Pour hot water over shortening, sugar, and salt. Mix dry milk with 1 cup whole-wheat flour, add hot water mixture and 1 cup of cold water, and then add yeast mixture. Add remaining 6 to 7 cups of whole wheat flour. Knead until smooth and elastic, and let rise until almost double in size. Then time as follows: Let rise 40 minutes, punch down; let rise 20 minutes, punch down; let rise 20 minutes, punch down. Shape into 3 loaves and place in 3 small greased bread pans. Allow to rise until double in size. Bake at 375 for 40 to 45 minutes. Makes 3 loaves. POPPED WHEAT Take 1 cup cooked whole wheat kernels (cooked just about 30 minutes not until split), drain and rinse well, removing excess water by rolling in paper towels. In a heavy pan, add enough vegetable or olive oil to deep-fry the kernels and heat to 360 degrees. Add about 1-1/2 cups of wheat into a wire basket or strainer and pop for 1-1/2 minutes or until popping ceases. The wheat will not pop like popcorn; in fact some kernels may not pop at all but will be very crispy and golden. Drain on paper towels. Repeat process until all wheat is popped. Season with any of the following: salt, onion salt, garlic salt, barbecue salt, or dust with powdered ranch 4 Tbs baking powder dressing. You can eat it as is or tsp salt on a few salads. 3 sprinkle If desired, add to dried fruit and chocolatecup shortening Cut in 1 chips for a great trail mix. Cool completely and store in a glass jar. OHLMAKERS SECRET WHEAT CAKE MIX 9 cups wheat flour (fine) 6 cups sugar 1 cup instant powdered milk This will make 3 cakes plus cup cakes For one cake: 1 tsp cinnamon 5 cups mix, put in bowl tsp nutmeg In blender put 2 eggs and enough water to measure 2 tsp cloves cups. How to Use That Wheat Wheat has been called the 'staff of life' for hundreds of years because of its excellent nutrition, storability and versatility. WHEAT BROWNIES 1 cube butter, melted 1/4 C. cocoa 1 C. sugar 2 eggs 1/2 teaspoon salt 1 teaspoon vanilla 1 C. whole wheat flour 1/2 teaspoon baking powder 1/2 C. chopped pecans, walnuts, or almonds Melt butter in microwave and add remaining ingredients one at a time, beating after each addition, with the exception of the nuts. Stir nuts in last. Pour batter into greased 8-by-8-inch pan and bake at 350 degrees for 25 minutes. This recipe can be doubled and put into a 9-by13-inch pan. 3 Tbsp. baking powder WHOLE WHEAT STREUSEL CAKE 2 large eggs 3 3/4 C. whole wheat flour Pinch of salt 3/4 C. butter, softened 3/4 C. sugar 2 C. milk 2/3 C. melted butter 1 tsp. Topping: (should be like wet sand) cinnamon 1 1/4 C. sugar 3/4 C. whole wheat flour Combine flour, sugar, baking powder, salt, butter, milk and eggs, and mix well. Pour cake batter into greased and floured 9X13 pan and sprinkle topping on top. Bake at 350 degrees for 25-30 minutes. USEFUL SUBSTITUTIONS 1 tsp. baking powder = 1/3 tsp. baking soda + 1/2 tsp. cream tartar 1 cup butter = 1 cup shortening + 1/2 tsp. salt 1 tbsp. oil = 1 tbsp. melted shortening (or lard) 1 cup corn syrup = 1 cup honey = 1 cup sugar + 1/2 cup of the liquid used in the recipe 1 cup buttermilk = 1 cup milk + 1 tbsp. vinegar (or lemon juice) 1 cup nonfat milk = 1/3 cup nonfat dry milk + 1 cup water 1 cup whole milk = 1/3 cup nonfat dry milk + 1 cup water + 2 tbsp. melted butter 1 cup whole milk = 1/2 cup evaporated milk + 1/2 cup water 1 cup sugar = 1 cup corn syrup (decrease recipe liquid by 1/4 cup) 1 cup sugar = 1 cup honey (decrease recipe liquid by 1/4 cup) 1 oz. unsweetened chocolate = 3 tbsp. cocoa + 1 tbsp. shortening HOMEMADE CREAM SOUP MIX RECIPE: 1 tsp dried basil 2 cups dry milk powder 1 tsp dried thyme cup cornstarch tsp pepper 2 tbsp dried onion flakes cup instant chicken bouillon powder Mix all ingredients together thoroughly and store in an airtight container until ready to use. To substitute for 1 can of condensed soup: Combine cup of dry mix (original instructions say to use 1/3 cup but I have found that cup gives better results) with 1 cups of cold water in a saucepan. Cook and stir until thickened. OR to make in the microwave, put mix and water in microwavesafe bowl and heat on high until thickened, stopping and stirring after each minute of cooking time. You can also add celery, broccoli, onions, mushrooms, etc. to it.

HEARTY SOUP Lots of carrots, sliced 10 cups water 2 tsp seasoned salt 1 cup dry soup mix 1/8 tsp black pepper 1/2 cup barley 1 large can V-8 juice 2 envelopes dry onion soup mix Chopped or diced celery, zucchini, etc. 1 cup leftover roast beef or hamburger Put water in large pot. Add soup mix, onion soup mix, barley, V-8 juice, salt and pepper. Bring to a boil and reduce heat. Simmer 1 hour. Test barley for doneness. Add fresh carrots, meats, and any other vegetables you like. Simmer approximately 1/2 hour more. Add more water if necessary. Serve The trick to this soup is to SIMMER it so all the ingredients get done at the same time. For a pleasing texture add celery, zucchini etc just before serving. CHICKEN SOUP 7 chicken bouillon 2 qt water cubes 2/3 cup soup mix Your choice of other vegetables Carrots, sliced Zucchini, diced 1 chicken, cooked or Salt and pepper 1 can chunk turkey or beef Cook chicken in water. Drain, strain and save cooking water. Cool chicken and de-bone. Add soup mix and bouillon to saved cooking water. Simmer 45 - 60 minutes. Add vegetables and cooked chicken. Simmer until all vegetables are cooked. MEAT PIE 1 can tomatoes (1 3/4 cup) 6 quarts water 1 - 10 1/2 oz can tomato soup 2 cups dry soup mix 1 - 8 oz. can tomato sauce 2 lbs. frozen hash browns 2 lbs. hamburger (Fresh potatoes should be diced) Any leftover vegetables or frozen carrots, corn, etc. Fry hamburger until well done. Break into tiny pieces. Add to other ingredients and place in 6 or 7 - 9 inch pie shells. Add top crust and seal edges well. Bake in oven at 450 degrees for 25 min. or freeze for future meal. Serves 20 - 25. FABULOUS SOUP MIX SOUP

AMERICAN HAMBURGER SOUP 1 1/2 qt water 1 bay leaf 1 1/2 lbs. hamburger 1/8 -1/4 tsp. garlic powder 3/4 cup diced celery 1-3 tsp. Worcestershire sauce 3/4 cup dry soup mix 2 tsp. salt 2 cups potatoes cubed pepper to taste 1 tbsp. sugar 3 medium carrots diced 2 cups tomato juice Brown hamburger. Mix all ingredients and simmer 1 1/2 to 2 hours

USING THE CANNERY SOUP MIX 2 tbsp. minced parsley

9 cups boiling water 7-8 teaspoons beef bouillon 1 cup dry legume ABC soup mix (From Cannery) Add bouillon and soup mix to boiling water and simmer, covered 45 minutes. Serves 6. Use your food storage! Cook at least one meal a day using items from your storage! Store what you eat and eat what you store!
