Beverages Christmas Eggnog

Prep Time: 15 mins. Yields: 4 liters Ingredients:


1 (12 oz) can of orange juice concentrate 1 (12 oz) can of water cup of lemon juice cup of sugar teaspoon of cinnamon teaspoon of ginger teaspoon of cloves 6 eggs Nutmeg 2 qts of ginger ale, chilled 2 qts of vanilla ice cream/orange sherbet

Directions:

1. Mix in a blender the orange juice concentrate, lemon juice, sugar, spices, and eggs. Place in the refrigerator until ready to mix the rest. 2. Pour the water in the mixture and stir. 3. Spoon the ice cream and the sherbet in. 4. Pour in the ginger ale.

Apple Cider Pineapple Juice 2 cinnamon sticks 1 Tbsp whole allspice 1 Tbsp whole cloves 1 Tbsp Redhots 1 cup strong tea Cheesecloth

Directions:

1. Add equal amounts of cider and juice along with the tea into the crock-pot. 2. Wrap remaining ingredients in a cheesecloth and add to liquids. 3. Heat in the crock-pot a few hours.

Notes:

Leave the spices in the crock-pot. When starting to run low, add more juice. We'll often throw the tea bag in the crock pot instead of making a separate cup of tea to add. For Christmas goodie bags wrap everything in the cheesecloth (with a tea bag separate) and give with a recipe card.

Beverages Spiced Pumpkin Steamers

Cook Time: 10 mins. Serves: 4 Ingredients:


4 cups whole milk 1 cup canned pumpkin pure cup brown sugar, packed teaspoon ground cinnamon teaspoon ground nutmeg

Directions:

Add all ingredients to a saucepan and whisk together over medium heat. Whisk occasionally until hot. Ladle into mugs. Drizzle with whipped cream and sprinkle with ground nutmeg.

6 cinnamon sticks Water 1 cup maseca 1 block of Abuelita chocolate 1 can evaporated milk Chocolate mix (optional)

Directions:

1. Boil medium pot of water with 6 cinnamon sticks on low until the water becomes red. 2. Cut up the Abuelitas into chunks then mix with the maseca in aseparate pan. 3. Pour cinnamon water into the Abuelitas pan and mix until there are no clumps. 4. Add evaporated milk to taste (at least one can).

Tips:

If you want it sweeter, add chocolate mix like Nestle. If you want it thinner, add more milk. The quick version would be to melt the Abuelitas in milk according to the package and add maseca to taste.

1 cup rice, long grain cup sugar 4 cups milk 1 teaspoon cinnamon teaspoon vanilla

Directions:

1. Take 1 cup rice in bowl and pour hot water in until rice is covered. Leave overnight. 2. Next day drain all but cup water. Blend half of the rice. Add 2 cups milk and blend until mixed. Add cup sugar, teaspoon cinnamon and teaspoon vanilla. Blend. 3. Strain through strainer. (Pour into cup through strainer.) Serve over ice. 4. Repeat with second half of rice.

Breakfast Pumpkin Pie Oatmeal

1 cup dry oats cup pumpkin pure 1 teaspoon pumpkin pie spice (no sugar added) 2 eggs cup pecans per serving Maples syrup to taste

Directions:

1. Place the cup of oats in 3 cups of boiling water then simmer on low for 20 minutes. 2. In the last 5 minutes of cooking quickly stir in the eggs, being sure to stir vigorously so they get welldistributed. Then stir in the pumpkin pure and pumpkin spice. 3. Put some oats in a bowl and top with pecans and maple syrup.

Prep Time: 5 mins. Cook Time: 5 mins. Fermentation Time: overnight Total Time: 8 hours, 10 mins. Serves: 4 Ingredients:
1 cup oats, rolled or cracked 1 cup warm filtered water plus 2 Tbsp whey, yoghurt, kefir or buttermilk teaspoon sea salt 1 cup filtered water 1 Tbsp flax seeds (optional) 2 handfuls blueberries (optional) 2 handfuls blackberries (optional) 1-2 Tbsp extra virgin coconut oil (optional) 1-2 Tbsp raw honey (optional) Cream to taste (optional) Chopped crispy nuts (optional)

Directions:

1. Mix oats with warm water mixture, cover and leave in a warm place for at least 7 hours and as long as 24 hours. 2. Bring an additional 1 cup of water to a boil with sea salt. Add soaked oats, reduce heat, cover and simmer several minutes. Meanwhile, bring optional flax seeds in a mini grinder. Remove from heat, stir in optional flax seeds and let stand for a few minutes. 3. Serve with plenty of butter, coconut oil, or cream and a natural sweetener like Rapadura, date sugar, maple syrup, maple sugar or raw honey. You may also wish to add apricot butter, chopped crispy nuts, berries, or dried sweetened coconut meat.

Breakfast Baked French Toast

Prep Time: 8 hours Cook Time: 50 mins. Total Time: 8 hours, 50 mins. Yield: 1 casserole dish, about 12 servings Ingredients:
1 lb. loaf of French bread 8 eggs 1 qt & (or 2 cups milk & 1 cups cream) 2 teaspoons vanilla teaspoon cinnamon cup butter 1 13 cup brown sugar 3 Tbsp maple syrup 1 cup pecans (optional)

Directions:

1. Prep - Butter 9x13 pan. Cut French bread diagonally in 1 inch slices. Arrange first layer of slices of bread in bottom. 2. Beat together eggs, cream, vanilla and cinnamon. Pour of egg/cream mixture evenly over bread. Arrange next layer of bread on top of first. Pour remaining egg/cream mix evenly over top layer. Cover with plastic wrap and refrigerate overnight. 3. Preheat oven to 350F. Take out bread/egg pan to de-cool. Combine butter, brown sugar and maple syrup; heat until bubbling. Pour over bread and egg mixture. If desired sprinkle with chopped pecans. Bake uncovered for 50 minutes - internal temperature 170-180F.

Breakfast Candy Cane Coffee Cake

Prep Time: 30 mins. Cook Time: 45 mins. Total Time: 1 hour, 15 mins. Yield: 2 candy cane cakes Ingredients:
2 cups sour cream 2 pkgs active dry yeast cup warm water (105-115F) cup butter, softened 13 cup sugar 2 teaspoons salt 2 eggs About 6 cups flour 2 cans sweet cherries (in syrup or water) 2 Tbsp corn syrup Green candied pineapple (add green food color to candied pineapple) 2 cups confectioner's sugar for thin icing

Directions:

1. Heat sour cream over low heat just until lukewarm. Dissolve yeast in warm water. Stir in sour cream, cup butter, sugar, salt, eggs and 2 cups of flour. Beat until smooth. Mix in enough remaining flour to make dough easy to handle. 2. Turn dough onto well-floured board; knead until smooth, about 10 minutes. Place in greased bowl; turn greased side up. Cover; let rise in warm place until double, about 1 hour. 3. Heat oven to 375. Punch down dough; divide into 2 equal parts. Roll each part into rectangle, 15x6; place on greased baking sheet. With scissors, make 2 cuts at intervals on long sides of rectangles. 4. Boil cans of cherries and corn starch until thickened; spread of mixture down center of each rectangle. Crisscross strips over filling. Stretch dough to 22 inches. Curve to form cane. 5. Bake 15-20 minutes or until golden brown. 6. Make icing by blending 2 cups confectioner's sugar with about 2 tablespoons water. If the icing is too stiff, stir in a few drops of water. 7. While warm, brush with butter and drizzle canes with thin icing. Decorate with cherry halves and green pineapple pieces cut to look like leaves.

Breakfast Quiche Lorraine


Quiches have been a Bratton tradition for Christmas breakfast. Great for using leftovers.

Prep Time: 15 mins. Cook Time: 1 hour Total Time: 1 hour, 20 mins. Yield: One pie Ingredients:
1 9 inch pie crust cup whipped cream cup half & half 2 egg yolks 1 whole egg Pinch salt Pinch cayenne Pinch nutmeg 6-8 slices bacon 8 oz Gruyere cheese

Directions:

1. Fry bacon until very crispy. Drain on paper towels. 2. Grate cheese. 3. Paint surface of pie crust with very small amount of unbeaten egg white. Fill the pie crust with overlapping slices of cheese and bacon. Pour on custard. Bake in preheated oven at 375F for 35-45 minutes or until custard is puffed and tests completely done and pastry is nicely browned. Allow to rest 5 minutes before serving.

Breakfast Shoo-Fly Pie

Prep Time: 15 mins. Cook Time: 45 mins. or 5 mins. Total Time: 1 hour or 20 mins. Yields: One pie Ingredients:
1 (9 inch) pie crust not baked. cup molasses cup boiling water 1 teaspoon water 1 teaspoon baking soda teaspoon cinnamon teaspoon ginger teaspoon ground cloves teaspoon salt 2 cups whole wheat pastry flour 5 Tbsp butter cut into small cubes cup warmed honey

Directions:

1. Combine molasses, water, and soda in a small saucepan, bring to boiling, stirring well. Set aside to cool. 2. Preheat oven to 400F. 3. Mix Flour and seasonings, then add butter and honey. Toss gently with fingers until mixture is crumb consistency and no longer sticky. Chill to firm up butter and honey to create crumbs. I mixed the flour and seasonings in the food processor. Added the butter and mixed. Then added the honey. Spread about onefourth of the crumbs over the pastry in the pan. 4. Pour cooled molasses mixture over this layer of crumbs. Set aside 2 Tbsp of crumbs, and then put the remaining crumbs over the molasses mixture, spreading evenly. Bake 25 minutes in oven, then remove and top with the reserved crumbs. Return to the oven and bake about 20 minutes longer. Cool before serving.

Notes from Carl:

I just put all the crumbs in the pie and poured the molasses mixture over it. Also you can microwave the pie. This is the way I made it most of the time. 2 minutes at 60% 2 minutes at Hi 1 minute at 60 %

Breakfast Papa Knifton's Whole Wheat Waffles

2 eggs 1 cup plain yogurt 1 cup freshly ground soft whole wheat flour 1 teaspoon baking powder teaspoon salt teaspoon baking soda Milk to thin

Directions:

1. Beat the eggs, yogurt and salt together. 2. As you measure out the whole wheat flour, mix the baking powder in the flour. Put the flour in with the eggs and mix. Then mix the soda in. You may need a little milk to thin it or maybe a little more flour to thicken it. 3. Heat the waffle iron and spray a little oil on it. Do not put any oil in the mix as it doesn't need it.

Breakfast Yogurt Blackberry Waffles

3 Tbsp butter, melted cup fresh blackberries, washed and dried 4 Tbsp maple syrup 1 cups flour 1 teaspoon baking powder teaspoon salt 2 eggs cup milk 1 cup sour cream (or goat milk yogurt)

Directions:

1. In a small bowl, mix the berries with 2 Tbsp maple syrup. 2. In a medium bowl, combine the flour, baking powder, and salt. In another medium bowl, whisk the eggs lightly and stir in the milk, sour cream, melted butter, and remaining 2 Tbsp maple syrup. Stir the liquid ingredients into the dry ingredients and mix until just blended. Add the berries and stir once or twice. 3. Coat the waffle plates with nonstick cooking spray (olive oil). Spoon a little more than 13 cup of the batter onto each side of the waffle plate and close the lid. Cook the waffles for 4 minutes. Check and continue cooking until golden brown. Great served with whipped cream mixed with a little maple syrup.

Breakfast Crepes

Directions:

1. In a blender combine eggs, oil, flour and milk. Beat well. Chill for hour. 2. Mix well again. Before each crepe spray frying pan with oil. Pour just enough batter into a small fry pan to coat the bottom. Cook over medium heat until brown on both sides, turning once. Store between wax paper. 3. Serve with homemade whipped cream and warmed apricot jelly or berries.

Breakfast Banana Oatmeal Pancakes

Prep Time: 10 mins. Cook Time: 10 mins. Total Time: 20 mins. Yields: 8-10 pancakes Ingredients:
1 cup goat milk 1 cup rolled oats 1 banana, mashed 4 teaspoons oil or butter 1 teaspoon vanilla Dash of stevia, optional 2 eggs, beaten cup unbleached flour 1 Tbsp Rapadura or honey 1 teaspoon baking powder teaspoon salt

Directions:

1. Mix milk and oats and let sit for 5 minutes while preparing the rest of the ingredients. 2. Mix banana, oil, vanilla, stevia and eggs in one bowl and the remaining ingredients in another. Combine the milk mixture and banana mixture then add in the dry ingredients. Stir until all is moist, but dont over mix. Let sit 2-3 minutes. 3. Pour onto hot griddle until bubbles form and edges dry. Turn once. Service with butter and syrup.

Breakfast Pumpkin Pancakes

Prep Time: 5 mins. Cook Time: 10 mins. Total Time: 15 mins. Serves: 6 Ingredients:
1 cup canned pumpkin 1 cup milk 1 egg 3 Tbsp melted butter or olive oil 1 cups flour 3 teaspoon baking powder 1 teaspoon salt cup honey or Rapadura 1 teaspoon vanilla teaspoon cinnamon, ground cloves, ginger, nutmeg, and all spice Confectioner's sugar (optional) Caramelized pecans (optional) Chocolate chips (optional) Whipped cream (optional)

Directions:

1. Mix ingredients well in a mixing bowl. 2. Spoon to cup batter into hot griddle, adding optional chocolate chips. Cook until lots of bubbles. Flip and cook until done. Sprinkle with confectioner's sugar, maple syrup, and caramelized pecans, or whipped cream and nutmeg.

Notes:

To make caramelized pecans cook pecans in butter and brown sugar on low. Beware: if you add chocolate chips, kids may only pick the chocolate out and leave the rest of the pancake. For a more festive breakfast, make the pancakes in pumpkin shapes.

Breakfast Cinnamon Rolls

Prep Time: 30 mins. Cook Time: 20 mins. Total Time: 1 hour Yields: 1 dozen Ingredients:
Dough Butter Cinnamon Sugar Pecans (Thread)

Directions:

1. Roll the dough out in a rectangle shape. Melt butter and spread it over the entire rectangle. Mix cinnamon, sugar, and pecans and spread over the entire rectangle. Roll up lengthwise and cut using thread. 2. Bake at 350F for about 20 minutes. Glaze if you like.

Tips:

To use thread to cut, take a length of thread (any kind) and slide the center of the thread under the rolled up dough. Bring the ends of thread up and criss-cross over the top of the dough, switch hands and pull thread out and all the way through the dough. You end up with nice, uniform "cuts" this way.

To Freeze:

Freeze the rolls after step 1. When you are ready to make them, put them on a pan and let them raise overnight (remember to give yourself plenty of raising room). The next morning, bake at 350F for about 20 minutes.

Directions:

1. Mix all ingredients in a bowl and pour into baking dish. Bake at 350F for 30 minutes. Serve with bread or chips.

Directions:

1. Place all ingredients in a food processor and process until desired consistency. May need to make in a couple batches and mix in a bowl.

Notes:

Tomatoes (regular can) : bunch of onions : bunch of cilantro : 12 ounce can Serrano peppers = 1:1:1:. Use twice the amount of jalapeos as Serrano peppers because Serrano are spicier. 19 | P a g e

Total Time: 5 mins. Ingredients:


Chevre Fresh basil Sundried tomatoes

Directions:

Mix ingredients in a food processor. Serve with crackers or use as a spread on sandwiches. Great as separate ingredients on a salami sandwich.

Jalapeo Poppers
Along with Daja's influence, Dave was inspired at a Bratton birthday party.

Prep Time: 5 mins. Cook Time: 16 mins. Total Time: 25 mins. Serves: 4 Ingredients:
12 jalapeos 1 package cream cheese 6 slices of bacon

Directions:

1. Slice the jalapeos in half and take out their seeds. Grill them on medium heat for 5 minutes then flip them and grill another 3 minutes. 2. Fill each jalapeo half with cream cheese and place the halves back together. Wrap the jalapeos in slice bacon each, securing the bacon with wooden tooth picks. 3. Barbeque on low for 25-30 minutes.

Appetizers and Snacks Macho Nachos

Prep Time: 5 mins. Cook Time: 16 mins. Total Time: 25 mins. Serves: 4 Ingredients:
15 oz. can meatless chili 13 oz. bag tortilla chips 8 oz. cheese (cheddar or Monterey jack) 4 oz. can chopped or sliced jalapeos, drained (or diced green chilies) 3 oz. cream cheese 5 oz. can sliced black olives, drained 16 oz. jar chunky salsa

Directions:

1. Preheat oven to 350. Dump the chili and cream cheese into a microwaveable bowl and nuke on high for 1 minute until cheese melts, stirring occasionally. Spread a layer of chips in a 13x9 pan. 2. Pile on of the cheese, 13 of the chili mix, 13 of the jalapeos, and 13 of the olives. Repeat with 2 more layers and top with remaining cheese. 3. Bake for 15 minutes or until bubbly. Pour on salsa and serve.

Notes:

Dave doesnt layer the ingredients and he mixes the chilies in the chili mix.

Appetizers and Snacks Fried Mush

Cook Time: 10 mins. Serves: 3-4 Ingredients:


1 cups left over breakfast porridge or grits 1 egg, lightly beaten 2 Tbsp butter, extra virgin coconut oil or lard

Directions:

1. Mix porridge with egg. 2. Saut by spoonfuls in butter, coconut oil or lard until golden and the edges are crispy. 3. Serve with maple syrup, sorghum syrup or honey.

Tahini

Prep Time: 5 mins. Yields: About cup Ingredients:


4 Tbsp ground sesame seeds 1 teaspoon sesame oil 1 Tbsp. lemon juice teaspoon salt Water 1-2 pressed garlic cloves

Directions:

1. Blend seeds, oil, lemon juice and salt. 2. Add slowly while blending about cup water. 3. Remove and stir in 1-2 pressed garlic cloves.

From: Asi Carrie got this recipe from her inlaws, Elias and Nuha, who are Palestinian and Lebanese and owned a restaurant at one point.

Prep Time: 5 mins. Yields: Approximately 4 cups Ingredients:


2 cans chick peas (I used TJs brand) cup tahini (page 22) cup lemon juice Salt 4-5 garlic cloves, minced and mixed with salt Olive oil Paprika Fresh parsley for garnish

Directions:

1. Drain and rinse the chickpeas. You can pick off the skins if you desire. I do, but Elias (my FIL) says you dont need to. Place in large food process and process until smooth. 2. Add tahini and process until color lightens slightly. Add salt and garlic. Process again for about 30 seconds. 3. Pour in lemon juice and process. If pure is too dry add water (mine sometimes is). 4. To serve, drop a couple of spoonfuls on a small plate and spread with back of spoon. Sprinkle with paprika, drizzle with olive oil, and garnish with parsley. Serve with pita bread or spread in a sandwich.

Prep Time: 5 mins. Cook Time: 16 mins. Total Time: 25 mins. Serves: 4 Ingredients:
cup yellow popcorn Salt 1 Tbsp raw honey 1 Tbsp organic extra virgin coconut oil

Directions:

1. Pop the popcorn in the air popper. If the coconut oil is solid, heat it with the honey while the popcorn is popping. 2. Mix in the honey and oil with the popcorn and salt to taste.

6-7 cups whole wheat flour 1 rounded Tbsp dry yeast cup gluten 2 cups warm water (120 to 130o) 3 Tbsp oil 3 Tbsp honey 2 scant teaspoons salt

Directions:

1. Put three cups flour into mixer bowl with a kneading arm. Mix in yeast and gluten. Add water, and mix for 1 minute. Turn off mixer, and let dough set for 10 minutes. (This is sponging.) 2. Turn on oven to its lowest setting. Add oil, honey, and salt to dough. Turn on mixer, and quickly add remaining flour, one cup at a time, until dough forms a ball and cleans the sides of the bowl. Knead in mixer for 10 minutes. 3. Lightly oil hands. Divide dough into two equal portions. Shape into loaves, and place in greased loaf pans. 4. TURN OFF OVEN! Place bread in oven, arranging pans with space between to allow heat to circulate freely. Let rise until almost double in bulk, approximately 20 minutes. 5. Brush top with melted butter for a softer crust (optional). Leave bread in oven and turn heat to 350 o. Bake 25 minutes. 6. Remove from pans immediately and cool on a wire rack.

Soups Chicken Stock

1 whole chicken or 2-3 pounds of bony chicken parts such as necks, backs, breastbones, and wings Gizzards from one chicken (optional) Feet from the chicken (optional) 4 qts cold filtered water 2Tbsp raw apple cider vinegar 1 large onion, coarsely chopped 2 carrots, peeled and coarsely chopped 3 celery sticks, coarsely chopped 1 bunch parsley

Directions:

1. Cut chicken parts into pieces and place in a large stainless steel pot with water, vinegar and all vegetables except parsley. Let stand 30 minutes to 1 hour. 2. Bring to a boil; remove scum that rises to the top. Reduce heat, cover and simmer for 6 to 24 hours. The longer you cook the stock, the richer and more flavorful it will be. About 10 minutes before finishing the stock, add the parsley. 3. Run the broth through a strainer, separating the chicken meat, bones, and veggies from the broth. Reserve in the refrigerator until the fat rises to the top and congeals. Skim off this fat and reserve the stock in the refrigerator or freezer.

Notes:

Separating the veggies and skin out makes for a yummy dog treat. If you want a heartier stock without totally tasteless chicken, remove the chicken meat at 6 hours and continue to cook until done.

1 tomato chopped 1 onion chopped 4 cloves of garlic unpeeled 1 tablespoon olive oil Knorr (beef flavor Bouillon) 4 large carrots peeled and sliced Celery sliced 2 Mexican squash or zucchini, sliced or cubed 3 small potatoes peeled and cubed cup of cilantro cabbage cut into large cubes 2 ears of corn cut in 3 or 4 parts A few dashes of Maggi seasoning (optional) 2 lbs of beef shank, with bone Water, enough to cover vegetables and beef 3 limes cut into wedges 2 avocados

Directions:

1. Cut the meat from the beef bones into about inch pieces, leaving some on the bones. 2. Heat a soup pot over medium high heat and add oil . Add the meat and bones, and season with just a little pepper and Maggi seasoning. Cook and stir until browned. 3. Add onion and tomato and cook until onion is slightly browned. Add water and 1 teaspoon beef bouillon per cup. Reduce heat and let it simmer for about an hour with lid slightly loose. 4. Add carrot, celery, cilantro, and corn then cook for 8-10 minutes. Stir in the potato and zucchini. Simmer until vegetables are tender. Put the cabbage into the soup, and cook for about 5 more minutes. 5. Garnish with avocado and squeeze some lime juice!

1. In a heavy skillet, saut onions in olive oil. Add tomatillos and chopped chiles and saut gently several minutes. Add stock, garlic and salt and bring to a boil. Simmer about 30 minutes, uncovered, until the sauce has reduced and thickened. 2. Remove from heat and stir in cilantro. Process in batches in a food processor until smooth. Reheat gently.

Notes:

This may be made in large batches and frozen. Be careful when preparing the chiles. Its best to wear rubber gloves when seeding and chopping jalapeos and to avoid touching any part of your face.

4 cups pomegranate juice 7 cups white sugar 2 lemons, juiced (about cup) 1 (6-fluid ounce) container Certo

Directions:

1. Combine pomegranate and lemon juices with sugar in a large, stainless steel saucepan. Bring to a boil over high heat, and at once stir in liquid pectin. Bring to a full rolling boil, and boil exactly minute. Remove from heat and skim off foam. 2. Ladle into hot, sterilized jars to within about inch of the top. Seal and process in a boiling water canner for 5 minutes.

Notes:

The first and hardest step is to remove the seeds from the pomegranates. After trying various methods, we decided it was best to let the kids remove most of the seeds using a plastic pomegranate deseeder (covered with a paper towel) bought from www.freshfinds.com. We then put the seeds through a juicer (or an industrial citrus press may be used) to extract the juice. Next remove as much of the sediment as possible. We strained the juice through a coffee filter. Letting it set for several hours and leaving the sediment in the container when you pour it works if you can pour carefully.

Directions:

1. Cook 2 10 oz. packages frozen cut broccoli following package directions. Drain. 2. Cook 2 cups frozen whole small onions (or 3 med. onions), quartered in boiling salted water until tender. Drain. 3. In saucepan melt 2 Tbsp butter; blend in 2 Tbsp flour, teaspoon salt, dash of pepper. Add 1 cup milk; cook and stir until bubbly. Reduce heat. Blend in 3 oz. package cream cheese until smooth. 4. Place veggies in 1 quart casserole. Pour sauce over, mix lightly. Top with cup shredded sharp cheese. 5. Melt 2 Tbsp. butter, toss with 1 cup bread crumbs (soft). Sprinkle atop casserole. 6. Bake at 350F for 40-45 minutes.

Notes:

We usually use fresh broccoli and for the bread crumbs you can use croutons. Also, the more cheese the better. Enjoy!

8 8 oz chicken breast halves (skinned, boned, and pounded) cup butter (melted) 1 onion (sliced) Flour 1 can chicken stock Salt and pepper 2 eggs (slightly beaten) 8 slices provolone cheese Broccoli Coating Mixture: 1 cup breadcrumbs (dry unseasoned) (I used Italian breadcrumbs) 2 cloves garlic, minced (I probably used 3 or 4) 2 Tbsp paprika cup parmesan cheese, grated dry 1 Tbsp parsley, minced

Directions:

1. Dredge the chicken breasts with flour mixed with salt and pepper. 2. In a pie plate, combine the beaten eggs. In another pie plate, prepare the coating mixture by combining breadcrumbs, garlic, paprika, Parmesan cheese and parsley. Dip each chicken breast (pounded) first into the eggs mixture, then into the coating mixture. 3. Roll each chicken breast into a Paulette (starting at the small part) with the provolone cheese and broccoli nested inside. Double coat in crumbs if need be. 4. In a roasting pan, arrange the onion slices, and set the chicken breasts on top. Paint them generously with the melted butter. 5. Preheat oven to 350 F and bake half hour. 6. Bring chicken stock to boil and add enough to roasting pan to cover the chicken breasts halfway. Bake another 45 minutes, basting frequently. 7. Spoon Sauce Barnaise over chicken and serve or serve Barnaise on table to top chicken.

Directions:

1. Preheat oven to 425F. 2. In a saucepan, combine chicken and vegetables and cook thoroughly. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. 3. Place mixture in pie crusts, seal edges and cut away excess dough. Make several small slits in the top to allow steam to escape. 4. Bake for 30-35 minutes or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

You can make these in smaller single serving pies as well. Freeze before baking.

cup water cup butter teaspoon salt cup pastry flour 2 eggs 2 cups diced chicken, cooked cup chopped celery cup chopped onion 1 cup grated cheese 4 oz cream cheese, softened 4 oz chicken broth

Directions:

1. Bring water, butter and salt to a boil. Add flour, beat with spoon until mixture forms a small ba ll. Remove from heat, add eggs, one at a time. Beat until well blended and dough loses its shine. Drop by tablespoons onto greased cookie sheet. Bake at 400F for 25-30 minutes. Cool on a wire rack. 2. Cream the cream cheese and chicken broth together. Stir into the rest of the dry ingredients. 3. Cut a slit half way through the puff and fill with filling.

Notes:

Filling is great by itself as a chicken salad. You may want to double the filling so you can really fill the puffs.

Directions:

1. Preheat the oven to 350F. In a medium skillet, cook the cup almonds and the onion in hot butter over medium heat until onion is tender and nuts are lightly toasted. Remove skillet from heat, stir in 1 tbsp of the green chile peppers, reserve remaining peppers for sauce. 2. In a medium bowl combine cream cheese, the 1 tbsp milk, and cumin; add nut and onion mixture and chicken. Stir until combined, and spoon about 3 tbsp of the mixture onto each tortilla near one edge. Roll up and place seam side down in a rectangular baking dish. 3. For sauce, in a medium bowl combine the reserved chile peppers, soup, sour cream, and 1 cup milk. Pour evenly over the tortillas in the baking dish. Cover with foil. Bake for about 35 minutes or until heated through. Remove foil, and sprinkle enchiladas with cheese and remaining almonds. Return to oven and bake about 5 more minutes or until cheese melts. Serve immediately.

1. Place fish in a Ziploc bag and add 1 cup of beer and seasoning and let marinade for about an hour or two. Discard marinade when done. 2. Mix the cabbage salsa ingredients. Add some squeezed lime juice 3. Stir the beer batter ingredients into the cup of beer. Add more if needed. 4. Dust fish pieces lightly with flour, dip into beer batter, and fry until crisp and golden brown. Drain on paper towels. 5. To serve, place fried fish in warmed tortilla and top with cabbage salsa and sour cream.

Directions:

1. Brown hamburger in a skillet over medium heat until the meat is no longer pink (10-12 minutes), stirring occasionally. Pour off the fat. 2. Add chili powder, cumin, salt, and pepper. Stir in spinach and salsa; heat through. Remove from heat and stir in cheese. 3. Spoon about cup mixture into center of each tortilla. Fold as a burrito.

Notes:

I like to buy the larger, burrito size tortillas (at Costco) and double the recipe to freeze the leftovers. You can also fry the burritos and make chimichangas. This meal is a great way to get vitamin K after having a baby.

Stir in tomatoes, Worcestershire sauce, parsley, basil, rice, and water. Cover, and simmer until rice is cooked, about 15 minutes. Remove from heat, and mix in Monterey Jack, Cheddar, and Mozzarella cheeses. 4. Place peppers upright on a baking sheet. Stuff each pepper with the chorizo mixture. Sprinkle extra cheese on top. 5. Directions:

1. Combine flour and salt. Dredge meat in mixture so all sides are coated. This can be done a few strips at a time. In skillet heat 2 Tbsp of butter. Brown quickly the strips a few at a time till all are browned pour all back in and add your onions and garlic tell done. Set meat and onion mixture aside. 2. To remaining flour mixture in pan add 2 more Tbsp of butter and 2 more Tbsp of flour to make a roux(paste) then add the tomato paste and mix well. 3. Slowly pour in the can of beef broth, this will start to thicken the mixture, then you can add back in the beef and onion mixture. Cook on low another 10 or so minutes until beef is done. 4. Add the sherry in the last few minutes of cooking and then the sour cream in the last minute. 5. Serve over rice.

Notes:

Potatoes can be a good substitute for mushrooms.

Peel and chop carrots and add celery and onion to meat, little salt and pepper. Add diced red bell pepper. Add 2 Tbsp. flour to veggies and chicken stock until gravy texture. (If using red wine sauce and lamb, add now instead of flour and stock.) Set on low. 4. Beat an egg and add potato water to egg. Drain and mash potatoes. Add egg mix and cup sour cream to potatoes along with a little salt and pepper and chives. 5. Add cup sour cream to meat/veggie mix and a handful of peas. Stir. 6. Pour all into a casserole dish. Spread potatoes on top and put in broiler until brown. On top add chives and paprika.

1 flank steak cup naturally fermented soy sauce 2 Tbsp toasted sesame oil 1 bunch green onions, finely chopped 6 cloves garlic, peeled and mashed 2 Tbsp sesame seeds teaspoon cayenne pepper Pinch stevia powder

Directions:

1. Using a very sharp and heavy knife, slice the flank steak as thinly as possible across the grain and on the diagonal. (This is easier if the meat is partially frozen.) 2. Mix other ingredients and marinate beef in the mixture, refrigerated, for several hours or overnight. 3. Fold or ribbon the strips and stick them on skewers, making four to six brochettes. Cook on barbecue or under grill, about 5 to 7 minutes per side. Meat should still be rare or medium rare inside.

Notes:

This is delicious with kimchi or any of the fermented vegetables, especially ginger carrots. The lactic-acidproducing bacteria in the fermented vegetables are the perfect antidote to carcinogens which may have formed in the meat if it has been barbequed. Nourishing Traditions

1 small leg of lamb 1 jar of apricot jam 3 cloves garlic, peeled Fresh rosemary 1 Tbsp spicy mustard Flour or arrowroot cup red wine 3-4 cups beef or lamb stock 1 Tbsp of gelatin

Directions:

1. Heat apricot jam in a small pot until liquid form. Brush over the leg of lamb and place in Dutch oven. Squirt some spicy mustard on top and place a few sprigs of fresh rosemary on top. 2. Set in oven preheated to 450F and reduce heat immediately to 350F. Cook until meat registers rare or medium rare, about 30 minutes per pound. 3. When meat is done, remove from the Dutch oven. Add wine, stock and gelatin to drippings in the Dutch oven and bring to a boil over the stove, stirring to get all drippings off Dutch oven. Boil until sauce reduces to about 1 cup. Serve sauce on the side

Notes:

Leftovers are great for shepherds pie, including using the red wine sauce in the meat mix and substituting sweet potatoes for the potatoes.

In a saucepan, over medium heat, melt 2 Tbsp of the butter and add the lemon juice. 5. Heat a large ovenproof skillet over medium-high heat. Working with 1 salmon fillet at a time, dip the top and bottom first in the lemon butter, then in the spices. Cook the salmon until blackened, 2 minutes per side. Transfer to oven for 8 minutes. 6. Stir the corn, parsley, and the remaining salt and butter into the rice. 7. Transfer the salmon and rice to individual plates and serve with the lemon wedges.

Desserts Lemon Curd and Honey Vanilla Cream Berry Parfait

3 large eggs - 13 cup honey Grated zest of one lemon (about 1 Tbsp.) cup lemon juice 6 Tbsp EVCO or ghee or butter

Directions:

1. In a medium stainless steel or enamel saucepan, whisk together the first three ingredients until light colored. 2. Add the coconut oil, breaking it into small clumps as you drop it into the pot for even melting. Then add the lemon juice. 3. Cook, whisking, over medium heat until the coconut oil is melted. Continue to cook until the mixture thickens and you start to see a few bubbles popping at the surface. 4. Remove from heat and strain through a fine sieve set over a bowl, gently stirring if needed. 5. Refrigerate for several hours to thicken. Will keep about one week in the refrigerator.

Ingredients for Honey Vanilla Cream (Yields 2 cups):

1 cup cashews, soaked in water for 1-6 hours, rinsed and drained cup coconut oil - cup honey 1 13 cup full fat coconut milk 1 teaspoon vanilla Dash of salt

Directions:

1. In a food processor or powerful blender, process the cashews, coconut oil, and honey until smooth. Scrap down the sides as needed. 2. Add the coconut milk, salt and vanilla and blend again. Taste and add more sweetener if desired. 3. Chill.

Notes:

Layer in small cups or parfait/ice cream bowls the cream, berries of your choice, and curd.

Directions:

In a metal bowl over simmering water, melt the chocolate chips with the peanut butter, stirring occasionally until smooth. Spread over the prepared crush. Refrigerate at least one hour before cutting into squares.

Ingredients for Filling:

1 cup sugar 2 teaspoon lemon peel (optional) 2 Tbsp lemon juice teaspoon baking powder teaspoon salt 2 eggs

Directions:

1. Heat oven to 350F. Mix flour, butter and powdered sugar together. Press into ungreased, square pan (8x8 or 9x9), building up the edges inches. Bake 20 minutes. 2. Beat remaining ingredients about three minutes or until light and fluffy (should be a foamy, pastel yellow, not egg yolk yellow). Pour over hot crust. Bake an additional 25 minutes or until no indentation remains when touched lightly in the center (top should be golden brown). Cool. Dust with additional powdered sugar, if desired.

Notes:

Mel usually doubles the recipe and cooks it in a glass 13x9 inch pan. This means that she sets her temperature at 325F instead of 350F. If you choose to add lemon peel, zest it directly over the top of the sugar. This enhances the lemon flavor.

Directions:

1. In a large bowl, mix pumpkin with eggs and egg yolks, half-and-half, brown sugar, cup of the granulated sugar, cinnamon, nutmeg, and cardamom; set aside. 2. In a small saucepan, combine 2 tablespoons water and remaining 1 cup granulated sugar and heat over high heat. As sugar melts, swirl the pan often to ensure even melting. Do not stir with a spoon because it will slow the melting process and cause uneven browning. Cook for 3 to 4 minutes, or until sugar has a deep caramel color; remove from the heat. Carefully whisk cup of the heavy cream into the caramel until well combined, then whisk in remaining cup heavy cream. 3. Pour caramel mixture into a 2 -quart oblong casserole dish. Top with half of the bread cubes, then pour half of the pumpkin mixture over the top. Top with remaining bread, then remaining pumpkin mixture, making sure to soak all of the bread. 1. Place flour, salt and stevia powder into food processor. 2. Cut butter on a board into about 16 pieces. Distribute butter over flour and pulse processor several times until butter is broken into pea-sized pieces and well distributed. 3. Beat egg yolks briefly with a fork, dribble over flour mixture and pulse once or twice. 4. Have water ready. Turn on processor and immediately pour water in. Stop processor at once. 5. Turn crust onto waxed paper, wrap up and squeeze together, forming a ball. Refrigerate several hours. Roll a pastry cloth using flour to keep from sticking.

Mix 1 Tbsp melted butter and lemon juice into fruit filling, then spoon into pastry-lined pie pan. Roll out top crust and place over filling. Crimp edges and cut steam vents on top. Place almonds in food processor and process to a powder. Add butter, arrowroot or bulgur flour, Rapadura, vanilla and salt and process until smooth. Crumble this mixture on top of the apples. 4. Bake at 350F for 1 hour. Serve with whipped cream.

Notes:

For a peach cobbler, use 8 ripe peaches and omit cinnamon. For a blueberry cobbler (pictured above) use 6 cups blueberries in place of apples and omit cinnamon.

1. In a medium bowl, mix together cookie crumbs, 3 Tbsp sugar, and melted butter. Press mixture into the bottom of a 9 spring form pan. 2. In saucepan, combine berries, 2 Tbsp sugar, cornstarch, and water. Bring to a boil, and continue boiling 5 minutes or until sauce is thick. Strain sauce through a mesh strainer to remove seeds. 3. Preheat oven to 325F. In a metal bowl over a pan of simmering water, melt white chocolate chips with half-and-half, stirring occasionally until smooth. 4. In a large bowl, mix together cream cheese and cup sugar until smooth. Beat in eggs one at a time. Blend in vanilla and melted white chocolate. Pour half of batter over crust. Spoon 3 Tbsp raspberry sauce over batter. Pour remaining cheesecake batter into pan and again spoon 3 Tbsp raspberry sauce over the top. Swirl batter with tip of a knife to create a marbled effect. 5. Bake for 55 to 60 minutes or until filling is set. Cool, cover with plastic wrap, and refrigerate for 8 hours before removing from pan. Serve with remaining raspberry sauce.

Notes:

You can also buy and use pre-made Oreo pie crusts. It will make one pie and have a little left over.

10 cups water 20 cups sugar 6-8 qts figs Sugar

Directions:

1. Prepare syrup by bringing 10 cups of water to a boil. Add 20 cups sugar. Bring to a boil and boil for 2 minutes. The quantity of water can be reduced by the amount of figs to be processed. 2. Wash 6-8 quarts figs, remove stems, trim flower end, and put in syrup. Simmer on low heat for one hour each day for 3-4 days. (Leave the pot on the stove and just turn it on each day.) 3. Drain figs in a colander and dehydrate in a dehydrator of your choice for 3-5 days. You can use a fruit leather sheet under the figs on each tray so the figs wont drip down onto the motor. 4. When they are dry but still soft, remove the figs and let them set for 8 hours or longer. 5. When the figs feel sticky on the outside, roll them in sugar. Candied figs may be stored in metal tins, with each layer separated by waxed paper. Keep the tins in the refrigerator or in the freezer for longer storage time.

Directions:

1. Bring 1 cups water, sugar, and corn syrup to a boil over medium-high heat in a large sauce pan. Cook, stirring frequently, until the temperature reaches 240F on a candy thermometer. Set aside and keep hot. 2. Stir together orange juice and orange zest, sprinkle with gelatin, and set aside. In a small bowl, dissolve cornstarch in cup cold water, then stir into hot syrup. Place over medium-low heat, and simmer, stirring gently, until very thick. 3. Remove syrup from heat, stir in orange juice mixture, vanilla, and pistachios. Sprinkle a 8x8-inch pan generously with confectioners sugar. Pour the Turkish delight into the pan, and let cool in a cool, dry place (not the refrigerator) until set, 3 to 4 hours. 4. When cool, sprinkle the top with another thick layer of powdered sugar. Cut into 1-inch squares, and dredge each well with confectioners sugar. Store at room temperature in an airtight container.

Directions:

1. Heat oven to 350F. Grease rectangular pan, 13x9x2 inches. In a large mixing bowl combine flour, sugar, cup butter, eggs and syrup; beat until smooth. Pour into prepared pan; bake 25-30 minutes or until top springs back when lightly touched. 2. Mint Cream Center: While the cake is baking, combine the confectioner's sugar, cup butter, water, mint extract and food color in a small bowl and beat until smooth. 3. Chocolate Topping: In small saucepan over very low heat, melt 6 tablespoons butter and chocolate chips. Remove from heat; stir until smooth. Cool slightly. 4. Let the cake cool completely in pan. Homemade Baby Wipes

Prep Time: 15 mins. Ingredients:


2 cups hot water 2 Tbsp baby shampoo 1 Tbsp mineral oil Lavender oil Tea tree oil Paper towels Air-tight container

Directions:

1. Cut the roll of paper towels in half so you have two even rolls. Place one half in the air-tight container. 2. In a separate bowl, mix the water, shampoo and oils. Pour the solution slowly into the container with the paper towels. Seal the container and wait for the towels to absorb the liquid, approximately 5 minutes. 3. Remove the center cardboard and remove the towels from the center, tearing off the desired size.

Notes:
