Spotlight on Chardonnay
The winter season is here and while red wines take the spotlight during the cooler months, one particular white wine is an excellent choice for a holiday meal or as a sipping wine for a blustery winter night. Chardonnay is a noble, green-skinned grape variety that originates from the Burgundy wine region in France. Chardonnay grape flavours are greatly influenced by the terroir where the grape is grown and the oak used for producing the wine. Chardonnay truly is a chameleon grape. For example, cooler-climate Chardonnays tend to have apple, pear, and other orchard fruit characteristics. Additionally, the cooler-climate Chardonnay wines will occasionally be citrusy with definite mineral overtones. Warmer climate Chardonnays, on the other hand, have much stronger tropical tones. And Chardonnays that are oak-aged will have toasted notes and a buttery mouthfeel with overtones of vanilla. While Chardonnays heritage can be found in the burgundy region, we are seeing fantastic Chardonnay wines coming from Italy, New Zealand, South Africa, Chile, and Argentina. Additionally, California is also producing excellent Chardonnay wines with their own characteristic style! This winter, enjoy Chardonnay chilled with turkey or shellfish like oysters. Recipe of the Month - Oysters on a Half-Shell with Mignotte Sauce & Caviar
Ingredients: 2 tsp finely crushed white pepper 1/8 tsp salt 1/4 cup dry red wine 2 tbsp olive oil 2 tbsp finely chopped shallots 8 cups finely crushed ice 1/2 cup kosher salt 2 dozen freshly shucked oysters on the half-shell 1 oz beluga, osetra, or servuga caviar Instructions: Combine the white pepper, salt, wine, olive oil, and shallots in a small bowl and whisk to blend. Set aside. Put 1 cup of the ice in each of eight small shallow rimmed soup bowls and press down gently to make a level bed. Sprinkle 1 tbsp of the kosher salt over each bowl of ice. Place 3 oysters in the their shells on each bed and spoon an equal amount of the sauce over each. Dot with caviar and serve cold. Makes 8 servings. Pair with a glass of Grand Cru International California Chardonnay!
