Chuck Mansfield
by Charles Neave
By any standard, the 2011 vintage has been for want of a better word interesting. On days when it should have been sunny and warm it was foggy and cool. In weeks when rain was unheard of, it rained. And so on. It vexes winemakers, but the best of them accept it, work with it (or around it) and in the end sometimes those trying years create spectacular wines. This may very well be the case this year; yields may be down (about 30 percent on average), but for the consumer, whats in the bottle of Hop Kilns HKG Estate Russian River Valley varietals may prove to be a rare treat. HKG Estate Winemaker Chuck Mansfields formative years were spent not in the lab or in a winery but in the vineyards of El Dorado County, where his father was a grower. He followed up with an Oenology/Viticulture degree from CalPoly before he went to study viticulture in Australia. This all provides him with a very modern perspective and is a perfect fit for this Hop Kilns future. I think our advantage is that we have property on both sides of the Russian River and up into the hills to the west, he said, speaking amidst the hectic activity of this years crush. What I want to showcase is the difference in the properties we have planted, while using a minimalist approach on the crush pad. I like to keep things really clean in the winemaking process. To me that means controlling the fermentation, controlling the temperature and then letting the fruit speak for itself. When it comes to Pinot Noir, when you get heavy-handed it can over-react, so I try to approach it with the idea that if it aint broke, dont fix it. That works particularly well with the premium grapes we have access to. Throughout the year we work tirelessly in the vineyards, so by the time we are ready to make wine we are on a trajectory to make great wines. When you visit Hop Kiln Winery in one of the richest agricultural parts of Sonoma County, you will hear their philosophy that it is all about Honoring the past, and handcrafting the future. When you start with a 250-acre piece of prime property known as Sweet Water Springs Ranch, and a building that dates back to 1905, all in the Russian River Valley, you pretty much have it all. The ranch property became a wine producing destination in 1975, when grapes, not hops (the original crop that was shipped to the brewmasters of Washington State) became the crop and the original kilns became working space for a winery and tasting room. So relax, purchase a bottle of one of their HKG Estate varietals (Pinot Noir, Chardonnay and Pinot Grigio), get some good local cheese and sausage from the deli case, a loaf of bread (they supply glasses, cutting board and knife) and sit outside overlooking the pond. The unique and historic tasting room at Hop Kiln Winery is located at 6050 Westside Road in Healdsburg, and is open daily from 10 a.m. until 5 p.m. For more information, call (707) 433-6491 or go to their comprehensive website at www.hopkilnwinery.com. The HKG Estate Russian River Valley wines can be tasted at Hop Kiln Winerys historic tasting room located at 6050 Westside Road in Healdsburg, and is open daily from 10 a.m. until 5 p.m.. (707) 433-6491. The wines are also available at their HKG Estate Tasting Room in Glen Ellen, (707) 938-7622. For more information visit the website at www.hopkilnwinery.com.

meal. Gloria Ferrers vineyard and winemaking teams cultivate and select the best fruit possible from estate Carneros vineyards for the Chardonnay and four estate Pinot Noir wines.
2 heads bib or butter lettuce, washed and dried 1 large low acid navel orange (Cara Cara) 1 avocado 1/4 c shelled toasted pistachio nuts 1/4 c virgin olive oil Sea salt
DIRECTIONS
Tear large lettuce leaves and keep the small ones whole. Put lettuce into in a large bowl. Peel avocado, cut into 1/4slices. Peel and section the orange, saving any juice that accumulates. Whisk the juice with the olive oil, season with salt to taste. Toss the lettuce with the dressing. Divide the lettuce onto 6 plates. Top each salad plate with slices of orange and avocado. Sprinkle each plate with pistachios and serve. This recipe is a perfect match for your Thanksgiving salad course.

used, the method of preparation and most importantly the need for a wood-fired oven, which is a prerequisite. Like every good food, the recipe starts with the best ingredients. At Ca Momi Enoteca they use only Tipo 00 flour, San Marzano tomatoes, all natural Fior di Latte or Bufala mozzarella, fresh basil, salt and yeast only fresh, all-natural, unprocessed ingredients. Any other ingredients included on their pizzas are local, organic and sustainably produced. Importantly, the use of organic and local ingredients reflects Dario DeConti & Fredy Rodriguez the personal beliefs of the three owners. Continuing in the authentic mode, all pizza dough must be kneaded by hand or with a low-speed mixer. The pizzas, themselves must be hand-formed using no machines, not even a rolling pin. Once the wood-fired oven kisses the pizza, it should cook in exactly 90 seconds. Ca Momis oven is fired up at 900 degrees. Thats hot! Pizza making was not a new science to Dario De Conti. To fund his college studies he began making pizzas at an early age in Italy. His certification from VPN was the icing on his 20-year pursuit of the best pizza. We are incredibly proud of receiving this certification by the esteemed VPN Association, said restaurant co-owner and pizza chef Dario De Conti. Our goal is to create an authentic Italian experience for our patrons, and the VPN certification truly validates that what you eat at Ca Momi is what you would find in Italy. We want everyone in Napa and Bay Area visitors to experience a little slice of Italy. Pizza itself is hundreds of years old, first started as a street snack in Naples, Italy. At the end of the 19th century an enterprising royal chef, invented the Pizza Margherita to honor the Queen Margherita, the reunification of Italy and the red, green and white components of the flag. The pizza took its red from the San Marzano tomatoes, green from the basil and white from the fresh mozzarella. Today, you can enjoy a pizza Margherita in the colors of the Italian tricolore at Ca Momi Enoteca and be assured that they have been awarded the Verace Pizza Napoletana Associations highest honor. Ca Momi Enoteca is located in the Oxbow Public Market at 610 First Street, Napa. Visit the website at www.camomi.com.

Raymond Vineyards
Lots and Lots of Tasting Options, Including the New Theatre of Nature
Holy cow, has Raymond Vineyards (under new owners Boisset Family Estates) turned a winery visit into a wine country experience! Raymond has been well known for great wines, but they have not always been known for their presentation of those wines. When the Boisset family bought the property, they did so precisely because of their respect for the people, effort and time that have been evident in the stewardship of the land and the resulting wines. This philosophy of preserving what works while adding what can make it work better goes to the heart of the current Raymond Vineyards hospitality transformation, and its this explosion of consumer-centric tasting experiences, including the new Theatre of Nature, which makes them our Tasting Room of the Week. Raymond Vineyards became part of the Boisset Family Estates collection of wineries in 2009 with the expressed goal of rejuvenating the estate and propelling it forward into its fifth decade and beyond. Boisset Family Estates is well known around the wine world for this kind of rejuvenation in Burgundy, Beaujolais, the Rhone Valley, and in the south of France, and theyve channeled all thats been learned through multiple decades into the newly re-designed Raymond Vineyards hospitality experiences. As regards the wines and as befits an estate as varied as this one, the Boissets have introduced a variety of tasting options and events to accommodate a range of lifestyles and experiences, or as theyll tell you when you visit, Theres something for everyone. If youre looking for the classic American tasting room experience, the Main Tasting Room presents Raymond favorites, stellar Cabernets and a number seasonal, winery-only releases. If youre looking to see how great Napa Cabernet ages, the Library Rooms access to vertical flights is the place to be. If youre into the presentation of wine and wine service, of how aeration, particularly in Baccarat decanters, has an impact on whats in the glass, then the Crystal Rooms Earth & Air sensory experience is something not to be missed. The options dont end there, however. The Barrel Room, candlelit and intimate, is available to host small groups, allowing for barrelsampling of wines prior to bottling a very unique way of gaining some winemaker insight. The Rutherford Room shows off the current fifteen Napa Valley sub-appellations, and the Blending Rooms focus is on creating wines greater than their parts. On the flip side, if the enjoyment of wine as part of your exclusive, excitement-filled life sounds more like you, the Red Room presents a distinctive Napa Valley winery experience: wine and entertainment, complete with music, video games and the exclusive Raymond Red Room wine, all reserved specifically for club members. Equally, the Grove presents plenty of familyfriendly activities that showcase wine country life: croquet,
badminton, basketball, bocce and ptanque. There is a firepit for grilling and an orchard with more than a dozen offerings. The view from the Generations Platform even gives an elevated, in-person perspective of the majesty of the valley views. The newest and most exciting of these offerings, though, is the Theatre of Nature, and its been designed with a wide range of visitors in mind, including those not old enough to partake of the winerys offerings. The one-and-a-half-acre Theatre of Nature uses plant and animal life to explain the natural winegrowing philosophy in action around you on the property; it foregrounds how all the actors in the system play a crucial part in crafting quality wine, from the soil to the vineyardist to larger forces such as the lunar cycle. Designed by Jeff Cox and Jeff Dawson, whose previous wine country landscaping design was done for Fetzer and Copia, the educational exhibits and programs focus on grapegrowing and Biodynamics in five acts. There is a farming demonstration to show the impact of compost on growing conditions, discussion of different grape varieties, and lots of material on vineyard-adjacent herb, fruit and covercrop impact on wines. Equally, the role of animals, chicken, sheep and goats, and their place in an interconnected system is emphasized, as well as areas set aside for Biodynamic preparations. Whimsical, creative sculptures accompany all of this, making for a true theatre of possibilities. If it hasnt been obvious from the above, Napa is most definitely changing, and its impressive to see how Raymond Vineyards is handling such a transformation so smoothly. Boisset Family Estates has brought its hospitality knowledge, honed in wineries throughout the world, to good use, producing wines emblematic of the estates past while most definitely heralding its bright future with innovative ways to share them. Come see for yourself what others will be talking about for decades to come! Raymond Vineyards is located at 849 Zinfandel Lane, St. Helena, and is open daily from 10 a.m. to 4 p.m. For reservations or more information, call (707) 963-3141.

has the only cottage remaining at its original location. Though just minutes from the center of town, the quiet comes from being on a residential side street off Lincoln Avenue. The only noise (and little at that) comes from the parrot raised next door, and pets are welcome in most of the rooms. While you are there also be sure to take advantage of the concierge-like service included in the very reasonable rates. You are encouraged to ask as many questions as you can think of. Doug and Judy Cook, owners and innkeepers, are knowledgeable, patient and understanding. Especially with their guests and with Pinot Grigio. They also have developed great relationships with local businesses that can save visitors money at restaurants, wineries and tasting rooms, and spas. Judy prepares the daily breakfast, which is delicious and perfect fare to get you prepared for a day of spa treatments, or for winery visits or a walk or even for the ambitious a hike. And on Friday evenings local winemakers pour their best, accompanied by Judys hors doeuvres. The Brannan Cottage Inn is located at 109 Wapoo Avenue in Calistoga. Look on www.brannancottageinn.com or call them at (707) 942-4200.

Armida Winery
By Sue Straight, the Wine Wench
Heaven and Hell, PoiZin (Armidas signature Zinfandel) and Antidote (Armidas Pinot Grigio), big fun and great wines at reasonable prices are what come to mind when I think about Armida Winery. The owners and staff describe it as wines to remember in a place youll never forget I must agree Ive been a fan for years. Armida Winery is definitely an unforgettable place! If youve ever come to Armida Winery for Dry Creek Valleys Passport event, the Heaven and Hell theme that they decorate the cellar with is always a topic of conversation, long after the event is over. Located not far from Healdsburg on Westside Road, Armida Winery sits atop a vineyard-striped knoll. Wend your way up the driveway and you are in for a real treat! To start with, the views from the oak-shaded deck/picnic area and bocce court are unforgettable the Russian River Valley unfolds before your eyes in a glorious patchwork of vineyards, trees and hills. The winery itself is a geodesic dome, the practical reason, according to designer Buckminster Fuller, would be that The sphere uses the doing more with less principle in that it encloses the largest volume of interior space with the least amount of surface area, thus saving on materials and cost. The Armida reason is cause it looks cool. Brothers Bruce and Steve Cousins purchased controlling interest from Steve Frugoli in 1994 and have brought a whole new meaning to the term family owned winery. They are actively involved in all aspects of the winery. These guys love what they do and it shows the whole atmosphere at Armida Winery is one of delicious fun, with a bit of mischief thrown in. The wines are seriously good, but the folks at Armida Winery dont take themselves too seriously. Theres not an ounce of pretension here, folks! There is a member of the A Team - Winemaker, Brandon Lapides (formerly of DuttonGoldfield Winery) recently joined the crew and everyone is excited about moving into the future with him. Since its inception, Armida Winery has partnered with some of the best grape growers in Sonoma County and has continually produced world-class wines. Now, with Brandon at the winemaking helm, this partnership should be more delicious than ever! The tasting room is light, bright and airy feeling, with an octagonal shaped wooden bar that is staffed by friendly and knowledgeable servers. Although Armida wines may be found in restaurants and wine shops around the country, the vast majority of their wines are sold right there in the tasting room and to their devoted wine club members. Be sure to visit this unforgettable place and tell them The Wine Wench sent you! Armida Winery is located at 2201 Westside Road, just outside of Healdsburg. The tasting room is open from 11 a.m. to 5 p.m. daily. For more information, call (707) 433-2222, check them out on Facebook or Twitter or visit their website at www.armida.com.

Mendocino County Readies for Fall Festival Celebrating Fabulous Funghi and Local Wines
At the peak of mushroom harvest season, food and wine lovers, residents and visitors alike come out to celebrate the fungi fruit of the local land. Parallel to the countys innovative and unique wineries and winemakers, Mendocino County is home to some of the most coveted and delectable species of mushrooms 300 types of which are edible and will make for savory local ingredients this festival season. The 2011 Wine and Mushroom Festival takes place from Friday, November 4th, to Sunday, November 13th, and celebrates the bounty of this Northern California region while hosting world-class chefs, cooking classes, seasonal dinners, wild mushroom foraging excursions, educational beer and wine-pairing demonstrations, art exhibitions and more! The premier event of the festival is the Frank R. Howard Hospital Foundations Wine & Mushroom Train on the historic Skunk Train, Saturday, November 5th. Trains will be leaving from both the Fort Bragg (coastal) and Willits (inland) depots and will take passengers on a glorious train ride through ancient redwoods to scenic Camp Mendocino, nestled against the Noyo River. Guests then enjoy tastings from various award-winning wineries, culinary treats from local Mendocino chefs and a mushroom cook-off, which will be judged by both attendees and a panel of expert judges. The event will also offer a dynamic mushroom presentation from world renowned expert Eric Schramm, a mushroom hike led by horticulturist Larry Desmond and botanist Marisela De Santa Anna and a presentation about Mendocino County wines. A silent auction featuring items and getaways from Mendocino Countys finest will be available for bid. Enjoy live music on the train and at Camp Mendocino. Dessert port and chocolate truffles will be offered on the train ride home. All in all, a day to remember 10 a.m. to 5 p.m. $125 per person. (Proceeds help fund The Frank R. Howard Foundation, a non-profit that helps fund high-quality hospital services for Willits and Northern Mendocino County.) Dozens of events will take place during the Wine & Mushroom Festival.
