsidas Chandiwala Institute of Hotel Management & Catering Technology, New Delhi, established in 1999, is a Self-Financing and progressive Hotel Management College in the Country. This is the first and only Hotel Management Institute established under Guru Gobind Singh Indraprastha University, Delhi, awarding a Four-Year Degree in Hotel Management & Catering Technology and is approved by AICTE. The Institute is run under the aegis of noted philanthropic Society, Shri Banarsidas Chandiwala Sewa Smarak Trust Society, which counts education, health and sports among its primary functions. The Institution has been assessed and registered against the provisions of ISO 9001:2008 International Standard on 13 September 2011. BCIHMCT was also accredited by NAAC ( National Assessment and Accreditation Council) an autonomous body under University Grants Commission during the NAAC Accreditation Award Ceremony held in Bangalore on 24th April 2011. Outlook MDRA Survey (June 2010 and June 2011) has placed BCIHMCT among top ten Indias Best Professional Colleges among the Hotel Management Category. In order to enhance the creativity of the Professional Skills, the Institute has strived hard for the success of Annual Hospitality Ensemble with increased participation of Hotel Management Colleges across the country, under the banner, Chandiwala Hospitality Ensemble. The 10th Chandiwala Hospitality Ensemble, 2011 is being held this year from October 19th to 21st, with an objective to give an opportunity to young aspiring hoteliers to display their talents at the National level and interact with the experts from Industry. The Institute has been witnessing tremendous growth of this event. The IHMs look forward to this Ensemble and this year we have 30 teams participating in the various events highlighting the Professional Skills in the field of Culinary Art, Bar Tending Skills and Management Oriented Competitions like Hospitality Brain Twister and Hotel Design Specific Facility Planning. The teams comprise of participants headed by their respective Faculty. Above all, the Hotels in Delhi-NCR contribute their share by nominating their Chefs and Managers as Judges for the events, inspite of the Hotels having their own operational pressures. This year, two Hotel groups namely- Welcom Heritage Group and Intercontinental Hotel Group, have initiated an active Industry Institution partnership by being the Co and Associate Sponsors for this Mega Event.
This attempt of the Institute has taken BCIHMCT at an elevated platform as through this ensemble a close integration and interaction has been developed between the Education Sector of the Hospitality Industry with the Hotel Industry in Totality and also with the Sponsors who are the supply chain both to the Institutes as well as the Hotel Industry. BCIHMCT is all set to inaugurate its Annual 10th Chandiwala Hospitality Ensemble from October 19th to 21st, 2011. The Chief Guest for the Opening Ceremony will be Mr. Nalin Mandiratta, General Manager, Crowne Plaza, Rohini. Besides many other dignitaries the three day event will host 13 events in various fields of the Hospitality Industry namely - IHG Hospitality Brain Twister, Chandiwala Hotel Facility Planning and Designing Championship, California Prunes Dessert Competition, R-Pure Culinary Competition, Vegit Aloo Mash Culinary Competition, Luca Barwizard Bar Challenge, Cremica Culinary Challenge, Del-Monte Culinary Challenge, Dunar Rice Contest, Chandiwala Floral Decoration Competition, Remington Fruit and Vegetable Carving, Susta Culinary Wizard, Maggi Coconut Milk Powder Culinary Contest. This year the theme is Colours of India depicting various cultures, festivals, traditions and eating habits of its vast population in different regions belonging to distinct religions and ethnic groups. The students of Chandiwala will organize the theme dinner on 21st October showcasing their event management capabilities. At the Valedictory Function on 21st October Chief Guest, Mr. Nikhil Sharma, Assistant Vice President-Operations, The Lemon Tree Hotel Company and Guest of Honour, Mr. Ritesh Arora, Director HR, The Oberoi, New Delhi will be present to boost the morale of the participants. The Media collaborating for this event are Hospitality Biz, Hospitality Biz India.com, Spiritz Magazine, Hotels and Restaurants Network, Bakery Biz, Hospemag (The Hospitality E-Magazine) and Tourism & Trade. The three day ensemble preloaded by a Press Conference on 14th October 2011 was also organized. Eminent personalities from the media both Trade Media and National Media participated in the conference. The proceedings of each day were flashed to the media at the conclusion of each days programme and the same are being attached herewith along with this report.
Sous Chef, The Lalit, Chef Rajiv Srivastava, Corporate Chef, Lemon Tree and Chef Tapan, Consultant Chef. Twenty one teams participated in this event. All the culinary events were coordinated by Chef Ranojit Kundu and Chef Prem Ram, BCIHMCT.
Hospitality Education Comes Full Circle at 10th Chandiwala Hospitality Ensemble 2011
The day three of the Mega Event was buzzing with activities throughout the day. Various kitchens and venues holding competitions were filled with enthusiastic students from different participating teams. The two course menu (main course and starter) competition to be made from rice brought out the most innovative dishes and even newer names, as the starting event of the third day. Twenty one teams participated in this event. This event was judged by Chef Virender Kumar, Le Meridien, Chef Tarun Datcha, Sarovar Group and Chef Ajit Kumar Thakur, Jaypee Vasant Continental. The winning team of Flower Decoration Contest put up a very thought provoking arrangement keeping the points of balance, color and theme in mind. Yogesh Khare from AISSMS, Pune won the competition with award winning theme related to female infanticide. The runner up team of Regency College, Hyderabad had the arrangement putting up a message Hope Never Ends by N.Nagavansi. The participants revolved their arrangements around themes like Indian Weavers, Love, New Born Babies and above all did not forget the Ecology and Environment while making their floral arrangements. Total twelve teams participated in this event which was judged by Mrs. Neeraj Sharma, The Oberoi, Mrs. Saroj Vanmala, Claridges, Surajkund, Mr. Baru Chauhan, Dusit Bird Hotel and Ms. Juanita Madan, Crowne Plaza, Rohini. The Fruit and Vegetable Carving got all the participating ten teams into quick action with lovely carvings emerging. The various carvings that emerged were of flowers, birds, human faces, fruit baskets etc. This event was judged by Chef Atul, Exec Chef, Hotel Royal Plaza and Chef Vivek Rana, Chef De Cuisine, Pan Asian, IHC. Prashant from BCIHMCT won the competition with Irfan Khan from GIHM Hyderabad being the runner up. In salad and dessert competition dishes were prepared by sixteen teams. This event was judged by Chef Paresh Kondvilkar, Exec. Sous Chef MBD Neofolis, Jalandhar, Ms Garima Khanna, Manager Masscom, SUSTA, Chef Nitin Jain, Senior Sous Chef, Radisson Blu MBD. The winners of this event were Hanoz Messman & Shivam Desai, CZ Patel College Gujarat. The teams presented their dishes very creatively. The contests came to an end with the last culinary competition of the day where each of the sixteen teams participating prepared a three course menu using coconut milk powder.
The judgement parameters only for Culinary Competitions were effective use of ingredients given in the basket, accompaniments, authenticity, creativity and innovation, taste/ color/ texture, written recipe, portion size and nutrition balance, wastage & cleanliness. The first position was bagged by AISSMS, Pune with contestants - Ambar Rode and Sumit Kisar. Sonal Nagdev, Viraj Patel from CZ Patel College stood second. The three day Ensemble concluded on 21st October 2011 followed by the Valedictory function followed by theme dinner Colors of India.
